Happy Friday everyone!
My new favourite muffin recipe – Pumpkin & Feta Cheese Muffins!
I’ve always wanted to make pumpkin muffins, but never tried before.
I definitely like more the salty, cheesy muffins than the sweet ones so I combined the pumpkin with feta cheese, mustard seeds and extra pumpkin seeds on top.
I used 50/50 flour – corn and white, plus extra creamy greek yogurt(it was more like sour cream).
I love the flavour of corn flour and almost always add it to my baking recipes.
This is a perfect holiday recipe and it’s an easy one!

Here’s what you need.

Ingredients:
  • 300g/10oz pumpkin, mashed( I steamed mine and then mashed, you can also boil it)
  • 200g/7oz feta cheese
  • 100g/3.5oz corn flour
  • 100g/3.5oz plain white flour
  • 2 eggs
  • 1 cup yogurt/sour cream
  • 1/2 a cup sunflower oil
  • 1tbsp mustard seeds
  • 1tsp baking powder
  • 1tsp salt
  • pumpkin seeds for sprinkling

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, combine the pumpkin, flour, baking powder, salt and mustard seeds.
  3. Slowly add the eggs, oil and yogurt. Mix well.
  4. Crumble the feta cheese and gently stir in the mixture.
  5. Pour the mixture in a silicone muffin mould, sprinkle some pumpkin seeds and bake in the oven for about 30 minutes or until ready.
Enjoy!
Tip: Try adding some shredded cheese into the mixture.
