It s finally holiday time and I can’t wait for this rain to stop and head to the beach. It really sucks when you drive 4 hours to get there, have only a few days and it rains for 2 days. But I’m not complaining even though it doesn’t sound like it πŸ™‚ We still have a good time with lots of food and drinks. πŸ™‚ And I really can’t describe how beautiful is here – you wake up to the sound f the sea every morning and you can actually taste the saltiness of it.

Kale & Butternut Squash Quesadillas

Happy Thursday guys! Today’s recipe is Kale & Butternut Squash Quesadillas – grilled flour tortillas stuffed with sweet squash, kale, chickpeas and melted cheese. This was too delicious not to try so put your apron on and let’s get cooking! I promise, it only takes a few minutes, it’s super simple and even more tastier. πŸ™‚

I genuinely love Mexican or Mexican – inspired food and I enjoy experimenting a lot. I’ve tried different versions of burritos and quesadillas (see the links below πŸ™‚ ) but never tried this one in particular. The idea came when I had to get rid of some roasted butternut squash I had in the fridge so I came up with quesadillas. I added some kale, roasted chickpeas, which again were leftovers from another recipe, and lots of cheese. No need to mention I poured half a bottle of hot sauce on my quesadillas. πŸ™‚ But hey, this was Mex – inspired, it should be hot. πŸ™‚

On a second thought, I think some sliced jalapenos would make these quesadillas even more appetizing. Unfortunately, I didn’t have any but next time definitely throwing some in there. πŸ™‚

The quesadillas are amazing for starter but these are so rich they can easily pass as a main. It really depends on how hungry you are. Serve them with some freshly made guacamole, sour cream and of course, hot sauce (for those of you who can handle the heat:-) ). And don’t forget to massage the kale with a bit of olive oil before adding it to the quesadillas. πŸ™‚

Kale & Butternut Squash Quesadillas

Ingredients

  • 300g butternut squash, roasted & cut in pieces
  • 100g chickpeas, roasted
  • a handful of kale
  • 100g mild Cheddar, grated
  • 100g Mozzarella, grated
  • 4-5 flour tortillas

Instructions

  1. Heat a griddle pan and place the tortilla. On half of the tortilla arrange some of the squash, chickpeas & kale and sprinkle some cheese on top. Make sure it's not too much so you can close the wrap.
  2. Gently close the wrap and press down. Cook for about 5 minutes, turn on the other side for a few minutes and remove from the pan.
  3. Repeat with the rest of the tortillas.
  4. Serve with some fresh guacamole, sour cream and/or hot sauce.

Harissa Roasted Chickpeas with Grilled Veggies

This time of the year I feel so excited about vegetables! I just love preparing veggie bowls with lots of different vegetables in them and some other goodies, of course. What I’m trying to say is that Summer, for me, equals lots of salads and veggie bowls. πŸ™‚

This one particular was one of these ‘clean my fridge meals’. I used someΒ leftovers I had and vegetables that were about to go off. It turned out quite yummy. Apart from the chickpeas, I added some grilled eggplant, grilled peppers, feta cheese, some wholemeal pita bread and a generous serving of my homemade sun-dried tomato pesto. The pesto is super simple to make – just blitz together sun-dried tomatoes, pine nuts, basil, olive oil and Parmesan, if you’d like (I didn’t use any Parmesan this time). Season with salt and lemon juice and enjoy! Yum! It was quite a lot, to be honest, but I saved some for the next day. πŸ™‚

Also, you can easily make some wraps using the ingredients from the bowl, apart from the pita bread of course. Thy will make a healthy and delicious lunch. πŸ™‚

Harissa Roasted Chickpeas with Grilled Veggies

This recipe is perfect for using up your leftover veggies from your bbq. Just add some feta cheese, chickpeas and this yummy pesto and you’ve got yourself a lovely lunch. πŸ™‚

The chickpeas are cooked with a few spoons of harissa paste. They were absolutely delicious but I was a bit disappointed. I expected them to be quite hot but they turned out just a tiny bit spicy. Next time I should probably use the whole jar. πŸ™‚

Harissa Roasted Chickpeas with Grilled Veggies

Ingredients

  • 200g chickpeas, roasted
  • 2tbsp harissa paste
  • 1 eggplant, sliced and grilled
  • 2 peppers, grilled
  • 1 wholemeal pita bread, cut into pieces
  • 100g feta cheese, crumbled
  • For the sun-dried tomato pesto"
  • 7-8 sun-dried tomatoes
  • 7-8 basil leaves
  • 50g pine nuts
  • 1tsp lemon juice
  • 1tbsp olive oil
  • salt

Instructions

  1. You can easily use tinned chickpeas and then gently cook them with the harissa paste for a few minutes. Or roast your chickpeas with some harissa paste. Make sure to stir them occasionally though.
  2. To make the pesto - simply blitz the ingredients together.
  3. To arrange the bowl - add the chickpeas, sliced eggplant and peppers, pita chips, some crumbled feta cheese and a spoon of the sun-dried tomato pesto.

Happy Wednesday guys! Recipe of the day is Double Halloumi Burger with Tapenade – Β a real meat free treat that even the meat lovers can’t resist! πŸ™‚

Double Halloumi Burger with Tapenade

The original idea was a bit different to be honest, but I think it actually got better this way. Much better. πŸ™‚ I topped this massive burgers/open sandwiches up with a poached egg and a splash of spicy sauce. There are chunky grilled halloumi pieces underneath the egg and a few on top, hence the double halloumi burger or should I say open sandwich? A bit confused about what to call it. πŸ™‚ I used toasted english muffins and loads of tapenade.

Let me tell you about the tapenade..I only recently discovered it but I feel I can’t get enough of it. It is so delicious that I generously add it to everything – salads, sandwiches, pasta. I really enjoy it as a dip too with some homemade pita chips. To make the tapenade I also added a few sun-dried tomatoes. They really make a big difference (in my opinion) and make it all taste even more delicious. Tapenade is great for tapas and nibbles which I’ve been obsessing recently, especially during the weekends. But seriously, what’s not to love about tapas? Lots of small and cute looking dishes to choose from. Thus, there’ll be a little something for everyone, plus you get to enjoy a few different dishes. That’s the food lover in me talking. πŸ™‚ My family love this kind of dinner too so everything is working fine! πŸ™‚ And most of the time there are no leftovers at all. πŸ™‚

Double Halloumi Burger with Tapenade

Ingredients

  • 2 English Muffins, cut in halves and toasted
  • 200g halloumi, cut in pieces and grilled
  • 2 eggs, poached
  • rocket salad for serving, if wished
  • For the tapenade:
  • 150g black olives, pitted
  • 1 garlic clove, crushed
  • 1-2 anchovy fillets
  • 3-4 sun-dried tomatoes
  • 1tbsp capers
  • 1tbsp lemon juice
  • 1tbsp olive oil
  • salt and pepper

Instructions

  1. To make the tapenade, simply blitz the ingredients in a food processor till a desired consistency - chunky or smooth.
  2. To build the burger, start with the muffin bottom, add a generous amount of the tapenade, a few pieces of the grilled halloumi cheese and finish it off with a poached egg. If wished, close the burger with the other half of the muffin. Repeat with the other english muffin.
  3. Serve with some rocket salad on a side and some spicy sauce.

And because it’s Meatless Monday, it’s a great meat free option to have today.

It seems I haven’t posted a MM recipe for a long time! So it was about time! The truth is I post whenever I can. I know I should probably make a schedule and stick to it but it’s really difficult and my plan almost never works.

For example, I had quite interesting recipes to test, photos to edit and of course blog posts to share. And of course, lots of other stuff to do. πŸ™‚ What happened? Well, chickenpox happened. πŸ™‚ Not me, but my daughter got it so we stayed at home for the whole week. And I had to make sure to entertain her and the little one too. I barely had time to cook. But this is over now, so we are back to our normal schedule – nursery, playgroups with the baby and Β the only time I’ve got is when they nap. So the longer the nap, the better the work I manage to do. Hopefully I’ll be able to upload a few yummy recipes this week! Fingers crossed! πŸ™‚

MM: Grilled Vegetables & Halloumi Bulgur Salad

Anyway, I think you get the point, back to this gorgeous Grilled Vegetables & Halloumi Bulgur Salad…

It’s one of the simplest recipes to make and yet it’s so delicious and very filling. Bulgur in general is quite filling so if you need a meal to keep you up for longer this is the one. There are tinned veggies you can use, if it’s more convenient for you, but the freshly grilled veggies would taste better.

I also added a generous serving of hummus which I had in the fridge for a couple of days. It worked really well with the veggies and even the bulgur. πŸ™‚ It also probably doubled the calories! πŸ™‚

And I used Chilli Halloumi which is so tasty! Now that I found it in my local shop I always get in my weekly shopping and add it to salads, bbqs, sandwiches. It is quite spicy, so if you’re not hot food lover go with the normal Halloumi.

  • 300g bulgur wheat, cooked
  • 1 eggplant, grilled and sliced
  • 1 zucchini, grilled and sliced
  • 10 sun-dried tomatoes
  • 150g Halloumi, grilled and sliced
  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt to taste

Instructions

  1. In a bowl, combine the bulgur with the vegetables.
  2. Add the olive oil and lemon juice, season with salt. Mix well.
  3. Arrange the grilled Halloumi cheese pieces on top and serve.

Is it Spring yet? The weather today was amazing and we actually got lots of sunshine. Hopefully this doesn’t change in the next few days. We really need the sun to come out more often and the temperatures to rise. πŸ™‚ I’ve had enough of the cold and gloomy weather, colds and runny noses. Plus, it’s time to start making some fresh and tasty Spring recipes with lots of yummy veggies and fruit.

And I know, once Spring is here, many of us start planning the Summer – holidays, get in shape programs and whatnot. It’s just so exciting! The holiday part, I mean. Meanwhile, we’re gonna have to wait patiently and hope for more sunny days!

Cauliflower, Broccoli & Cheese Bites

And now back to the recipe again…I was about to make Cauliflower and Cheese with Broccoli but then I thought I might make something a bit different this time and mix thing up a little bit. This is what happened. These bites are actually even easier to make and take a few minutes. All you need is a blender and then the rest is left to the oven. Apart from the cauliflower and broccoli, I used single cream, eggs and a generous amount of cheese. There is no flour so these bites are tasty gluten-free option too and are not that high in calories. Well, they’re pretty healthy(probably with a bit less cheese though). πŸ™‚

They’re actually quite like a breakfast bites with all the cheese and eggs. πŸ™‚ Also, they’re perfect for snacking all day long. πŸ™‚ And the colour they turned is quite pretty, isn’t it. It’s so bright and fresh!

The kids enjoyed them too. They were really attracted to the muffin-sized bites and actually had a few of them. So that was a success! πŸ™‚

They usually eat broccoli but are not fans of cauliflower. Well, I don’t think they realised there’s cauliflower but that was not necessary at all, was it. πŸ™‚

It’s amazing how many things you can actually prepare in a muffin tray. It seems muffin trays are not what they used to be anymore. πŸ™‚ I’ve made different breakfast bites and I simply loved them. I have to admit it, cooking nowadays has become really inventive.

  • 200g broccoli
  • 150g cauliflower
  • 200g Cheddar cheese
  • 2 eggs
  • 200ml single cream
  • 1tbsp butter
  • salt and pepper
Instructions
  1. Preheat the oven to 200Β°C.
  2. Combine all the ingredients and work them in a blender till a smooth consistency. Season with salt and pepper and mix well.
  3. Grease a muffin tray and empty the mixture.
  4. Place in the oven and cook for about 20 minutes or until ready.

Happy rainy Thursday all! The recipe of the day is tasty and cute – Spinach Bites! These are made with only a few ingredients but they’re a real crowd pleaser. I mean who wouldn’t love these – buttery puff pastry generously covered with spinach cream cheese. Don’t tell there’s spinach and I’m sure no one would notice. Seriously, even the kids liked these (I’m pretty sure they didn’t realize there’s quite a lot of spinach in them). πŸ™‚

These are all very simple and quick to make and taste amazing. As a matter of fact, I absolutely love making a variety of appetizers as a dinner. πŸ™‚ It’s kind of mix and match dinner. πŸ™‚

And in these gloomy rainy weather, something green and tasty would make you feel better. πŸ™‚ Seriously though, is it gonna snow in London? It seems we all have been waiting for the snow to come after warning for bad weather coming our way. At Β least the kids will be happy. Spinach Bites

Back to my recipe now..

So the only ingredients you’re gonna need are three – spinach, cream cheese and puff pastry. If you prefer and you’re good at it, you can make your own puff pastry. I used shop bought ready to roll pastry. It saved me lots of time and to be honest I use these quite often. It’s amazing – it’s a real-time saver and you don’t have to worry whether you’ll make the puff pastry actually puff. I’ve never made puff pastry before but I know itΒ might be aΒ bit tricky so I stayed on the safe side. πŸ™‚ I used fresh spinach but frozen would work just fine. Simply make sure to defrost it before combining with the cream cheese.

And for meat lovers, some chopped crispy bacon inside the spinach cream cheese would taste divine. I shall try this next time I’m making these bites. Even some smoked fish would taste lovely. But enough already, there are many options and combinations, just choose the one you fancy and let’s get cooking. And eating. πŸ™‚

Here’s what you need to make the cute little bites.

Ingredients
  • 200g puff pastry
  • 400g cream cheese
  • 200g spinach, cooked and pureed
  • salt and pepper
Instructions
  1. Preheat the oven to 200Β°C.
  2. Unroll the pastry, use a kitchen ring and cut small circles from the pastry. Place them on a greased baking tray and cook in the oven for about 15 minutes or until golden.
  3. Meanwhile make the spinach cream cheese - in a bowl, simply combine them, season with salt and pepper to taste and blitz till a smooth green consistence.
  4. Use a piping bag to cover the puff pastry with the spinach cream cheese!
  5. Enjoy!

Happy Meatless Monday guys! Today’s recipe is Stuffed Peppers with Couscous.

Hope you all had a magical Christmas and got all you wanted from Santa. Let’s hope the new 2017 is better and peaceful for all of us!

And after a long holiday, I’m finally back, and so are my recipes. πŸ™‚ I’m planning lots of interesting recipes (all of them simple, tasty and ready in no time) and I’ve got an exciting idea which I hope I can share with you, once everything is done. πŸ™‚ I just hope I’ll be more organised this year and manage to find time for everything I’ve planned.

So back to today’s recipe now…

Stuffed Peppers

Even though, this recipe is vegetarian and you might thing it is guilt free, I should warn you, these Stuffed peppers are actually quite a treat. Loaded with lots of Cheddar and Mozzarella cheese and a generous serving of butter, they taste like pure cheese heaven.

I really thought I’ve tried all of the possible combinations with stuffed peppers but of course, I was wrong. The possibilities are endless. πŸ™‚

I love the combination of cheese and peppers, most of the time I use feta cheese though. But because of the couscous and butter I thought Mozzarella and Cheddar cheese would work well.

Stuffed Peppers

I’ve never combined couscous in this way but it turned out really delicious. Even the kids loved it! And seriously, it took me a few minutes only. You can even make the couscous in advance. The only work you need to do is to grate the cheese and stuff the peppers. Then leave it to the oven and enjoy! I love recipes like that – quick, super simple and very tasty! πŸ™‚

It seems Stuffed Peppers are always a hit, especially recently and all kinds of stuffed veggies and fruit too. It’s probably a good way to consume more veg and fruit. Here’s a link of some of my Stuffed Peppers recipes you might like:

A quick tip – If you prefer your peppers more cooked, place them in the oven before stuffing them for about 10 minutes. This will make them soften. If you’d rather have them crunchy, skip this step. πŸ™‚

MM: Cavolo Nero & Broccoli Soup

Happy Meatless Monday guys! Today MM recipe is Broccoli Soup with Cavolo Nero. It’s been a while since I’ve posted a MM recipe but hopefully that’ll change and I’ll be able to do it regularly. And I’ve got so new festive recipes just lack the time to post them and share them with you or at least I wish I could be able to post a few more but… working on that. πŸ™‚

OK, so Broccoli Soup sounds pretty simple, right? But then some of you would probably wonder what Cavolo Nero is? At least, I was definitely wondering what that was when I first saw it in the shop but it definitely got my attention. πŸ™‚ Well, let me tell you, I used it for the first time in this soup. I’ve never heard of it before. It’s only recently when I noticed it in the shops and I’ve been really curious about it.

 

Broccoli & Cavolo Nero Soup

So one day, I just grabbed a pack of it and decided to get familiar with it. πŸ™‚ I thought it would taste good in the soup and I’m so glad I used it. Apparently it’s variety of kale, or Italian kale as I read. It’s got really rich and sweet flavour so it was perfect for my Broccoli Soup but it would be lovely in other meat and fish dishes, I’m sure. Also, I’d love to make a salad with it, probably will have to steam it first, for just a couple of minutes but I believe it would turn into lovely winter salad. Β And I love the dark green colour it’s got! πŸ™‚ Now that I’ve met this variety of kale, I’ll definitely be using it more often. However, I don’t get to see it very often in the shop but I guess it’s in store in certain months only.

Anyway, here’s what you need for this heart-warming Broccoli Soup with Cavolo Nero.

Broccoli & Cavolo Nero Soup

Ingredients:

  • 2 medium broccoli
  • 3-4 leaves Cavolo Nero
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2 potatoes, cut in halves
  • 150g mild Cheddar cheese, grated
  • 1 cup double cream
  • salt and pepper to taste

 

Broccoli & Cavolo Nero Soup

Preparation:

  1. In a pot, cover all the veggies with water and bring to a boil. Simmer for about 20 minutes or until they’re soft enough.
  2. Season with salt and pepper, add the cream and cheese and blitz the mixture to a smooth and creamy consistency. If necessary add some water.
  3. If wished, serve with some extra cheese and cream on top. I definitely recommend that!

Happy end of the week guys! And happy Pumpkin season!

Hope you all gonna have a great weekend with interesting things to do and lots of time to rewind and get ready for the next busy week! At least, this is what I’m planning to do.

It’s funny how youΒ wait impatiently for Friday to come and then a few moments later you realize it’s already Monday and you need to go back to your work πŸ™‚ Not fair, someone should extend the weekend one more day at least or even two! That would be something.

And Halloween is just in 10 days! Did you get your costumes yet. I still have to figure it out what would be my Halloween accessory as my daughter insist I need to be a witch when accompanying her to a Halloween party. And then you need start planning and organising Christmas. How crazy is that, time is literally flying. But I do love this time of the year and then Christmas is definitely my favourite time of the year so I’m looking forward to it!

The recipe of the day is a Pumpkin Hummus which I’ve never tried before(how could I miss that)but now it seems I even prefer it to the regular hummus. I love combining sweet and sour ingredients and this recipe is exactly that – the pumpkin(or squash will do the same) is sweet but it really combines well with the tahini, lemon and garlic. By the way, make sure you roast the garlic (I did mine with the pumpkin). Otherwise it might be a bit harsh. I mean, I do like garlic, but seriously, it tastes much better when it’s roasted, in this particular recipe at least.

It is a really unusual taste this hummus, but in a good way. It’s sweet but you can definitely taste the nuttiness of the tahini and the roasted garlic, of course. It’s surprising something that simple could taste that good.

The consistency is very rich so if wished add some water. And if you really like olive oil, be more generous, hummus loves olive oil πŸ™‚ Also, to make it a bit crunchy, try adding some pumpkin seeds on top, sunflower work too or even some chia seeds. Make it as seedy as you’d like πŸ™‚ Thus, it’ll not only taste divine, but it’ll be packed with healthy ingredients that will boost your energy.

Here’s what you need for this yummy dip.

Ingredients:

  • 300g pumpkin or squash, roasted
  • 2 garlic cloves, roasted (with the pumpkin)
  • 100g tahini paste
  • 100ml olive oil
  • 1/2 lemon, juice only
  • salt to taste

Preparation:

  1. In a bowl, combine all the ingredients and blitz to a smooth mixture.
  2. If wished add more or less olive oil and if the mixture is too thick, add some water.
  3. Spread it on a wholemeal toastΒ or dip it with some crackers.
