I’ve been looking for salmon recipes recently as I got a bit fed up with the ones I prepare. As much as I love salmon, It may get a bit boring having it steamed, baked or grilled every time. So, I was watching this tv show and they actually prepared salmon goujons. And I decided that I should give this recipe a try! I can honestly say,this is the tastiest way I’ve made salmon. It’s so much different to the other recipes I’ve tried, and yet, it’s even more delicious. And to accompaniment the goujons I made a mango ginger salsa. The salsa adds so much freshness and flavour to the goujons that it seems impossible one can go without the other. And if you decide to try this recipe out, do prepare the salsa as well. Otherwise, the recipe won’t be the same.:-) Here’s what you need. Ingredients:
400g/14oz salmon fillet, cut into strips
100g/3.5oz black sesame seeds
1 egg, beaten
1tbsp corn flour
sunflower oil for frying
For the marinade:
2tbsp dried ginger
2 garlic cloves, crushed
200ml/1 cup dark soy sauce
For the mango ginger salsa:
400g/14oz ripe mango, chopped
2 red chillies, chopped
a bunch of fresh coriander, chopped
2 tbsp dried ginger
1 lime, juice only

Preparation:
To prepare the goujons – marinade the salmon strips and leave in the fridge for 2 hours.
Heat a pan with the oil – the oil should be enough to cover the salmon goujons when frying. Mix the egg with the cornflour and sprinkle the sesame seeds into a shallow plate.
Dip the goujons into the egg mixture and then dredge the into the sesame seeds. Cook for about 3-4 minutes or until ready.
For the mango salsa – combine all the ingredients in a bowl and mix well.

Tip: If your mango is not sweet enough, just add a couple of spoons of sugar.
