Oven Baked Halloumi Chips with Herbs

I can’t believe I haven’t tried this before. Honestly, I do get a lot of halloumi cheese in my shopping but I usually grill it and toss it in salads. These halloumi chips are a different story. Of course, they taste like halloumi but at the same time they are different. They’ve got crispy coating which consists of stale rye bread, seasoning and herbs. Yes, stale bread. For some reason, my family is not really keen on bread so almost every time I get a loaf, more than half of it is left. This is how I started making breadcrumbs – simply blitz the bread in a food processor voila, perfect breadcrumbs. I usually sore them in a container in the fridge, really handy. So my point was… I added some dry garlic, parsley and thyme and seasoned with salt and pepper. Be easy on the salt though, the halloumi is already quite salty.

And the best part is there is no frying which makes these chips healthier and easier to make. I guess they would taste a bit too greasy when fried anyway, so oven baked is much better.

I couldn’t escape of not making any mayo based dip again. Really, what’s with me and these dips. I’m telling you, I’ve been making lots of these and eating them too. ย I had the halloumi chips with spicy mayo and the combination was so yummy.

So yummy that I didn’t realize how a generous portion of the chips and dip was gone in a few minutes. Well, I was actually watching TV. It’s always a bad idea to have food while watching TV. You’ll be surprise how quickly the food is gone. ๐Ÿ™‚

Oven Baked Halloumi Chips with Herbs

Ingredients

  • 250g Halloumi cheese, cit into chips
  • 1 egg, beaten
  • 2tbsp breadcrumbs
  • 1tbsp dry parsley
  • 1tbsp dry thyme
  • 1tsp dry garlic
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 200ยฐC.
  2. Mix the breadcrumbs with the seasoning.
  3. Dip the chips into the egg mixture and then cover them in the breadcrumbs and seasoning mix.
  4. Arrange them on a greased baking tray and place in the oven for about 15 minutes until crispy and golden.

I can’t tell you how delicious these cheesy buns turned! Yum, yum, yum…

The cheese literally exploded, imagine how much was in there. If you are cheese lover like me you’d love these, no doubt. There’s Parmesan cheese, Mozzarella & Feta. And the recipe is actually quite easy. I saw a similar recipe on the web and I really liked the idea, I haven’t used the same ingredients though, I kind of made my own muffins/buns. Really not sure how to call them – they’re baked in a muffin tray so that’s why I called them muffins but on the other side are like bread/buns. Anyhow, you get the point. And it is that they’re super delicious.

Here’s how to make Three Cheese Savoury Muffins.

Ingredients

  • 400g flour
  • 1 sachet(7g) yeast
  • 1tsp salt
  • 300ml milk
  • 50g butter
  • 200g Mozzarella cheese, grated
  • 100g Parmesan cheese, grated
  • 100g Feta Cheese, grated
  • 1 egg yolk
  • extra butter for baking
  • chopped parsley for sprinkling

Instructions

  1. In a bowl, combine the flour, yeast, salt and milk. Work the dough, place in a bowl, cover with a tea towel and leave for about 30 minutes to rise. If necessary add more milk.
  2. Preheat the oven to 180ยฐC.
  3. Divide the dough into 7-8 equal parts.
  4. Roll each out in oval shape and sprinkle a mixture of the cheese on half of it. Start wrapping and halfway through make a few cuts with a knife. Finish wrapping the bun so you have something like a wrap.
  5. Now make a ring and place in a greased with butter muffin tray.
  6. Repeat with the rest of the muffins.
  7. Brush the muffins with the egg yolk and then sprinkle with the parsley.
  8. Bake in the oven for about 30 minutes or until ready.

The dough is made of flour, yeast and milk. I should say, I am not that good in making dough for bread but this was really simple and turned out delicious. All you need to do is to combine the ingredients, work the dough and then wait for it to rise.

This is another delicious recipe using muffin tray. It makes me think I actually need to change mine, it’s been a good few years of use. In fact, I need a whole lots of baking equipment. Can’t wait to pick up some new and exciting stuff soon.

I used dry parsley again. As I Mentioned in my previous post I’ve been using it very often. It’s all chopped up for you and ready to use. Plus, you’re not gonna need to worry how to store it for longer. On the other side though, fresh is best. ๐Ÿ™‚ But this is what works for me at the moment.

The Three Cheese Savoury Muffins would be ideal snack for picnic. They really got me thinking about spring, sun and picnics. My daughter absolutely loves having picnics, so as my whole family and I can’t wait for the weather to get warm and sunny so we can enjoy a nice day out.

I should probably make a double batch of these then. ๐Ÿ™‚

They are perfect for sharing, as a side, as a snack, just one of these get together recipes. Make sure to have them when they’re nice and warm and the cheese is melted. Nothing better than a melted three cheese bun. Nom, nom, nom. ๐Ÿ™‚

Cheesy Chicken & Spinach Bites

Happy Monday guys! The recipe of the day is Mozzarella & Parmesan Chicken Bites with Spinach. I made these Cheesy Chicken & Spinach Bites in a muffin tray and baked them in the oven. They tastedย so succulent and freshย and were gone too quickly. Even my daughter loved them! She actually thought they are even more delicious than her favourite chicken nuggets. And there was spinach in them too, lots of it, which she didn’t mind at all. I was really surprised that she ate them without even saying anything about the ‘green stuff’. Point for mummy then! :-)I need to add this recipe to the list with her favourite recipes now, which is quite short at the moment. ๐Ÿ™‚

As I mentioned, these Chicken & Spinach Bites are actually made in the oven. There’s no frying involved (which I’m not big fan of) and still they taste as they’re deep-fried.

I thought I was actually making too many of them but it turned out they were not enough at all. I wanted to have some for today too but that was not the case. ๐Ÿ™‚

They’re perfect for snacking or as a main. We had our Chicken & Spinach Bites with Quinoa which was very delicious combination. You can also use them as a starter. They look so cute, I’m sure your friends and family would be quite impressed. Of course, even more impressed with the flavour. ๐Ÿ™‚ Now, I could also have these for breakfast, not sure about you though ๐Ÿ™‚ It’s probably the fact that they’ve got eggs so it kind of make them a good start of the day too. It doesn’t really matter how and when you’re gonna have them. ๐Ÿ™‚ Make a batch of these, refrigerate and enjoy during the week. Or why not take some for lunch in the office? Whatever you do, just make sure you prepare enough so you can enjoy them for longer!

Cheesy Chicken & Spinach Bites

Here’s what you need for these amazing Cheesy Chicken & Spinach bites.

Ingredients:

  • 2 chicken breasts, finely chopped
  • 150g spinach
  • 100g Mozzarella cheese, grated
  • 100g Parmesan cheese, grated
  • 2 eggs
  • 100g breadcrumbs
  • 1tbsp lemon juice
  • 1tsp paprika
  • 1tsp black pepper
  • 2tbsp sunflower oil
  • salt to taste

Cheesy Chicken & Spinach Bites

Preparation:

  1. Preheat the oven to 200ยฐC.
  2. In a bowl, add all the ingredients and seasoning and mix well.
  3. Grease a muffin tray and make small balls from the mixture so they can fit into the muffin tray.
  4. Bake in the oven for about 30 minutes or until ready.

Tip: I had my chicken bites with lots of hot sauce, but garlic mayo goes really well with them! Just pick the dip you like and dig in!

Happy Sunday all! If you’re still debating on what to make for supper, here’s an easy and tasty idea – Spaghetti Squash withย lots of Parmesan Cheese and Mushrooms and Spinach!

For some reason, I’ve been using lots of Parmesan cheese lately. Not only I use it with pasta, but it seems I sprinkle it on almost everything. But it just tastes good, and it tastes good on almost everything ๐Ÿ™‚

Or not really ๐Ÿ™‚ The point is you need delicious and heart-warming food to make you feel good and warm and to get you ready for Monday. This is where you’re checking my daily recipe ๐Ÿ™‚ Just joking. Seriously though, it’s a quick recipe but will definitely warm you up and make you feel better, or at least not hungry ๐Ÿ™‚

It’s incredibly easy recipe, and really comforting. I was quite generous on the cheese, but this is how I like my spaghetti squash ๐Ÿ™‚

The easiest way to make them is to roast the squash and then kind of shred it with a fork so you get your ‘spaghetti’. Skipping the shredding part and you’ll make a beautiful stuffed squash. Not big of a difference really. It’s just when making spaghetti squash, the actual squash is mixed with the other ingredients, whilst a stuffed squash, the ingredients are on top and you get the tasty squash hidden underneath. ๐Ÿ™‚ Here you can check myย Sautรฉed Mushrooms & Millet Stuffed Butternut Squashย recipe. It is simple and delicious! And for those of you unfamiliar with millet, it’s similar to quinoa and couscous, may be just a bit creamier consistency. And as quinoa, millet’s got numerous health benefits so combined with a butternut squash it is a nutrient and healthy meal.

Here’s what you need for the Spaghetti Squash.

Ingredients:

  • 1 butternut squash
  • 150g chestnut mushrooms, sliced
  • 100g spinach
  • 150g Parmesan cheese, grated
  • 2 garlic cloves, crushed
  • olive oil
  • salt and pepper to taste

Preparation:

  1. Preheat the oven to 200ยฐC.
  2. Wash the squash, cut in half and scoop out the seeds.
  3. Drizzle with olive oil, season with salt and lay on a baking tray. Place in the oven for about 30 minutes or until the squash is cooked.
  4. Start shredding the squash by using a fork.
  5. Heat a pan with olive oil and gently sweat the spinach, mushrooms & garlic. Season with salt and pepper and leave for about 10 minutes. Remove from the hob.
  6. Fill in the squashes, mixing gently all the ingredients. Add the Parmesan cheese on top and cook in the oven for another 5-10ย minutes.

Enjoy!

Tip: If you prefer, you can scoop out the spaghetti squash and serve them in a plate but I personally love them in their squash! Plus it looks more authentic, doesn’t it? ๐Ÿ™‚

Also make sure you eat these straight from the oven. They must be piping hot so you can fully enjoy them, and the melted cheese, of course. ๐Ÿ™‚ You can always preheat them but it’s not the same taste.
