So I finally got my hands on a Shakshuka recipe and do you know what?
I’ve made this so many times without knowing it is actually called Shakshuka.
So the recipe wasn’t new to me, I already knew how quick and tasty it was. And it is a great all-day-breakfast.
Eggs, tomatoes, peppers and feta cheese – there’s no way to go wrong with this combination.
Here’s what you need.
Mummy’s Fast & Easy
Ingredients:
6 eggs
2 cups tinned tomatoes
200g/7oz feta cheese
1 red pepper, sliced
1 onion, chopped
2 garlic cloves, crushed
1tsp cumin
1tbsp olive oil
salt and pepper
fresh parsley, chopped

Preparation:
Heat a pan with the olive oil. Add the onions and garlic. Sweat for about 5 minutes.
Add the tomatoes and season with cumin, salt and pepper. Leave on the hob for about 10 minutes.
Gradually add the eggs and cook them as much as you like them ( i left them for about 5 minutes on the hob).
Remove from the hob, add crumble the feta cheese and sprinkle some fresh parsley. Unfortunately I did not have any so I used dry but I do recommend to use fresh, if possible.
