I’m pretty sure I’ve got more than that but I’ve chosen the ones that my family and me truly enjoy and make often.

Meatless Monday: Black Eyed Bean Curry

The curry series continue on Mummy’s Fast & Easy.
This time I’m sharing my black eyed bean curry I made the other day.
Black eyed beans are one of my favourite – apart from their health benefits, they’ve got sweet and nutty flavour you can’t resist.
They’re particularly good in soups, stews and curries.
This curry is really simple and budget friendly but tastes delicious – warm and earthy flavour – simply a bowl of pleasure.

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:
  • 300g/10oz black eyed beans
  • 1 carrot, sliced
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 cup coconut milk
  • 2tbsp curry paste
  • 4-5 cardamom pods
  • 1tbsp sunflower oil
  • 3 sprigs fresh coriander, chopped
  • salt
Preparation:
  1. Soak the beans the previous night.
  2. Wash them, cover with water and bring to a boil. Simmer for 15-20 minutes.
  3. Change the water and bring to a boil again. Add the onions, garlic and carrots. Cook for another 10 minutes.
  4. Stir in the curry paste, oil and coconut milk. Season with salt and the cardamom pods. 
  5. Simmer for another 15-20 minutes and remove from the hob.
  6. Sprinkle the fresh coriander and serve hot!

Tip: Why not make a bean curry, mixing different beans – like black eyed and canellini beans?:)

Friday’s here again!
For all of you who like nice and heart-warming homemade food, here it is – Pumpkin & Chicken Curry.
This is definitely one of my favourite comfort foods – it’s sweet and creamy and bursts with flavours.
I had made a butternut squash curry before but this one is slightly different.
I also added some chicken which made it even more filling.
But even if you don’t add the chicken, it’ll still taste amazing.
To serve it –  get some naan bread or simply get a side of coriander rice as I did.

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:
  • 300g/10oz pumpkin, deseeded and cut into cubes
  • 2 chicken breasts, cut into chunks
  • 1 onion chopped
  • 2 garlic cloves, crushed
  • 3tbsp curry paste
  • 1 cup coconut milk
  • 1 cup basmati rice
  • 4-5 cardamom seeds
  • 4-5 sprigs fresh coriander, chopped
  • 1tbsp olive oil
  • salt
Mummy’s Fast & Easy

Preparation:
  1. Heat a pan with the olive oil and sweat the onions and garlic. Add the pumpkin and cover with water.
  2. Cook for about 10 minutes and add the chicken. Stir in the curry paste and drop the cardamom seeds. Pour in the coconut milk.
  3. Season with salt and leave on the hob for another 20 minutes.
  4. To make the rice, place in a pot and cover with water. Bring to a boil and cook until ready.
  5. Sprinkle with coriander and serve!
Enjoy!

Tip: Have you tried curry with mashed potatoes instead of rice? You should because it’s really good!

Simple Butternut Squash Curry

I absolutely love it! 
It’s one of my favourite comfort foods!:-)
Most of the time I have it with chicken so I decided I need to make a veggie curry.
I used butternut squash and coconut milk, nothing really special.
And of course, some curry powder, lots of it actually.
You just need a side of rice and voila – you’ve got a super delicious veggie curry in just minutes.

Here’s the list with ingredients.

Ingredients:

  • 400g butternut squash, cut into cubes
  • 1 onion, chopped
  • 375ml coconut milk
  • 4-5 tbsp curry powder
  • 2tbsp sunflower oil
  • salt

Preparation:

  1. Heat a pot with the oil and add the squash and onion.
  2. Pour over some water to cover them and simmer for about15-20 minutes or until tender.
  3. Add the curry powder. Stir well.
  4. Pour in the coconut milk and stir again.
  5. Season with salt and serve hot with a side of rice.
Enjoy!
Tip: You can add chicken, it really goes well with the butternut squash.
