It was actually snowing here yesterday and you can’t imagine how excited we all were. It’s been a good few years since the last time it snowed properly so that was quite a festive day we had.Β πŸ˜€Β Well, the snow managed to stay for a few hours only but still better than nothing. And today we’re back to normal – it’s been raining all day, the lights in the house are on since morning (sometimes I wonder whether it’s afternoon or evening). If only it could snow at Christmas and New Year’s Eve!Β πŸ™‚Β Let’s get back to the recipe now..

I used beef and pork mince, corn, cheese, sour cream, tomato sauce and some spices. I’d definitely have used some beans too but I didn’t have any at the house. So if you could use any, I’d say go for some pinto beans. The taco soup was cooked in my favorite cast iron casserole. Did I guys tell you about it? I’m pretty sure I did, but honestly, I simply love it.Β πŸ˜†Β I served it with tortilla chips, sour cream, shredded cheese and some hot jalapeno peppers. I actually had lots of tortilla chips with it as I dipped them in the soup. It was soo yummy! Make sure to serve it hot and if you opt in for the spicy stuff you’ll definitely warm up if not sweating.Β πŸ™ˆ

Ingredients

  • 400g beef & pork mince
  • 400ml passata
  • 200g tinned corn
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp cumin
  • 1tbsp paprika
  • 1tbsp taco seasoning
  • salt and pepper to taste
  • Monterey Jack cheese, shredded, for serving
  • 2-3 sliced jalapenos, for serving
  • tortilla chips for serving
  • sour cream for serving
  • 1tbsp olive oil

Instructions

  1. Heat a casserole with the olive oil and sweat the onions and garlic for five minutes. Add the beef & pork mince, season it with the spices and mix well. Add a cup of water and the passata. Stir in the corn too.
  2. Leave on the hob for about half an hour.
  3. Remove and serve with some tortilla chips, chopped jalapenos, sour cream and shredded cheese.
  4. Enjoy!

I’ve recently got a new cast iron casserole and I’ve been making lots of one pot dishes and casserole. I’m kind of addicted to it but it’s so much better than my previous ones in every single way – better quality and better looking. And the colour as you can see feels so Christmassy (at least to meΒ πŸ˜†Β ) i honestly can’t leave it. And the food prepared in this cast iron casserole is simply gorgeous. Not only it’s super easy to make a meal – literally throwing ingredients and then leave it to the oven, but it tastes amazing, I think it’s got something to do with the way the heat is spreading. Anyway, this is not a paid advertising as it may lookΒ πŸ˜‚Β I just wanted to let you know how happy I feel about my new cast iron casserole. So let’s move to the recipe now..

Delicious One Pot Lasagna

This is the ultimate comfort food for me, just perfect for this weather, layers of cheese, tasty tomato sauce and mince meat. Simply add some fresh garlic bread when serving and enjoy! I used Mozzarella, ParmesanΒ  and Mascarpone but you can use anything you fancy really as long as it’s sweet and mild. I was actually thinking to dip my tortilla cheese in it but didn’t have any so that’s something I’d definitely try next time I’m making this deliciousness. I’m sure it’ll be super tasty. Ingredients

  • 1kg mince meat(beef & pork)
  • 800ml passta
  • 3 garlic cloves, crushed
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • lasagna sheets
  • 200g Mozzarella, grated
  • 500g Mascarpone
  • 200g Parmesan, grated
  • 1tbsp cumin
  • 1tbsp oregano
  • 1tbsp paprika
  • salt and pepper
  • olive oil

Instructions

  1. Preheat the oven to 190Β°C.
  2. Sweat the onion and garlic for a few minutes. Add the celery, mince meat and seasoning. Stir well, pour in the passata and leave for about15 minutes.
  3. Remove from the hob. Start arranging the lasagna, start with the mince meat mixture, add some lasagna sheets, then a layer of the Mozzarella, Parmesan and Mascarpone cheese. Repeat.
  4. Place in the oven and cook for about an hour. Serve with some garlic bread.
  5. Enjoy!

OK, back to the recipe now..I added some fresh salad, tomato, mayo and of course, cheese. πŸ™‚ This simple sandwich turned into perfection. I easily had a coupe of these, they’re actually smaller than they look. πŸ˜€ Also, I added lots of hot sauce. Seriously, it was one of the best brunches ever. πŸ™‚

I love the fact that this is so quick and simple to make, the only cooking is actually scrambling the eggs but it takes a few minutes too. So, the Brisket & Eggs Sandwich is perfect for a lazy morning/brunch and not only. I honestly can have it for lunch & dinner too. Why not?Β πŸ™‚

The combination of sweet Brioche bun, mild cheese & salty brisket works so well. Just add some crunchy salad and enjoy! I didn’t make any sides for these sandwiches but chips will be great, or even sweet potatoes.

Ingredients

  • 8 slices of beef brisket
  • 1 tomato, sliced
  • 5 eggs, scrambled
  • 8 slices of Mild cheddar
  • 4 Brioche buns
  • 4tbsp mayo
  • a handful of fresh mixed leaf salad

Instructions

  1. To build the sandwiches, add two slices of the brisket and then some of the eggs. Place two slices of the cheese on top. Melt in the oven for a couple of minutes. Top up the sandwich with some fresh mixed leaf salad. Add a spoon of mayo on the top brioche bun and close the sandwich. Repeat with the reset of the buns.
  2. Enjoy!

Beef & Pork Stuffed Zucchini

Happy Friday! Today’s recipe is Stuffed Zucchini – one of my favourite stuffed zucchini recipes – there’s pork and beef mince, spices, fresh herbs and of course, melted cheese. πŸ™‚

Stuffed Zucchini

I absolutely love zucchini in every way possible. For some reason, I do make lots of zucchini recipes this time of the year ( I guess because they’re in season, duh). Grilled, steamed, fried or even raw they are just delicious.

And in this particular recipe, they’re simply amazing. I stuffed them with beef and pork mince that was flavoured with some garlic, tomato and spices. Then added some cheese on top for a perfect finish. They tasted so fresh and yummy so no wonder they were gone in a few minutes.

Also, this recipe is perfect for when you’re quite busy and don’t have that much time to spend in the kitchen. In my case, it took me just a few minutes as I used the meat from a pasta recipe I had made the previous day. Basically, the only thing I did was to fill the zucchini with the mixture and cook them. How not to love recipes like these – they save you so much time but at the same time are so tasty! πŸ™‚

Here’s how to make the Beef & Pork Stuffed Zucchini

Ingredients

  • 2-3 zucchini (courgettes)
  • 300g beef and pork mince meat (mixed)
  • 150g Cheddar cheese, grated
  • 1 garlic clove, crushed
  • 1/2 onion, chopped
  • 2tbsp tomato passata
  • 1tsp cumin
  • 1tsp black pepper
  • salt
  • 1tbsp olive oil
  • a bunch of fresh parsley, chopped

Instructions

  1. Preheat the oven to 200Β°C.
  2. Cut the zucchini in halves and scoop out the inside part, then chopped it up.
  3. Heat a pan with olive oil and sweat the garlic, onion and the inside part of the zucchini for five minutes. Add the minced meat, passata and seasonings and mix well. Cook for about 10 minutes then leave on a side to cool down.
  4. Fill the zucchini halves with the mixture and place in the oven for about 15 minutes. Add the cheese and leave for another 2-3 minutes so the cheese can melt.
  5. Serve with some extra parsley on top.

They’re one of those breakfast recipes that you can have them all day long – scrambled eggs, sweet red peppers, ripe avocado and beef. All that topped with lots of cheese and wrapped up. Believe me, you’re going to love these wraps.

I used shop bought cooked beef, which saved a lot of time. You can use whatever you’d like. You might have any leftovers or simply choose a small amount of cooked meat from your local shop.

I also added a tiny drop of sour cream to make the thing even juicier. I do love sour cream, I know it’s not the healthiest thing ever but the key is in moderation, I guess. πŸ™‚

For some reason,Β I’ve been making lots of wraps/burritos recently. Not only they’re our family favourite but they take a few minutes only (which make them mummy’s favourites too), if you’ve got all the ingredients prepped and cooked in advance. And the combinations you can try are numerous. Breakfast, lunch or dinner, fish, meat or simply vegetarian, there are so many delicious way to make these to your taste. So that’s a good reason, actually. πŸ™‚

I probably should try using some sweet and sour fillings. That would be nice, wouldn’t it. πŸ™‚ Like sweet and sour chicken with some veggies or rice. Nom, nom, nom..

The bottom line is, get your apron on and start cooking! πŸ™‚

Beef Breakfast Wraps

Oh, yes, I forgot to mention, there are some black olives too. I actually added the olives in the scramble eggs, I find the combination very yummy. πŸ™‚ But this is not necessary at all, so if for some reason you don’t fancy olives, just don’t add them. The eggs were cooked in advance so all I had to do was to make the wraps which took me 5 minutes. Seriously, I’m really good at wrapping these things. πŸ™‚

We actually couldn’t finish them all, which was quite surprising, just one of the wraps was left for lunch for the next day.

My kids actually unwrap everything and pick the bits and pieces they like. But as long as they have some food, this is fine by me. πŸ™‚

Needless to say, I had mine with lots of hot sauce. πŸ™‚ I simply can’t help it.

Here’s how to make these gorgeous Beef Breakfast Wraps.

Ingredients
  • 4 flour tortillas
  • 300g beef, cooked and shredded
  • 200g Monterey Jack cheese, grated
  • 3 grilled red peppers, sliced thinly
  • 1 ripe avocado, sliced
  • 5 scrambled eggs(cooked in advance)
  • 4tbsp sour cream
  • fresh coriander leaves
Instructions
  1. Heat up the wrap for 2-3 minutes in the oven or microwave.
  2. Basically, make sure to divide the ingredients equally between the wraps.
  3. Add the scrambled eggs and beef, then peppers and cheese.
  4. Finish off with some sour cream and fresh coriander leaves and close the wraps.
  5. Serve with some hot sauce! Or lots of it! πŸ™‚

Happy Wednesday guys! The recipe of the day is quick and easy Stuffed Peppers with Quinoa and Beef.

It’s a delicious and very satisfying meal. Β Stuffed peppers have become one of our family’s favourite recipes. It seems theyΒ are always popular no matter what you stuff them with. πŸ™‚ I usually make them with beef, pork and rice but this time instead of the rice I used quinoa. There was definitely a difference in the taste. You know, how quinoa adds a but nuttiness to the food. Well, it made the peppers really tasty and healthy.

The recipe is really basic and requires only a few ingredients but the taste is amazing. I love this version but if you’re a vegetarian or simply prefer a lighter version, use quinoa only or check below for some yummy vegetarian Stuffed Peppers recipes. I particularly like the ones with the cheese. Cheese is always good, the more, the better πŸ™‚ And not to mention, they’re actually quite light and healthy so if you watch your diet, this is a good option. Probably without the Parmesan cheese though πŸ™‚

Here’s what you need for these quick and easy Stuffed Peppers.

Ingredients:

  • 5-6 peppers, cut in halves
  • 200g quinoa, cooked
  • 300g beef mince
  • 1 small carrot, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp cumin
  • 2tsp paprika
  • 1tsp black pepper
  • salt to taste
  • 1tbsp olive oil
  • Parmesan cheese for sprinkling

Preparation:

  1. Preheat the oven to 200Β°C.
  2. Heat a pan with the olive oil and gently sweat the onion, garlic and carrots for about 10 minutes. Add a tiny bit of water so they’re not frying.
  3. Add the beef mince and quinoa and season with the spices. Stir the mixture well and cook for about 20 minutes or until ready, stirring occasionally. If necessary, add more water.
  4. Grease a baking tray and arrange the peppers on top. Start filling them with the beef and quinoa mixture. Place in the oven and leave for about 20 minutes.
  5. Sprinkle some Parmesan cheese on top when serving.

You can basically put whatever you’d like and it’ll still taste good. But the ingredients that always work are definitely cheese, bacon, beef, pork, rice and quinoa. I mean, I’ve tried these and I loved them all. But there are much more to try, right! πŸ™‚

Parmesan Cheese & Parsley Meatballs

As the weather is getting colder and colder by the day we need some good comfort food to warm our souls! At least I need it:-) One of my most favourite comfort food are Meatballs. Now, there are different meatballs recipes which me and my family love but this one seems to be our favourite so far – Parmesan Meatballs. As you can tell, they’re very cheesy, very herby ( I love adding fresh herbs to all of my recipes, which by the way is getting really difficult as the snails in my garden feast on my herbs) and of course very meaty. I used half and half, beef and pork. I find it this way, the meatballs are not too dry or too greasy, they’re just perfect.

The only part I was not too keen on was the cooking. I do not like frying but luckily, it wasn’t long before they were cooked so it was all good. Actually, I think the prep time is longer than the actual cooking. Not that it takes long, the recipe is very simple, quick and easy to make. And the result is delicious meatballs – crispy on the outside, soft and cheesy on the inside.

Throw some roast veggies in the oven or a salad (potato salad goes really well with them) and have a bon apetit!

Here are the ingredients you need to make this recipe.

Ingredients:

  • 500g/1lb mince meat(50/50 pork and beef)
  • 1 onion, chopped
  • 1 egg
  • 150g/5oz Parmesan cheese, cut into small cubes
  • 3tbsp golden breadcrumbs
  • 1tsp black pepper
  • 1tsp cumin
  • salt
  • a bunch of fresh parsley, chopped
  • sunflower oil for frying

Preparation:

  1. In a bowl, combine the meat, onion, parsley(add as much as you’d like), breadcrumbs and seasoning. Mix well and refrigerate for 20 minutes.
  2. Combine the Parmesan cubes with the mixture and start making the meatballs.
  3. Cook in a heated pan with some sunflower oil, turning them constantly for about 15 minutes, or until they’re done. It really depends on how big you’re gonna make them and whether you use gas or electricity. Either way, they’re ready when they turn golden. To be on the safe side, cut the first on in half and check whether it’s cooked. If it’s done, finish it and continue cooking the rest of them!:-)

And it might not look that simple, but believe me it is, and the cheese, oh the cheese, puts these meatballs in a completely new level.

Here’s what you need.

Ingredients:
  • 800g/2lbs beef mince
  • 400g/1lb passata
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp nutmeg
  • 1tsp cinnamon
  • 1 egg
  • 150g/5oz breadcrumbs
  • 400g/1lb Mozzarella, sliced
  • 1tbsp brown sugar
  • a handful of fresh basil leaves
  • Parmesan cheese for serving
  • salt and pepper
  • olive oil

Preparation:
  1. Preheat the oven to 200Β°C/392Β°F.
  2. In a bowl, combine the beef mince, seasoning, breadcrumbs, onion and garlic, and add the egg. Mix everything together and make small balls.
  3. In a heated pan with olive oil, gently sweat the meatballs for about 20 minutes.Β 
  4. Add the passata, mixed with the brown sugar, and leave on the hob for another 15 minutes.
  5. Remove from the hob, add the basil leaves and Mozzarella cheese. Place in the oven and cook for about 10 minutes.
  6. Grate some Parmesan cheese on top and serve with some garlic bread.

Leftover Beef & Pear Rocket Salad

Today’s recipe of the day is amazing Beef salad with pears, raisins and rocket. It’s bursting with different flavours – ripe and sweet pear, nutty rocket and of course beef. For some reason, I felt his salad was quite a seasonal, probably because of the ripe pears. I used beef leftovers I had from a few days ago but chicken, turkey or even pork will work just perfectly fine.
This is a great way not to waste your food! Just be creative, browse your fridge and invent something quick, easy and delicious!

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz beef, sliced(or any other leftover meat)
  • 150g/5oz rocket
  • 2 ripe pears, sliced
  • a handful of raisins
For the dressing:
  • 2tbsp olive oil
  • 1tsp lemon juice
  • salt

Preparation:
  1. Mix the dressing ingredients together and pour over the rocket.
  2. Arrange the beef slices on top and then the pears. Mix well.
  3. Finish up with a handful of raisins.
