The recipe of the day is simple but tasty and I think much needed during the Christmas period when some of us had a bit more turkey and Christmas pie. In other words, it’s really light and healthy recipe but at the same time it’s filling and delicious. Here’s what you need. Mummy’s Fast & Easy Ingredients: 300g/10oz brown lentils, cooked 2eggs a handful of fresh spinach 200g/7oz mild cheddar, grated 1/2 a cup olive oil salt 1tbsp dry thyme Mummy’s Fast & Easy Preparation: Preheat the oven to 200°C/392°F. In a bowl mix the lentils, olive oil and seasoning. Add the two eggs and half of the spinach. Scoop from the lentil mixture and place on a greased muffin tray.
