Are you tired of having the same breakfast over and over again?
If you are, here’s a tasty nutritious idea for a good start of the day – Bacon, Cheese & Eggs Stuffed Peppers.
It’s the old good scrambled eggs and bacon, but this time I added some feta and cheddar cheese and all of that goodness was used to fill some sweet and juicy peppers.
Then the whole thing was cooked in the oven for about 15-20 minutes.
Bottom line, super easy no fuss breakfast, perfect for a lazy Sunday morning when you need a piece of bacon.:)

Here’s what you need.

Ingredients:
  • 3 peppers, cut into halves(I used green, red and yellow)
  • 6 eggs
  • 200g/7oz feta cheese
  • 100g/3.5oz cheddar cheese, shredded
  • 6 bacon slices, thinly chopped
  • slat and pepper

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, beat the eggs and crumble the feta cheese in.
  3. Add the chopped bacon, mix well and stuff the peppers with mixture.
  4. Sprinkle the cheddar cheese and season with salt and pepper.
  5. Bake in the oven for about 20 minutes or until ready.
