The meat free recipe of the day is just irresistible! And it’s Pumpkin again!
I’ve been making quite a few pumpkin and squash recipes lately but my family loves pumpkin!
Plus, it’s the pumpkin season, isn’t it?
The salad is made with organic black quinoa which I recently got and I really loved it. Compared to the regular type of quinoa, the black one has a nuttier flavour and kind of thicker consistency. I think I prefer this one. I added some feta cheese(love the combination of feta and pumpkin/squash), pumpkin seeds and honey tahini dressing. Yumm! I wish there were some leftovers now but as I’m writing this post, this beautiful salad is long gone!
