I’ve recently got a new cast iron casserole and I’ve been making lots of one pot dishes and casserole. I’m kind of addicted to it but it’s so much better than my previous ones in every single way – better quality and better looking. And the colour as you can see feels so Christmassy (at least to me 😆 ) i honestly can’t leave it. And the food prepared in this cast iron casserole is simply gorgeous. Not only it’s super easy to make a meal – literally throwing ingredients and then leave it to the oven, but it tastes amazing, I think it’s got something to do with the way the heat is spreading. Anyway, this is not a paid advertising as it may look 😂 I just wanted to let you know how happy I feel about my new cast iron casserole. So let’s move to the recipe now..

Delicious One Pot Lasagna

This is the ultimate comfort food for me, just perfect for this weather, layers of cheese, tasty tomato sauce and mince meat. Simply add some fresh garlic bread when serving and enjoy! I used Mozzarella, Parmesan  and Mascarpone but you can use anything you fancy really as long as it’s sweet and mild. I was actually thinking to dip my tortilla cheese in it but didn’t have any so that’s something I’d definitely try next time I’m making this deliciousness. I’m sure it’ll be super tasty. Ingredients

  • 1kg mince meat(beef & pork)
  • 800ml passta
  • 3 garlic cloves, crushed
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • lasagna sheets
  • 200g Mozzarella, grated
  • 500g Mascarpone
  • 200g Parmesan, grated
  • 1tbsp cumin
  • 1tbsp oregano
  • 1tbsp paprika
  • salt and pepper
  • olive oil

Instructions

  1. Preheat the oven to 190°C.
  2. Sweat the onion and garlic for a few minutes. Add the celery, mince meat and seasoning. Stir well, pour in the passata and leave for about15 minutes.
  3. Remove from the hob. Start arranging the lasagna, start with the mince meat mixture, add some lasagna sheets, then a layer of the Mozzarella, Parmesan and Mascarpone cheese. Repeat.
  4. Place in the oven and cook for about an hour. Serve with some garlic bread.
  5. Enjoy!

Tuna Pasta Casserole

Happy Tuesday guys! Today’s recipe is Tuna Pasta Casserole – very simple and yet delicious dish!

It uses a few basic ingredients which I’m sure most of you can find in the kitchen cupboard – tinned tuna, pasta, cheese. There’s also peppers & mushrooms and that’s pretty much it. I used whole wheat pasta, in case you wonder and topped the whole dish with some homemade buttery breadcrumbs with more cheese, of course. If wished, add some more Parmesan cheese when serving. Who wouldn’t like some extra cheese? I know I wouldn’t mind at all. 🙂

A quick tip – if you’d rather have an even creamier pasta dish go for double cream instead of the milk.

I have seen the original recipe in one of my cooking books but I’ve changed a few things so it’s not a complete copycat. 🙂 It’s more like a version of it, my version. 🙂

This Pasta dish is just perfect as a dinner during the week. It literally takes minutes to cook, say about 20 in the oven and about 10 on the hob, so in roughly half an hour you’ve got rich, comforting and absolutely delicious Tuna Pasta Casserole.

You might want to serve it with some extra greens to compensate the extra cheesy bit. I love having pasta with a side of fresh green salad with cherry tomato with a dash of extra virgin olive oil and seasoning. But this is me. My kids prefer steamed broccoli or green beans which I’m happy to make, of course. 🙂

Ingredients

  • 2 tins of tuna, drained
  • 1 garlic clove, crushed
  • 5-6 chestnut mushrooms, sliced
  • 1 green pepper, chopped
  • 200g whole wheat pasta, cooked
  • 200g mild Cheddar
  • 200ml milk
  • 3-4tbsp golden breadcrumbs
  • salt and pepper
  • a handful of fresh parsley, chopped
  • olive oil
  • Parmesan cheese for serving

Instructions

  1. Preheat the oven to 200°C.
  2. Heat a casserole with some olive oil and gently sweat the garlic, pepper & mushrooms for 5 minutes.
  3. Pour in the milk and add the tuna, pasta and cheese for another 5 minutes. Season with salt and pepper.
  4. Remove from the hob, sprinkle fresh parsley, top up with breadcrumbs and more cheese and cook in the oven for about 20 minutes.
  5. Enjoy!

Before my daughter started reception I thought I’d have a few spare hour a day. But it turned out I’m actually busier than I was when she was at nursery. I only got one and a half hour when the little one is napping. Then I have to wake her up and go collect her sister. So, yes, no time really but I try to work with whatever I have. 🙂 This is why it’s essential to cook quick, easy but tasty food too, especially during the week when we’re rushing all the time. Not that the weekends are calmer. Both kids have activities on Saturday and Sunday, so yes, there’s always something. But at least during the weekend I can spend some more time in my tiny kitchen and test and create some yummy stuff. 🙂

Kale & Smoked Salmon Pasta

This Kale & Smoked Salmon Pasta is one of these quick, easy and tasty recipes. I even used the Roasted Kale & Feta Cheese Dip so it was even easier than I thought. All I had to do was to boil the pasta. The kids are not very fond of kale, but they thought this was just pesto and I didn’t bother to tell them that it actually was my kale dip that they didn’t really fancy. 🙂

Ingredients

  • 250g pasta(your choice), cooked
  • 150g smoked salmon, shredded
  • 150g Roasted Kale & Feta Cheese Dip(recipe is on the blog)
  • 1tbsp olive oil
  • Parmesan cheese for serving

Instructions

  1. Drizzle the olive oil over the cooked pasta and mix well.
  2. Add the Roasted Kale & Feta Cheese Dip and mix thoroughly.
  3. Add the shredded smoked salmon, season with salt and pepper to taste and serve with some grated Parmesan cheese.
  4. Enjoy!

Happy Friday everyone!

The weekend is almost here and we can relax and enjoy the sun! 
Apparently it’s going to be really sunny and hot here in London so I intend to soak up every sunlight!

And to celebrate the weekend, I’m sharing simple but tasty recipe – Penne Pasta with Sun-dried tomatoes & King Prawn Flavour Tails.
I literally made this using the ingredients from my kitchen cupboard. 
The recipe is just delicious, on its own or may be as a side dish for your BBQ, it tastes really good!

Oh, btw, don’t be confused with the King Prawn Flavour Tails (as I was). These are not real prawns, they’re made of white fish protein and starch, kind of like the seafood sticks. Even though they’re not real, I like them, they just look really scrumptious!

Here’s what you need.

Ingredients:
  • 250g/8oz Penne,cooked
  • 200g/7oz King Prawn Flavour Tails
  • around 10 Sun-Dried Tomatoes
  • 2 garlic cloves, chopped
  • a fresh bunch of basil, chopped
  • grated Parmesan cheese for serving
  • olive oil
  • salt and pepper

Preparation:
  1. Heat a pan with olive oil and gently sweat the garlic for a few minutes.
  2. Add the King Prawn Flavour Tails and Sun-Dried Tomatoes and cook for about 7-8 minutes.
  3. Season with salt and pepper.
  4. Combine with the cooked pasta, add the chopped basil and some Parmesan cheese when serving.

Butternut Squash & Peas Pasta Salad

The recipe of the day is here and is another quick and easy fix that will leave you full for longer.
As I love butternut squash and I wanted to use the one I had at home to make a salad, here’s what happened – Squash Salad with Penne and Peas. 

One of my favourite squash salad is actually with feta cheese, you can find the recipe here. But it was time to try out something new and this new recipe really worked for me. I dressed the salad with fresh lemon juice, olive oil and salt so it added some extra freshness. And to finish it off, I grated some Parmesan cheese. It was really yummy and easy to make so I definitely recommend it if you’re struggling to find time to cook!

Here’s what you need.

Ingredients:
  • 400g/1lb butternut squash, sliced in cubes and cooked
  • 300g/10oz penne, cooked
  • 150g/5oz peas, cooked
  • fresh parsley for serving, if wished
  • Parmesan cheese for serving
For the dressing:
  • 1tbsp fresh lemon juice
  • 2tbsp olive oil
  • salt

Preparation:
  1. In a bowl, combine the salad ingredients together.
  2. In a separate bowl, mix the dressing ingredients together and pour over the salad.
  3. Mix well. Grate some Parmesan cheese, add the fresh parsley and serve.

Shrimp & Pea Basil Spaghetti

Just a quick and tasty post from me – Shrimp, Peas & Basil Spaghetti. It’s our last night’s dinner and all of us absolutely loved this simple but tasty recipe, even the little one (well she wasn’t that keen on the shrimp for some reason) so I thought I must share it with you today.
It only took me 5 minutes to cook the shrimp and peas and another 5-6 for the pasta. It’s  time -saving and super tasty.

Here’s what you need.

Ingredients:
  • 500g/1lb spaghetti
  • 300g/10oz shrimp
  • 1 cup peas, frozen
  • 1 cup double cream
  • 3 garlic cloves, crushed
  • 2tbsp olive oil
  • a handful of fresh basil
  • grated Parmesan, if wished
  • salt

Preparation:
  1. Cook the past according to the instructions on the back of the pack.
  2. Meanwhile, cook the shrimp and peas – heat a pan with olive oil and sweat the garlic for 3-4 minutes.
  3. Add the shrimp and peas and leave for 5 minutes. Pour in the cream and season with salt.
  4. Simmer for another 5 minutes and remove from the hob.
  5. Serve with fresh basil leaves and sprinkle some grated Parmesan, if wished.

Tip: Make sure you don’t overcook the shrimp, it only needs a few minutes till it gets pink!

Cheesy Meatballs in Sweet Tomato Sauce

One of our many family favourites are definitely meatballs.
I love making Swedish meatballs, oven baked meatballs and whatnot.
Yesterday, tough, I made meatballs in sweet and tangy tomato sauce, served over a bed of pasta and topped with melted cheese. Yummy!
I know I’m usually on the healthy side but I love to indulge myself, especially in this juicy explosion of flavors. It is totally worth it!

Here’s what you need.

Ingredients:
  • 500g/1lb minced pork
  • 1 egg
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2 slices of stale bread, soaked with water
  • 1tbsp olive oil
  • 1tsp nutmeg
  • 1tsp cumin
  • salt and pepper
  • grated cheese
  • fresh chopped parsley, if wished
For the Tomato sauce:
  • 500g/1lb passata
  • 500g/1lb tinned tomatoes
  • 2tbsp brown sugar
  • salt

Preparation:
  1. In a bowl, start mixing the minced pork with the seasoning, egg, bread, onions and garlic.
  2. Heat a pan with the olive oil, make the meatballs( I made about 8) and gently place them in the pan.
  3. Cook for about 10 minutes, making sure you turn them around constantly.
  4. Start adding the tomatoes and passata Season with salt and sugar and leave for another 10 minutes.
  5. Remove from the hob, sprinkle with some cheese and fresh parsley and serve.

Tip: I served them over a bed of pasta, but they’re good with rice, mash and noodles. It’s up to you!

Bacon & Orzo Stuffed Peppers with Mozzarella Cheese

Who doesn’t love stuffed peppers?
I can tell you for sure that we love these in our family. I love trying different combinations and posting them up here.
Last week I made these sweet red peppers with orzo, bacon and melted mozzarella.
They were so easy to make and so yummy.
And thanks to the orzo, quite filling. You can have them for starters, side dish or main, they are delicious anyhow.

Here’s what you need.

Ingredients:
  • 3-4 red peppers, sliced in halves
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 5 bacon strips, finely chopped
  • 150g/5oz orzo, cooked
  • 200g/7oz mozzarella, sliced
  • 1tsp dry thyme
  • 1tbsp olive oil
  • salt and pepper

Preparation:
  1. Preheat the oven to 200°C/394°F.
  2. Heat a pan with the olive oil and gently sweat the onions and garlic for a few minutes.
  3. Add the bacon and leave for another 5 minutes. Remove from the hob and combine with the orzo. Add salt and pepper and more olive oil, if wished.
  4. Fill the peppers with the orzo mixture and cook in the oven for about 15 minutes.
  5. Remove and top them up with the mozzarella slices. Place back in the oven for another 5 minutes or until the cheese is melted.
  6. Sprinkle the dry thyme and serve!

Pistachio Trofie Pasta

Here it is guys – one of my favourite pasta recipes.

It is one of the simplest but tastiest I think.
And I had only recently discovered it during my Florence trip.
Oh, how I love Italian food, and to be honest everything there tasted divine but it was different to the Italian food I’ve tried here. Well, I’m sure that those of you who’ve been there and tried the food will agree with me.
As it appears(at least in Tuscany), local people like their food really nice and fresh. They pick the best from what’s in season and use everything they can. And the result is amazing – simple but delicious homemade food.

As a matter of fact I loved the tripe I tried there. I know it’s not common here in the UK but if it was easier to find it here, I’m sure I would be making lots of tripe.

Anyone with a hint where can I find tripe in London, please contact me! I’m being serious!

So I tried to recreate the pistachio trofie and it worked. To me and my family, it tasted even better than the one we tried! Absolute success! And simplicity! Oh, and I’m so glad I found trofie in the local store. I know I could’ve made homemade but I will do that next time, I promise!


Here’s what you need for this insanely delicious pasta!

Ingredients:
  • 500g/1lb trofie
  • 200g/7oz pistachios
  • 100g/3.5oz basil
  • 3 garlic cloves, crushed
  • 1/2 olive oil
  • grated Parmesan or other cheese, if wished
  • salt

Preparation:
  1. To prepare the trofie – follow the instructions on the back of the pack. Make sure to make them al dente – just remove 3-4 minutes before the time stated on the pack.
  2. For the pistachio pesto – combine all the ingredients, apart from the pasta and blend to a smooth consistency. Stir in the pasta. If necessary, add more olive oil.
  3. Serve with some Parmesan on top.

Meatless Monday: Sun Dried Tomatoes & Spinach Gnocchi

I think one of the most favourite things to eat, for me, would be pasta.
There’s such a variety of shapes and flavours and it’s always generously topped with cheese – the ultimate comfort food.
Isn’t Italian cuisine the best! I really believe so.-:)
My Meatless Monday recipe of the day is Gnocchi with Spinach, Sun Dried Tomatoes and lots of cheese.
It’s a fast, easy and extremely tasty recipe to feed your family with.:)
These potato pieces are so yummy, you can actually have them with just a bit of olive oil and some cheese. But combined with the spinach and the sun dried tomatoes, the flavours are exceptional.

Here’s what you need.

Ingredients:
  • 500g/1lb gnocchi
  • 200g/7oz sun dried tomatoes
  • 200g/7oz spinach(frozen)
  • 200g/7oz Parmesan cheese, shredded
  • salt

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. To prepare the gnocchi – follow the instructions on the back of the pack.
  3. When ready, add the spinach in the hot water, leave for 5 minutes and drain the gnocchi.
  4. Transfer the gnocchi into a baking tray, add the sun dried tomatoes and mix well. Because the sun dried tomatoes I used were in olive oil, I just used it for the gnocchi and didn’t add any additional olive oil.
  5. Sprinkle the Parmesan cheese and bake in the oven for about 15 minutes or until ready.
Enjoy!

Tip: Make sure to remove the gnocchi from the hob a couple of minutes before the time stated on the pack.
