Happy Monday guys! Today’s recipe is Pumpkin & Chocolate Biscuit Cake – so creamy, chocolatey and simply irresistible!

I’m telling you guys, this cake is just perfection – biscuit layers, with mascarpone and cream, pumpkin & of course, lots of chocolate. Oh, and on top – my fav caramelized pecans. We really enjoyed this cake and I honestly had a bit too many pieces, but it really was amazing.

It’s also so simple to make, I actually used digestive biscuits for the layers, soaked in some strong espresso & brandy mix. So no flour, no baking, no fuss really. The other main ingredients are the mascarpone & cream mixture, pumpkin and some chocolate spread (like a jar of it πŸ˜€ ). This beautiful cake was topped up with some caramelized pecans for a crunchy finish.

I have originally seen the recipe in a website and I thought this all sounded pretty delicious so I couldn’t wait to try it. I’ve changed quite a few thing but I got the main idea from there.

Pumpkin & Chocolate Biscuit Cake

Ingredients

  • 400g tea biscuits or similar
  • 200ml espresso
  • 50ml brandy
  • 300 pumpkin, cooked
  • 500g Mascarpone
  • 200ml double cream
  • 100g sugar
  • 300g chocolate spread
  • 100g pecans
  • sugar for caramelizing

Instructions

  1. Mix the coffee and brandy.
  2. In a bowl, mix the Mascarpone, cream & sugar.
  3. Dip the biscuits in the coffee mixture and start making a layer - biscuits first, pumpkin, chocolate & finally the Mascarpone layer. Repeat.
  4. Place the pecans in a pan, add a bit of sugar and caramelize them for a few minutes. Add on top of the cake.
  5. Refrigerate for at least three hours.
  6. Enjoy!

What I really love about this cake is that the more it stays in the fridge, the tastier it gets. The biscuits really soften and soak the espresso & brandy mixture. It tastes so much better in a few days time (not that anyone could wait that long :-D).

Salted Caramel Pumpkin Cheesecake

Let’s focus on the Salted Caramel Pumpkin Cheesecake now..

The recipe uses a few basic ingredients – digestive biscuits and butter for the bottom layer, cream cheese and pumpkin and then salted caramel on top, simple as that! I used shop-bought caramel sauce that I mixed with sea salt for the lovely salty flavoured caramel. If you prefer, you can make yours at home. Make sure to refrigerate it for a few hours before serving! It’s a real treat! πŸ™‚

The second one is topped up with dark chocolate instead of the salted caramel and it’s still that moreish & irresistible. I honestly can’t say which one I prefer. I’d have both if I could! πŸ™‚

Now that Christmas is fast approaching(a bit over 10 weeks!) I’m thinking these Pumpkin cheesecakes would make the perfect treat for friends and family when visiting. Not only they’re super simple(no baking!) but their taste will surely please your loved ones! πŸ™‚

Salted Caramel Pumpkin Cheesecake

Ingredients

  • 300g digestive biscuits, crushed
  • 150g butter, melted
  • 300g pumpkin, cooked and pureed
  • 400g cream cheese
  • 200ml double cream
  • 150g brown sugar
  • 1tbsp cinnamon
  • 1tsp nutmeg
  • 1tsp cloves
  • 150g caramel sauce(I used shop-bought but you can make your own)
  • 2tbsp sea salt

Instructions

  1. Combine the biscuits with butter and layer them on a springform cake tin covering the bottom with baking paper in advance.
  2. Whip the cream, cream cheese, pumpkin and seasoning together. Make sure to mix well.
  3. Pour over the biscuit layer and even the surface. Add the melted chocolate on top and refrigerate for at least 3-4 hours.
  4. Combine the caramel sauce with sea salt.
  5. Finish with the salted caramel and leave for another hour in the fridge.
  6. Enjoy!

Happy Friday guys! Today’s recipe is Pumpkin & Chicken Casserole – seriously delicious and comforting one pot meal, just add some freshly baked (lots of it!) bread to it and serve it hot for a tasty heart-warming meal! πŸ™‚

Honestly, I had about half of a bread loaf with this casserole and if I didn’t stop myself I would probably have had the other half too. πŸ™‚ This Pumpkin & Chicken Casserole is just screaming for a delicious bread to soak the tasty juices with. I don’t have such meals very often but now the weather has changed, I’m sure this will change too. I seriously need to improve my self-control skills and be able to stop after having a generous amount though. πŸ™‚ But try to look through my point of view – you get home after a long and exhausting day, haven’t had any food all day, froze yourself off at the park and finallyΒ  put the kids to bed and…see a pot with hot Pumpkin & Chicken Casserole and freshly baked bread! πŸ™‚ How could you not eat half a loaf of bread with it. πŸ™‚

Well, this was my story (or something like that) about what happened with the Pumpkin & Chicken casserole. Everyone really enjoyed it too! No leftovers and no bread left either. πŸ™‚

So what’s in the casserole – Pumpkin, chicken, celery, Chorizo or any other red sausage and spices. As you can see – really simple, just a few ingredients but the taste is incredible. I can honestly say this has become one of our family’s favourite ‘Winter Warmer’ recipes, for sure.

Here’s how to make the Pumpkin & Chicken Casserole

Pumpkin & Chicken Casserole

Ingredients

  • 3-4 chicken legs ( or you can get a whole chicken and cut it in 4)
  • 1 small pumpkin, deseeded and cut into chunks
  • 1 Chorizo/red sausage, sliced
  • 2 celery stalks, chopped
  • 1 chicken stock cube
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 3 bay leaves
  • 4-5 black peppercorns
  • 1tsp allspice
  • 1tbsp paprika
  • salt to taste
  • olive oil

Instructions

  1. Preheat the oven to 180Β°C.
  2. Heat a pan with some olive oil and cook the chicken for about 7-8 minutes on each side. Remove it from the pot and add the onion, garlic, celery, sausage, pumpkin and spices. Gently sweat for about 10 minutes.
  3. Add the chicken stock and about a pint of water. Put back the chicken legs. Cover and cook for about 20 minutes. If necessary, add more water.
  4. Place in the oven for an hour.
  5. Serve with freshly baked bread, if possible.
  6. Enjoy!

Butternut Squash & Root Veggies Bulgur Salad

Happy Tuesday guys! Today’s recipe is Butternut Squash & Root Veggies Bulgur Salad – a beautiful Fall salad that you’re gonna fall for! πŸ™‚ Seriously, it’s so colourful, packed with so many vegetables, crunchy and simply delicious! Not to mention the health benefits! πŸ™‚ Bulgur wheat, beetroot, butternut squash & radishes are just a few of the yummy ingredients!

Butternut Squash & Root Veggies Bulgur Salad

As the weather is getting a bit chilli (or a lot) I can’t stop but think about heart-warming and comforting recipes like stews, soups and salads too. There are so many amazing Fall salads that I love and this Bulgur is one of my favs. It’s so nourishing and tasty and yet very healthy, packed with vitamins and minerals. All you need is beetroot (which we’ve been having a lot recently), radishes, butternut squash, some corn and chickpeas (optional). The dressing was very simple – extra virgin olive oil, fresh lemon juice and salt, you can never go wrong with this dressing. Β However I also added some of my spicy avo mayo (recipe hopefully coming soon) which is one of the most delicious dips ever (my opinion and taste πŸ™‚ ). It’s the simplest thing to make – chilli flakes, avocado, lime & olive oil. It tastes delicious with rapeseed oil too. Of course, that made the salad even more filling and this meal filled me up for a long time. If you prefer, you can add some sliced avocado instead.

Ingredients

  • 200g bulgur, cooked
  • 1 beetroot, chopped
  • 7-8 radishes, sliced
  • 100g corn, tinned
  • 150g butternut squash, cooked
  • 2 celery stalks, chopped
  • For the dressing:
  • 2tbsp extra virgin olive oil
  • 2tbsp lemon juice, fresh
  • salt to taste

Instructions

  1. In a bowl, simply mix all the ingredients.
  2. Whisk the dressing ingredients separately and pour over the salad.
  3. Serve with some extra lime/lemon wedge, if wished.
  4. Enjoy!

A little update on the reception, as promised…It actually goes better than I have ever expected. My daughter absolutely loves going to school and she adores her teacher too. Isn’t that lovely! You might think ‘oh, just wait and you’ll see’ but honestly so far is amazing and I’m more than happy!
