Happy Taco Tuesday guys! Today’s recipe is Turkey Meatballs Tacos – succulent turkey meatballs on flour tortillas with fresh guac and some other goodies too!

I must admit, I was a bit sceptical about this recipe (meatballs on a taco) but I was so wrong. It turned out delicious, quite meaty to be honest. 🙂 But how could it not – juicy meatballs with lots of spices and sweet pepper, fresh guac, black beans & sour cream. You can even add some cheese, fresh jalapenos, coriander and whatnot. Why not build your own taco? Just don’t forget the main ingredient here – the Turkey Meatballs.

I made the meatballs quite small on purpose, after all I was gonna put them on a taco so I didn’t want any big ones. I used fresh coriander, red pepper, onion, garlic, cumin, black pepper, nutmeg and I think that’s about it. Oh, and one more thing, these are actually oven-baked. So no frying and you get a healthier option of meatballs. 🙂

The kids only had the meatballs though. They’re still not used to have the whole package with the sauces and beans, so they basically had a plain taco – meatballs only which was fine with me, as long as they had their dinner. 🙂

These Turkey Meatballs Tacos are super easy to make and that makes them perfect for a busy weekday dinner. You can even try to make the meatballs in advance and then just build your tacos from there. There are so many delicious options to choose from! 🙂

Quick tip: For a juicier version of the meatballs I add some grated Parmesan cheese and for a cheesy version – grated Mozzarella. 🙂

Ingredients

  • 5-6 soft flour tacos
  • For the Meatballs:
  • 450g turkey mince
  • 1 garlic clove, crushed
  • 1/3 red pepper, chopped
  • 1/3 onion, chopped
  • 1 egg
  • 1tbsp breadcrumbs
  • 1tsp nutmeg
  • 1tsp cumin
  • 1tsp black pepper
  • 1tsp salt
  • black beans for serving
  • sour cream for serving
  • guacamole for serving
  • hot sauce, if wished

Instructions

  1. Preheat the oven to 200°C.
  2. In a bowl, mix all the meatballs ingredients and make small meatballs.
  3. Arrange them on a greased baking tray and cook in the oven for about 30 minutes.
  4. Serve the tacos with as many topping as you wish. You can add black beans, sour cream, guacamole or cheese.
  5. Enjoy!

Happy Tuesday! The recipe of the day is Turkey Meatball Fajita – succulent turkey meatballs with sautéed peppers and onions, wrapped up with some other extras! 🙂

I’ve never had meatballs in a wrap till now. I’ve missed a lot. These wraps are so rich and juicy you barely need anything else. But because I’m greedy, I had them with sauteed peppers and onions, some hot sauce and a tiny bit of light mayo.

The peppers and onions kind of turned them into fajitas I think, but honestly, cheese, guacamole and other topping would be just too much. As I said, the meatballs, peppers and onions are more than enough. Plus, they work perfectly together and adding other ingredients would spoil the whole thing. 🙂 However, I should’ve made more of the peppers. The kids really enjoyed them and snacked on them. Make sure not to overcook them though. Leave them a bit crunchy, thus they taste much better. 🙂

Why I used turkey mince? Well, I simply love it. Even though it says it’s lean on the pack and there’s less fat in it, it still tastes amazing – really juicy, which is not typical for lean meat, especially turkey, I guess.

Anyway, I recommend it! Also, it’s supposed to be a healthier option. 🙂 They’re really simple to make – some breadcrumbs, seasoning and one egg. Then simply sautee some peppers and onions and serve on a tortilla wrap! Simple and absolutely delicious!

Ingredients

  • 400g turkey mince
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 1 egg
  • 1tsp dry parsley
  • 1tsp cumin
  • 1tsp nutmeg
  • 2tbsp breadcrumbs
  • 1 small onion, chipped
  • olive oil
  • salt and pepper to taste
  • tortilla wraps to serve

Instructions

  1. In a bowl mix the turkey mince, chopped onion, breadcrumbs, cumin, nutmeg, parsley and the egg. Season with some salt and pepper to taste and make the meatballs.
  2. Heat a pan with the olive oil and cook the meatballs for approximately 5 minutes on each side or until ready.
  3. In another pan, heat some olive oil and gently sautée the peppers and onions for about 10 minutes.
  4. Serve with some flour tortillas and hot sauce, if wished.

I added three meatballs on my wrap but it turned that was way too much. Two is actually more then enough, but whatever you fancy, really.

I even made the dough from scratch! Not that it’s too difficult, it just takes a bit more time but it’s totally worth it. Of course, if you’re time-restraint, you can always use shop bought dough.

So, more about the pizza now..I used Mozzarella and Parmesan cheese, cheery tomatoes, sweet red peppers, black olives and a bit of spinach. I love both meatballs and pizza and the idea of having both in one meal sounded really good. For the base, I simply used flour, yeast and olive oil, really simple, but again a bit time-consuming. I topped dit up with tomato sauce and then arranged all the other ingredients. It was quite loaded pizza, succulent and cheesy, one of my favourite thing to have on movie night. 🙂

And the weekend is just one day away so I might have to make this pizza again. 🙂 I don’t know about you but my weekends go by too quickly, really quickly. It seems the anticipation is so long and then you wake up and it’s Monday again. There’s never enough time to relax, cook, meet with friends, watch movies and have fun with the kids. Seriously, we need an extra weekend day.

Back to the food now…Feel free to add sauces you fancy. I usually add some garlic sauce and of course, lots of hot sauce. But to be honest, this pizza is quite juicy, so you might skip the sauce. But on the other side, meatballs with hot sauce are so tasty. 🙂

Ingredients
  • 4-5 tbsp tomato sauce
  • 1 red pepper, sliced
  • 5-6 cherry tomatoes, cut in halves
  • 100g Mozzarella cheese, grated
  • 100g Parmesan cheese, grated
  • 10 black olives
  • a handful of fresh spinach
  • For the Meatballs:
  • 300g ground turkey
  • 1/2 onion, chopped
  • 1tbsp breadcrumbs
  • 1tbsp fresh parsley, chopped
  • 1 egg
  • salt and pepper
  • For the pizza dough:
  • 500g flour
  • 7g yeast
  • 2tbsp warm milk
  • 2tbsp olive oil
  • 1tbsp salt
Instructions
  1. Preheat the oven to 200°C.
  2. To make the meatballs – mix all the ingredients in a bowl and shape small balls.
  3. To make the dough – mix the dough ingredients and add warm water as much as needed to make a smooth dough. Knead for about five minutes, cover with a tea towel and leave for about an hour to rise.
  4. When the dough is ready, roll it out and place in a greased baking tray.
  5. Spread the tomato sauce and sprinkle the cheese on top.
  6. Add the peppers, spinach leaves and tomatoes.
  7. Arrange the turkey meatballs on top. Sprinkle some more Parmesan cheese.
  8. Bake in the oven for about 40 minutes or until ready.

Tip: If you use shop-bought dough, you might need to half cook the meatballs before baking the pizza, especially if you make giant ones like me. 🙂 Simply place them in the oven and cook for about 15 minutes. Then you can arrange them on the pizza and bake again.

Baked Tuna Meatballs

Happy weekend all! Here’s the Saturday recipe of the day – Baked Tuna Meatballs – yes, baked not fried, but still juicy, amazingly delicious and super simple to make!

OK, so this was the first time I made meatballs from tinned tuna. I saw a few photos of tuna meatballs on the web and I thought that they looked quite delicious. So, I got all my ingredients and started cooking.

I chose to bake these simply because I’m not really keen in frying. Don’t get me wrong I love fried food too, it’s just the process I dislike. 🙂 I honestly fry food very rarely and almost every time regret it. 🙂 So I try to find alternatives(meaning cooking in the oven). 🙂

But as I mentioned, the meatballs were so succulent and juicy, you’d probably thought they were fried. Well, I guess that’s because of the tinned tuna and also I didn’t completely drain it, I saved just a tiny bit from the sunflower oil. Yes, probably that kept the meatballs moist and so appetizing.

Ingredients
  • 3 tins of tuna in sunflower oil, drained, with a bit of sunflower oil left
  • 2tbsp breadcrumbs
  • 1/2 onion, chopped
  • 1 garlic clove, crushed
  • 1 egg
  • 100g Parmesan cheese, grated
  • fresh parsley, chipped
  • salt and pepper
Instructions
  1. Preheat the oven to 200°C.
  2. In a bowl, combine the tuna, egg, onion, garlic and breadcrumbs. Season with salt and pepper and mix well.
  3. Add the Parmesan cheese and parsley, mix and make small meatballs.
  4. In a greased baking tray arrange the tuna meatballs and cook in the oven for about 20 minutes or until ready.

 

Baked Tuna Meatballs

I served the meatballs with quinoa with peas and corn. My kids really enjoy quinoa and have it quite often. I often add some veggies inside like carrots, peas, small broccoli, etc..

The tuna meatballs work well with lots of stuff, like you can have them with veggies, rice, pasta, whatever you fancy really. Or simply by themselves, with some kind of sauce probably.

I think they would taste amazing in a creamy tomato sauce with some pasta so next time I might actually make this.

Oh, and they also make a great party food/canapes. Make them even smaller, prick them with cocktails stick and serve them to your guests. I’m pretty sure they would love them. 🙂

Did I say that the kids love them too? It’s really one of the few things they genuinely like and I was so surprised they actually licked their plates and asked for more.:-) That was a huge success. So looks like from now on I’ll be making these quite often. And another plus is, you probably got all the ingredients in your kitchen cupboard/fridge. I mean, I always stock up on tinned tuna. It’s great for quick and easy meals and I use it a lot – in sandwiches, pasta, wraps, salads and whatnot.

Tip: Why not try adding a splash of hot sauce in the tuna mixture for some extra heat. 🙂

Parmesan Cheese & Parsley Meatballs

As the weather is getting colder and colder by the day we need some good comfort food to warm our souls! At least I need it:-) One of my most favourite comfort food are Meatballs. Now, there are different meatballs recipes which me and my family love but this one seems to be our favourite so far – Parmesan Meatballs. As you can tell, they’re very cheesy, very herby ( I love adding fresh herbs to all of my recipes, which by the way is getting really difficult as the snails in my garden feast on my herbs) and of course very meaty. I used half and half, beef and pork. I find it this way, the meatballs are not too dry or too greasy, they’re just perfect.

The only part I was not too keen on was the cooking. I do not like frying but luckily, it wasn’t long before they were cooked so it was all good. Actually, I think the prep time is longer than the actual cooking. Not that it takes long, the recipe is very simple, quick and easy to make. And the result is delicious meatballs – crispy on the outside, soft and cheesy on the inside.

Throw some roast veggies in the oven or a salad (potato salad goes really well with them) and have a bon apetit!

Here are the ingredients you need to make this recipe.

Ingredients:

  • 500g/1lb mince meat(50/50 pork and beef)
  • 1 onion, chopped
  • 1 egg
  • 150g/5oz Parmesan cheese, cut into small cubes
  • 3tbsp golden breadcrumbs
  • 1tsp black pepper
  • 1tsp cumin
  • salt
  • a bunch of fresh parsley, chopped
  • sunflower oil for frying

Preparation:

  1. In a bowl, combine the meat, onion, parsley(add as much as you’d like), breadcrumbs and seasoning. Mix well and refrigerate for 20 minutes.
  2. Combine the Parmesan cubes with the mixture and start making the meatballs.
  3. Cook in a heated pan with some sunflower oil, turning them constantly for about 15 minutes, or until they’re done. It really depends on how big you’re gonna make them and whether you use gas or electricity. Either way, they’re ready when they turn golden. To be on the safe side, cut the first on in half and check whether it’s cooked. If it’s done, finish it and continue cooking the rest of them!:-)
