The recipe of the day is Sweet Potato Pizza/Bake with Mushrooms, Onions, Red Peppers & Melted Cheese!
I absolutely loved the Cauliflower Crust Pizza I  made before so I decided it’s time to try a new one.
And because I had really nice sweet potatoes at the time I knew I wanted to try and make a sweet potato crust pizza.
It’s incredibly tasty and easy to make in just a few steps. 

Here’s what you need.

Ingredients:
  • 3-4 sweet potatoes, roughly cut
  • 150g/5oz mushrooms, sliced
  • 1 red pepper, sliced
  • 1 onion, sliced
  • 100g/3.5oz grated cheese(I used mild Cheddar)
  • olive oil
  • salt and pepper
  • fresh parsley, if wished

Preparation:
  1. Preheat the oven to 200°/392°.
  2. Place the sweet potatoes in a baking tray, drizzle some olive oil and season with salt to taste. Bake in the oven for about 30 minutes. Remove and gently mash them, smooth the surface evenly so it looks like a pizza crust.
  3. Arrange the other topping ingredients on top – mushrooms, peppers and onions.
  4. Place in the oven for another 15 minutes. Remove and sprinkle the cheese. Put it back in the oven for 5 minutes so the cheese melts.

Tip: Why not add your favourite ingredients on top, try Mozzarella cheese, basil, cherry tomatoes and whatever you’d like!
