Friday’s here again! For all of you who like nice and heart-warming homemade food, here it is – Pumpkin & Chicken Curry. This is definitely one of my favourite comfort foods – it’s sweet and creamy and bursts with flavours. I had made a butternut squash curry before but this one is slightly different. I also added some chicken which made it even more filling. But even if you don’t add the chicken, it’ll still taste amazing. To serve it – get some naan bread or simply get a side of coriander rice as I did.
Here’s what you need.
Mummy’s Fast & Easy
Ingredients:
300g/10oz pumpkin, deseeded and cut into cubes
2 chicken breasts, cut into chunks
1 onion chopped
2 garlic cloves, crushed
3tbsp curry paste
1 cup coconut milk
1 cup basmati rice
4-5 cardamom seeds
4-5 sprigs fresh coriander, chopped
1tbsp olive oil
salt

Preparation:
Heat a pan with the olive oil and sweat the onions and garlic. Add the pumpkin and cover with water.
Cook for about 10 minutes and add the chicken. Stir in the curry paste and drop the cardamom seeds. Pour in the coconut milk.
Season with salt and leave on the hob for another 20 minutes.
To make the rice, place in a pot and cover with water. Bring to a boil and cook until ready.
Sprinkle with coriander and serve!

Tip: Have you tried curry with mashed potatoes instead of rice? You should because it’s really good!
