Another Healthy salad today guys!
Quite similar to the ones I’ve been posting this week but this time with couscous!
I absolutely loved it – I combined chickpeas, grilled baby peppers, ripe avocado and lots of lemon juice in the dressing!
And I had two big bowls of it! Sooo good!

Here are the ingredients!
Ingredients:
- 500g couscous
- 2 ripe avocados, chopped
- 200g baby peppers, grilled
- 200g tinned chickpeas
For the dressing:
- 100ml olive oil
- juice from 1 lemon
- salt

Preparation:
- To prepare the couscous, empty it in a bowl and cover with hot boiling water (unless otherwise stated on the package). Leave to cool down.
- Add the salad ingredient to the couscous.
- Combine the dressing ingredients in a mixing bowl and pour over the couscous salad.
- Mix well and serve with extra lemon slices!

Tip: Try adding crushed garlic clove!
