Beef Breakfast Wraps

They’re one of those breakfast recipes that you can have them all day long – scrambled eggs, sweet red peppers, ripe avocado and beef. All that topped with lots of cheese and wrapped up. Believe me, you’re going to love these wraps.

I used shop bought cooked beef, which saved a lot of time. You can use whatever you’d like. You might have any leftovers or simply choose a small amount of cooked meat from your local shop.

I also added a tiny drop of sour cream to make the thing even juicier. I do love sour cream, I know it’s not the healthiest thing ever but the key is in moderation, I guess. ๐Ÿ™‚

For some reason,ย I’ve been making lots of wraps/burritos recently. Not only they’re our family favourite but they take a few minutes only (which make them mummy’s favourites too), if you’ve got all the ingredients prepped and cooked in advance. And the combinations you can try are numerous. Breakfast, lunch or dinner, fish, meat or simply vegetarian, there are so many delicious way to make these to your taste. So that’s a good reason, actually. ๐Ÿ™‚

I probably should try using some sweet and sour fillings. That would be nice, wouldn’t it. ๐Ÿ™‚ Like sweet and sour chicken with some veggies or rice. Nom, nom, nom..

The bottom line is, get your apron on and start cooking! ๐Ÿ™‚

Oh, yes, I forgot to mention, there are some black olives too. I actually added the olives in the scramble eggs, I find the combination very yummy. ๐Ÿ™‚ But this is not necessary at all, so if for some reason you don’t fancy olives, just don’t add them. The eggs were cooked in advance so all I had to do was to make the wraps which took me 5 minutes. Seriously, I’m really good at wrapping these things. ๐Ÿ™‚

We actually couldn’t finish them all, which was quite surprising, just one of the wraps was left for lunch for the next day.

My kids actually unwrap everything and pick the bits and pieces they like. But as long as they have some food, this is fine by me. ๐Ÿ™‚

Needless to say, I had mine with lots of hot sauce. ๐Ÿ™‚ I simply can’t help it.

Here’s how to make these gorgeous Beef Breakfast Wraps.

Beef Breakfast Wraps
 
Ingredients
  • 4 flour tortillas
  • 300g beef, cooked and shredded
  • 200g Monterey Jack cheese, grated
  • 3 grilled red peppers, sliced thinly
  • 1 ripe avocado, sliced
  • 5 scrambled eggs(cooked in advance)
  • 4tbsp sour cream
  • fresh coriander leaves
Instructions
  1. Heat up the wrap for 2-3 minutes in the oven or microwave.
  2. Basically, make sure to divide the ingredients equally between the wraps.
  3. Add the scrambled eggs and beef, then peppers and cheese.
  4. Finish off with some sour cream and fresh coriander leaves and close the wraps.
  5. Serve with some hot sauce! Or lots of it! ๐Ÿ™‚

Happy Wednesday guys! The recipe of the day is quick and easy Stuffed Peppers with Quinoa and Beef.

It’s a delicious and very satisfying meal. ย Stuffed peppers have become one of our family’s favourite recipes. It seems theyย are always popular no matter what you stuff them with. ๐Ÿ™‚ I usually make them with beef, pork and rice but this time instead of the rice I used quinoa. There was definitely a difference in the taste. You know, how quinoa adds a but nuttiness to the food. Well, it made the peppers really tasty and healthy.

The recipe is really basic and requires only a few ingredients but the taste is amazing. I love this version but if you’re a vegetarian or simply prefer a lighter version, use quinoa only or check below for some yummy vegetarian Stuffed Peppers recipes. I particularly like the ones with the cheese. Cheese is always good, the more, the better ๐Ÿ™‚ And not to mention, they’re actually quite light and healthy so if you watch your diet, this is a good option. Probably without the Parmesan cheese though ๐Ÿ™‚

Here’s what you need for these quick and easy Stuffed Peppers.

Ingredients:

  • 5-6 peppers, cut in halves
  • 200g quinoa, cooked
  • 300g beef mince
  • 1 small carrot, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp cumin
  • 2tsp paprika
  • 1tsp black pepper
  • salt to taste
  • 1tbsp olive oil
  • Parmesan cheese for sprinkling

Preparation:

  1. Preheat the oven to 200ยฐC.
  2. Heat a pan with the olive oil and gently sweat the onion, garlic and carrots for about 10 minutes. Add a tiny bit of water so they’re not frying.
  3. Add the beef mince and quinoa and season with the spices. Stir the mixture well and cook for about 20 minutes or until ready, stirring occasionally. If necessary, add more water.
  4. Grease a baking tray and arrange the peppers on top. Start filling them with the beef and quinoa mixture. Place in the oven and leave for about 20 minutes.
  5. Sprinkle some Parmesan cheese on top when serving.

Why not improvise and mix things up a little bit? You can use some leftover rice or simply cheese and veggies. That’s what I like in making Stuffed Peppers. You can basically put whatever you’d like and it’ll still taste good. But the ingredients that always work are definitely cheese, bacon, beef, pork, rice and quinoa. I mean, I’ve tried these and I loved them all. But there are much more to try, right! ๐Ÿ™‚

Parmesan Cheese & Parsley Meatballs

As the weather is getting colder and colder by the day we need some good comfort food to warm our souls! At least I need it:-) One of my most favourite comfort food are Meatballs. Now, there are different meatballs recipes which me and my family love but this one seems to be our favourite so far – Parmesan Meatballs. As you can tell, they’re very cheesy, very herby ( I love adding fresh herbs to all of my recipes, which by the way is getting really difficult as the snails in my garden feast on my herbs) and of course very meaty. I used half and half, beef and pork. I find it this way, the meatballs are not too dry or too greasy, they’re just perfect.

The only part I was not too keen on was the cooking. I do not like frying but luckily, it wasn’t long before they were cooked so it was all good. Actually, I think the prep time is longer than the actual cooking. Not that it takes long, the recipe is very simple, quick and easy to make. And the result is delicious meatballs – crispy on the outside, soft and cheesy on the inside.

Throw some roast veggies in the oven or a salad (potato salad goes really well with them) and have a bon apetit!

Here are the ingredients you need to make this recipe.

Ingredients:

  • 500g/1lb mince meat(50/50 pork and beef)
  • 1 onion, chopped
  • 1 egg
  • 150g/5oz Parmesan cheese, cut into small cubes
  • 3tbsp golden breadcrumbs
  • 1tsp black pepper
  • 1tsp cumin
  • salt
  • a bunch of fresh parsley, chopped
  • sunflower oil for frying

Preparation:

  1. In a bowl, combine the meat, onion, parsley(add as much as you’d like), breadcrumbs and seasoning. Mix well and refrigerate for 20 minutes.
  2. Combine the Parmesan cubes with the mixture and start making the meatballs.
  3. Cook in a heated pan with some sunflower oil, turning them constantly for about 15 minutes, or until they’re done. It really depends on how big you’re gonna make them and whether you use gas or electricity. Either way, they’re ready when they turn golden. To be on the safe side, cut the first on in half and check whether it’s cooked. If it’s done, finish it and continue cooking the rest of them!:-)

The recipe of the day is perfect for a relaxing and lazy Sunday – Succulent Meatballs in Sweet Tomato Sauce with Parmesan & Mozzarella Cheese!
It’s so comforting and so delicious, this is definitely one of my (many) family favourites!
And it might not look that simple, but believe me it is, and the cheese, oh the cheese, puts these meatballs in a completely new level.

Here’s what you need.

Ingredients:
  • 800g/2lbs beef mince
  • 400g/1lb passata
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp nutmeg
  • 1tsp cinnamon
  • 1 egg
  • 150g/5oz breadcrumbs
  • 400g/1lb Mozzarella, sliced
  • 1tbsp brown sugar
  • a handful of fresh basil leaves
  • Parmesan cheese for serving
  • salt and pepper
  • olive oil

Preparation:
  1. Preheat the oven to 200ยฐC/392ยฐF.
  2. In a bowl, combine the beef mince, seasoning, breadcrumbs, onion and garlic, and add the egg. Mix everything together and make small balls.
  3. In a heated pan with olive oil, gently sweat the meatballs for about 20 minutes.ย 
  4. Add the passata, mixed with the brown sugar, and leave on the hob for another 15 minutes.
  5. Remove from the hob, add the basil leaves and Mozzarella cheese. Place in the oven and cook for about 10 minutes.
  6. Grate some Parmesan cheese on top and serve with some garlic bread.

Leftover Beef & Pear Rocket Salad

Today’s recipe of the day is amazing Beef salad with pears, raisins and rocket. It’s bursting with different flavours – ripe and sweet pear, nutty rocket and of course beef. For some reason, I felt his salad was quite a seasonal, probably because of the ripe pears. I used beef leftovers I had from a few days ago but chicken, turkey or even pork will work just perfectly fine.
This is a great way not to waste your food! Just be creative, browse your fridge and invent something quick, easy and delicious!

Here’s what you need.

Ingredients:
  • 200g/7oz beef, sliced(or any other leftover meat)
  • 150g/5oz rocket
  • 2 ripe pears, sliced
  • a handful of raisins
For the dressing:
  • 2tbsp olive oil
  • 1tsp lemon juice
  • salt

Preparation:
  1. Mix the dressing ingredients together and pour over the rocket.
  2. Arrange the beef slices on top and then the pears. Mix well.
  3. Finish up with a handful of raisins.

Easy Steak Fajitas

Happy Thursday! Just one more way and it’s the weekend!
And I’ve planned a busy one!

The recipe of the day is another family favourite, ready in just a few minutes – homemade steak fajitas! There’s no way you won’t love these – they’re tasty, healthy and really easy to make.
I added fresh chillies for some extra heat but if you prefer skip the extra heat.

Here’s what you need.

Ingredients:
  • 5-6 corn tortilla wraps
  • 400g/1lb beef, cooked as you like it
  • mixed peppers and onions, cooked
  • 3-4 fresh chillies, chopped
  • 1/2 cup of sour cream
  • 2 avocados, sliced
  • 2 limes

Preparation:
  1. Start preparing the fajitas – add all the ingredients on the tortilla wrap, wrap it up and serve!

Stuffed Eggplants with Beef & Cheese

I can’t believe how fast the days go by!
It feels like Monday but it’s already Wednesday (night). ย A toddler can definitely keep you very very busy. Not that I’m complaining.
Today’s recipe is a new one for me, meaning I made it for the first time the other day but it turned out really ย yummy and all the eggplants you see in the pictures were gone just for dinner.
It is really easy and delicious recipe and I’m sure your family will love it so if you haven’t tried it yet, please do!

Here’s what you need.

Ingredients:
  • 3 eggplants, cut in halves and the inside removed
  • 1/2 onion, chopped
  • 2 garlic cloves, crushed
  • 1 carrot, chopped
  • 400g/1lb beef, minced
  • 1 cup tomato puree
  • 1tsp nutmeg
  • 1tsp cumin
  • 1tsp paprika
  • salt and peppers
  • grated cheese, if wished
  • fresh parsley, if wished

Preparation:
  1. Preheat the oven to 200ยฐC/394ยฐF.
  2. Place the eggplants on a baking tray covered with baking paper and put in the oven.
  3. Meanwhile prepare the filling – heat a pan with a bit of olive oil and sweat the onion, garlic, carrot and the insides of the eggplants(finely chopped).
  4. Leave for 5 minutes and add the beef. Season with cumin, nutmeg, paprika, salt and pepper and stir well. Add the tomato puree and leave for another 5 minutes.
  5. Remove the eggplants from the oven, stuff them with the beef filling and put back in the oven for another 10 minutes.
  6. Sprinkle some grated cheese and fresh parsley, if wished.

Chickpea Chilli with Couscous

I’ve been trying to swap the white rice recently so I’ve been using a whole lot of different grains, couscous, seeds and whatnot.
I do like white rice, but when possible and tasty I like to use something else (healthier).
So this is what happened the other day – comforting and heart-warming chilli with beans, chickpeas and mix of pork and beef mince(oh, and lots of spices), served on a bed of couscous generously sprinkled with fresh parsley.
All you need is a big spoon to dig in.

Here’s what you need.

Ingredients:
  • 1 cup red beans, cooked
  • 1 cup chickpeas, cooked
  • 300g/10 oz beef and pork mince (mixed)
  • 300g/10z tinned tomatoes
  • 1 onion, chopped
  • 1tbsp chilli flakes
  • 1tbsp cumin
  • 1tbsp paprika
  • 1tbsp dry thyme
  • 1tsp black pepper
  • salt
  • 2tbsp oilย 
  • 300g/10oz couscous, cooked
  • a bunch of fresh parsley, choppedย

Preparation:
  1. In a heated pan, sweat the onions in the oil for about 5 minutes and add the mince meat.
  2. Season with all the spices, mix well and leave for about 15 minutes.ย 
  3. Add the chickpeas, beans and tomatoes and leave for another 10 minutes.
  4. Remove from the hob and serve on a bed of couscous and sprinkle with fresh parsley.
Enjoy!

Tip: Don’t worry if you can’t handle the chilli, just omit it.

Easy Swedish Meatballs

If that’s the case, you don’t have to do it anymore.
You can easily make amazingly delicious Swedish Meatballs at the comfort of your own home in just a few easy steps.
This is what I’m sharing with you today, and believe me, that recipe is a winner.
To accompany my meatballs I made some tasty mashed potatoes but the meatballs would go really well with rice too. So, whatever you prefer, let’s get cooking.

Here’s what you need.

Ingredients:
  • 500g/1lb beef and pork minced meat
  • 1 onion, chopped
  • 1 egg
  • 1tbsp nutmeg
  • 1 sliced of bread, water soaked
  • a bunch of fresh parsley, chopped
  • a knob of butter
  • 4tbsp flour
  • 1 cube beef bullion
  • salt

Preparation:
  1. In a bowl, mix the minced meat, egg, bread, onion, salt and nutmeg.
  2. Make small meatballs.
  3. Heat a frying pan with a bit of oil and gently cook the meatballs for about 10 minutes turning them over constantly.
  4. Remove from the pan and start making the gravy.
  5. Heat the pan with the butter and add the flour and beef cube. Pour in about 3 cups of water and mix until the gravy is nice and smooth. Add the meatballs back in the pan and cook for another 10 minutes.
  6. Remove from the hob and sprinkle the fresh parsley.
  7. Serve with mashed potatoes or rice.
