I hope you all are having a great weekend so far! I myself had a super fun Saturday at a local farm picking some veg. The kids absolutely loved the idea of picking their own veg and then getting to help me cook them later. Seriously, freshly picked beetroot makes amazing veg chips. I should probably share the recipe with you (it’s no rocket science really, but there are a few tips and tricks) πŸ™‚ Plus, I make them in the oven so they’re much healthier, tastier and cheaper too than the shop bought chips. πŸ™‚ Oh, and the kids love them!

I really don’t know how come we haven’t done this earlier. The farm itself was beautiful with great restaurant where they served really delicious food. My favourite place though was the farm shop. Now, I’ve been to quite a few of those and to be honest wasn’t that much impressed for various reasons. But this particular shop, oh I was in heaven! πŸ™‚ First of all, it was very spacious, with lots of different counters filled with gourmet items. I honestly can’t stop thinking about it and about the items I’m getting next time! πŸ™‚

The Raspberry Chocolate Pie is super moist and chocolatey, you couldn’t resist. The raspberries add this amazing berry hint that is just divine with chocolate. The recipe is super simple, all you need is some flour, chocolate, eggs, sugar and raspberries. I’m not a very good baker myself so I always look for the easiest baking recipes and this one is definitely such. All you have to do is mix everything together and bake. πŸ™‚

Ingredients

  • 200g raspberries
  • 3 eggs
  • 200g flour
  • 1 cup sour cream
  • 150g sugar
  • 150g butter, melted
  • 200g dark chocolate, melted
  • 1tsp salt

Instructions

  1. In a bowl, start combining the dry ingredient together and the wet ingredients in a separate bowl.
  2. Mix well. Combine the two bowls and mix again till a smooth consistency.
  3. Gently add the raspberries and stir the mixture thoroughly.
  4. Empty the pie mixture in a greased baking tray and place in the oven for about 30 minutes or until ready.
  5. Enjoy!

MM: Raspberry & Peach Salad

Happy Meatless Monday guys! Today’s recipe is Raspberry & Peach Salad with Mozzarella cheese – basically a fruity Caprese style salad! πŸ™‚

Where has August gone? Seriously, I can’t believe Summer is almost gone! Sad and happy at the same time as I know lots of new adventures are coming in the following months, plus Autumn is a great season, especially food-wise. πŸ™‚ And Halloween (which all of our family gets really excited about πŸ™‚ ) is fast approaching. So, even though we are saying goodbye to Summer, thing are looking pretty awesome this Autumn.

Right now, back to this pretty recipe now. This is all you may want from a Summer salad – fresh, fruity, light and healthy (or at least this is what I usually look for in a Summer salad πŸ™‚ ). All you need is some ripe peaches, raspberries, mozzarella cheese and fresh basil (my favourite! ). It seem like I use this amazing herb with everything. I just can’t get enough of it. And to me, this is a herb that scream Summer. πŸ™‚

The Raspberry & Peach SaladΒ is healthy, delicious and takes a few minutes only so there’s no excuse not to try it out! πŸ™‚

I made a fresh basil dressing as I didn’t want to make any pesto (I wanted to keep this salad as light and simple as possible). I used lots of extra virgin olive oil, lemon juice and some salt. Arrange the salad however you fancy and serve with the dressing on a side.

Ingredients

  • 150g ripe raspberries
  • 1 ripe peach, sliced
  • 1 cucumber, peeled and sliced
  • 100g Mozzarella cheese, sliced
  • For the basil dressing:
  • 50g fresh basil
  • 3tbsp extra virgin olive oil
  • 1tbsp lemon juice
  • salt to taste

Instructions

  1. Arrange the salad ingredients on a serving plate,starting with some peach slices, Mozzarella, cucumber and raspberries.
  2. Blend the dressing ingredients in a separate bowl.
  3. Serve the salad with the dressing on a side.

Happy Meatless Monday guys! Today’s recipe is MM: Watermelon Salsa – simple, fresh and amazingly good with tortilla chips!

Watermelon Salsa

If you, like me like the combination of sweet and salty ingredients, you’re gonna love this sweet and juicy Watermelon Salsa. I was looking for a way to mix up my usual snack(talking about the tortilla chips, which I simply love, especially in front of the TV πŸ™‚ ). I honestly can have them with almost everything, seriously. πŸ™‚ But because it’s Summer, it’s hot and I was trying to stay on the healthy side I came up with this. Why not substitute the Tomatoes in the Pico de Gallo and use watermelon instead? Yes, why not :-). This is what actually this Salsa is, Pico de Gallo with watermelon instead of tomatoes. I kept it quite simple though and didn’t use lots of spices as I reckoned it wouldn’t work well. But of course, I added cilantro (coriander), lime juice, salt and pepper. The result was delicious and a whole pack of tortilla chips was ‘destroyed’ :-).

Watermelon Salsa

This Salsa is super delicious on its own. If you’re craving for a light and fruity Summer salad, this is it. I would probably add some Feta cheese, it tastes amazing with the watermelon! Whatever you choose, I promise this is simply delicious and guilt-free. And it only takes a few minutes! Also, it’ll be perfect as a starter when you have some friends around, im sure they’ll appreciate it! πŸ™‚

Ingredients

  • 200g watermelon, deseeded ind thinly chopped
  • 1 small cucumber, peeled and chopped
  • 1/2 onion, chopped
  • 1 hot pepper(I used jalapeΓ±o), chopped
  • 1tbsp lime juice
  • salt and pepper to taste
  • fresh coriander, chopped

Instructions

  1. Mix all the ingredients together.
  2. Season wit salt, pepper and lime juice.
  3. Serve with some tortilla chips.

Happy Wednesday guys! Today’s recipe is Oven-Baked Banana & Peach French Toast – fresh, Summery and absolutely delicious, that recipe makes the perfect breakfast/brunch recipe, and an easy one too!

I hope you’re guys enjoying your Summer/holiday so far and indulging in yummy Summer recipes too. I truly enjoy mine, especially the kids, they love spending time with their grandparents, eating lots of ice-cream and getting spoiled a lot. πŸ™‚Β But this is what Summer holiday is all about, isn’t it? πŸ™‚

Back to my recipe now… Seriously, guys this is more than simple to make and at the same time tastes divine. Ripe bananas, peach, eggs and some bread is all you need. The rest is left to the oven. Β Yes, it is oven-baked but it tastes even better than fried french toast, in my opinion and is healthier. Well, I added some butter too which is not that healthy I guess but look at the amount of fruit in there. πŸ™‚ I used some fresh organic eggs and I think I’ve never used so beautiful eggs. The yolks were dark orange, it really felt they were a few hours old. So different to the eggs I usually use, unfortunately.

Oven-Baked Banana & Peach French Toast

Ingredients

  • 3-4 stale white bread slices
  • 3 eggs
  • 1 ripe banana, sliced
  • 1 peach, sliced
  • 50g butter
  • a splash of full fat milk
  • For serving:
  • 1tbsp honey
  • 1tbsp almond butter
  • 1tsp deseeded coconut

Instructions

  1. Preheat the oven to 200Β°C.
  2. In a baking tray, roughly cut the butter in a few pieces and spread it on the tray. Do the same with the bread.
  3. Whisk the eggs with the milk together and pour over the butter and bread.
  4. Arrange the banana and peach slices on top.
  5. Bake in the oven for about 20 minutes.
  6. Serve with some almon butter, honey and deseeded coconut, if wished.

I served the french toast with honey, almond butter and some deseeded coconut. It tastes absolutely amazing, very rich and indulgent, more like a dessert than breakfast. But who won’t like dessert for breakfast? πŸ™‚

You can even serve it with a scoop of vanilla ice-cream, especially when it’s still hot and out of the oven. This is a totally different story but why not? πŸ™‚ I always look for ways to upgrade my recipes and make them even tastier (not always healthier though, I admit).

Beef & Pork Stuffed Zucchini

Happy Friday! Today’s recipe is Stuffed Zucchini – one of my favourite stuffed zucchini recipes – there’s pork and beef mince, spices, fresh herbs and of course, melted cheese. πŸ™‚

Stuffed Zucchini

I absolutely love zucchini in every way possible. For some reason, I do make lots of zucchini recipes this time of the year ( I guess because they’re in season, duh). Grilled, steamed, fried or even raw they are just delicious.

And in this particular recipe, they’re simply amazing. I stuffed them with beef and pork mince that was flavoured with some garlic, tomato and spices. Then added some cheese on top for a perfect finish. They tasted so fresh and yummy so no wonder they were gone in a few minutes.

Also, this recipe is perfect for when you’re quite busy and don’t have that much time to spend in the kitchen. In my case, it took me just a few minutes as I used the meat from a pasta recipe I had made the previous day. Basically, the only thing I did was to fill the zucchini with the mixture and cook them. How not to love recipes like these – they save you so much time but at the same time are so tasty! πŸ™‚

Here’s how to make the Beef & Pork Stuffed Zucchini

Ingredients

  • 2-3 zucchini (courgettes)
  • 300g beef and pork mince meat (mixed)
  • 150g Cheddar cheese, grated
  • 1 garlic clove, crushed
  • 1/2 onion, chopped
  • 2tbsp tomato passata
  • 1tsp cumin
  • 1tsp black pepper
  • salt
  • 1tbsp olive oil
  • a bunch of fresh parsley, chopped

Instructions

  1. Preheat the oven to 200Β°C.
  2. Cut the zucchini in halves and scoop out the inside part, then chopped it up.
  3. Heat a pan with olive oil and sweat the garlic, onion and the inside part of the zucchini for five minutes. Add the minced meat, passata and seasonings and mix well. Cook for about 10 minutes then leave on a side to cool down.
  4. Fill the zucchini halves with the mixture and place in the oven for about 15 minutes. Add the cheese and leave for another 2-3 minutes so the cheese can melt.
  5. Serve with some extra parsley on top.
