Chicken, Bacon & Biscuits

Everything about this recipe is really simple and yet very delicious. There are lots of veggies – carrots, celery and sugar snaps, succulent chicken bits, bacon and all that goodness topped with buttery biscuits. All you need to do is to dig in.

It took me about 30 minutes to prepare this lovely dish. And then probably extra 15 minutes in the oven. It’s perfect weeknight supper and I’m pretty sure the kids will love it too. I mean, what’s not to love about it! 🙂

My kids particularly enjoyed the biscuits. They were so soft and buttery, perfect for dipping in. I simply used butter and single cream to make these. Really easy.

And to be honest the bacon does make a difference. It kind of makes the meal more wintery, heart-warming and comforting. Pancetta will be great too.

Here’s how to make the Chicken, Bacon & Biscuits.

Ingredients
  • 2 chicken breasts, sliced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 carrot, chopped
  • 100g sugar snaps, chopped
  • 100g bacon, chopped
  • 200ml double cream
  • 1tbsp olive oil
  • 1tbsp dry parsley
  • salt and peppers
  • For the biscuits:
  • 150g flour
  • 1tsp baking powder
  • 50g butter
  • single cream
Instructions
  1. Preheat the oven to 200°C.
  2. Heat a pot with the olive oil and gently sweat the vegetables for about 10 minutes. Add a bit of water so they don’t fry.
  3. Add the chicken and bacon. Season with salt and peppers. Sprinkle the dry parsley. Mix well and cook for another 10 minutes.
  4. Add the double cream, stir well and leave for about 10 more minutes.
  5. Remove from the hob and empty the dish in a greased baking tray.
  6. To make the biscuits, combine all the ingredients in a bowl and make a smooth dough.
  7. Roll it out on a floured worktop and cut small biscuits with a kitchen ring.
  8. Arrange on top of the chicken and put in the oven for about 15 minutes or until ready.

Now, when I’m looking at the picture, I’m thinking, to make this dish even more indulgent it would be super tasty to add grated Parmesan cheese in the veggies and chicken mixture. Why not really? 🙂 Sometimes I feel like putting cheese on everything. But everything with cheese is so much tastier, especially with lots of gooey melted cheese.

I really enjoy most .the mild and sweet flavoured cheese but I like lots of other kinds too. OK, enough with the cheese love. So back to the recipe now.

Oh, and I’ve been using lots of dry parsley recently. I just found a pack of it in the shop and decided to give it a go. I know the fresh is better but when you’re out of fresh herbs  (or the snails have eaten them) this one is a good alternative. However, some spices are much better dry.
