Mummy’s Fast & Easy


Meatless Monday Recipe of the day is this amazingly delicious grilled cheese and kale sandwich.
It’s a bit naughty (there’s quite a lot of butter) but I added some kale to make it a bit healthier.:)
I actually made these sandwiches for dinner as I was quite busy with other stuff and had to make something quickly.
But grilled cheese is always a winner, even the little one liked it.
Serve with a side of cucumber, tomatoes or carrots for extra crunch.:)

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:
  • 10 slices whole wheat bread
  • 400g/1lb mild cheddar cheese, sliced
  • 200g/7oz butter
  • a handful of kale
  • sliced cucumber for serving

Preparation:
  1. Heat a griddle pan with some butter.
  2. Place a slice of bread, a small butter knob, two pieces of cheddar and finish with some kale.
  3. Place another slice of bread on top and press the sandwich. Cook for 2-3 minutes.
  4. Grill on the other side but before turning it add some more butter on the pan.
  5. Repeat with the rest of the bread slices.
  6. Serve straight from the pan.
