I love root veggies and I love experimenting with them.
One of my favourite is beetroot.
And because I had some in the fridge the other day I decided to improvise.
I combined it with butternut squash (another favourite), feta cheese and butter. Yummy…

I used a silicone terrine mould to bake it in.
Honestly, it was delicious.
Another proof that the simpler the food is, the more delicious it is.:-)
We had it last night and it’s all gone now.
Serve it with lots of yogurt!
Here’s what you need for this simple veggie goodness.
Ingredients:
- 400g butternut squash, pureed
- 1 beetroot (around 200g), grated
- 1 onion, chopped
- 1 garlic clove, crushed
- 200g feta cheese, crumbled
- 1 egg
- 1/2tbsp nutmeg
- 2tbsp fresh ginger, grated
- 50g butter
- 2tbsp olive oil
- salt
- 400g yogurt, to serve with

Preparation:
In a mixing bowl, place the beetroot, squash, onion and garlic.
Add the  feta cheese, egg, salt, ginger and nutmeg and mix thoroughly.
Pour in the olive oil and mix again.
Pour the mixture in a silicone terrine mould.
Place in the oven and bake for about 30 – 40 minutes or until ready.
Leave it to cool down and serve with yogurt.

Tip: Add a bit of grated carrots for a crunch!
