Mocha Christmas Tree Muffins

Happy Saturday all! Today’s recipe is Mocha Christmas Tree Muffins – and let the festive season begins! ๐Ÿ˜€

Mocha Christmas Tree Muffins

As you can see these Mocha Christmas Tree Muffins are loaded with chocolate, like lots of it so that’s enough of a good reason for me to make them this festive season. They’re one of the simplest muffins I’ve ever made. It only takes 15 minutes for them to cook. I think it actually takes more time to make them look like Christmas trees. I used some desiccated coconut hoping to make them look like snowy Christmas trees. ๐Ÿ™‚

It’s a great way t get your kids involved and leave them to decorate the muffins. They probably won’t look like Christmas trees at the end but that’s ok. ๐Ÿ˜€ This reminds me, I should make some Christmas cookies as my kids love decorating them.

Mocha Christmas Tree Muffins

No matter how healthy we’re trying to be, it’s this time of the year again and there’s always something sweet and naughty to try so that’s a tricky task. Seriously, what’s Christmas without some indulgent food (ok, probably too much of it). But hey, there’s January, it’s usually when people make their New Year’s resolutions so it’s a good time to get back in shape. ๐Ÿ™‚ Till then, let’s just try to find a healthy balance.

White Chocolate & Caramelized Pecans Pumpkin Bread

Happy Sunday all! Today’s recipe – White Chocolate & Caramelized Pecan Pumpkin Bread – crunchy, chocolatey and absolutely delicious!

White Chocolate & Caramelized Pecans Pumpkin Bread

This Pumpkin Bread was definitely the best I’ve ever made and ever tried. My kids just loved it! But who wouldn’t with all this white chocolate dripping and on top of that caramelized pecans! I am honestly drooling now! ๐Ÿ™‚

White Chocolate & Caramelized Pecans Pumpkin Bread

Also, with all of that Halloween madness and pumpkin carving in particular it is a great way to use up your pumpkin pulp. I hate wasting any food so I always save it and make something tasty. I actually have a big bowl of pumpkin pulp in the fridge at the moment due to the carving yesterday. ๐Ÿ™‚ I am thinking of a thick pumpkin soup and a pumpkin chocolate cake I’ve been meaning to make for a long time ๐Ÿ’ก . So fingers crossed and my plan works I’ll hopefully share the recipe with you next week. ๐Ÿ™‚

White Chocolate & Caramelized Pecans Pumpkin Bread

Now back to this moreish White Chocolate & Caramelized Pecans Pumpkin Bread. Apart from the white chocolate and pecan, I used pumpkin (obviously ๐Ÿ™‚ ), flour, eggs and a bit of sugar. The recipe is really simple! I would normally have my pumpkin bread with a bit of butter but this one doesn’t need any (hello, just look at the toppings) ๐Ÿ™‚ Needless to say, it was gone quickly. We even had some leftovers for breakfast the next morning.

Mini Kale Pizzas

Happy Thursday guys! Today’s recipe is Mini Kale Pizzas – loaded with veggies & Mozzarella cheese, these green pizzas are perfect for a healthy snack on the go.

Mini Kale Pizzas

Who says pizza can’t be healthy? I recently read an amazing article discussing 26 Science-backed health benefits of kale that I didn’t even know existed. You can find the article hereย https://healthyline.com/health-benefits-of-kale/

Mini Kale Pizzas

Just look at this gooey centre! I promise the Mozzarella cheese is not that much as it looks. There are lots of other veggies like red peppers, olives, sun-dried tomatoes. Also, I used corn flour (no particular reason, it’s just I find it tastier than the white one). The recipe is super simple to make and at the same time tastes delicious! Not to mention the benefits of kale.

Tuna Pasta Casserole

Happy Tuesday guys! Today’s recipe is Tuna Pasta Casserole – very simple and yet delicious dish!

Tuna Pasta Casserole

It uses a few basic ingredients which I’m sure most of you can find in the kitchen cupboard – tinned tuna, pasta, cheese. There’s also peppers & mushrooms and that’s pretty much it. I used whole wheat pasta, in case you wonder and topped the whole dish with some homemade buttery breadcrumbs with more cheese, of course. If wished, add some more Parmesan cheese when serving. Who wouldn’t like some extra cheese? I know I wouldn’t mind at all. ๐Ÿ™‚

A quick tip – if you’d rather have an even creamier pasta dish go for double cream instead of the milk.

Tuna Pasta Casserole

I have seen the original recipe in one of my cooking books but I’ve changed a few things so it’s not a complete copycat. ๐Ÿ™‚ It’s more like a version of it, my version. ๐Ÿ™‚

This Pasta dish is just perfect as a dinner during the week. It literally takes minutes to cook, say about 20 in the oven and about 10 on the hob, so in roughly half an hour you’ve got rich, comforting and absolutely delicious Tuna Pasta Casserole.

Tuna Pasta Casserole

You might want to serve it with some extra greens to compensate the extra cheesy bit. I love having pasta with a side of fresh green salad with cherry tomato with a dash of extra virgin olive oil and seasoning. But this is me. My kids prefer steamed broccoli or green beans which I’m happy to make, of course. ๐Ÿ™‚

Here’s how to make the Tuna Pasta Casserole

Pizza Muffins

Happy almost Friday guys! Today’s recipe is Pizza Muffins! I’m so excited to share this recipe with you, you may have or have not tried making pizza muffins before, but believe me you should try these! They are so delicious and yet so simple to make! And my preschool daughter loves them and wants them in her lunchbox all the time! What a success! ๐Ÿ™‚

Pizza Muffins

OK, so first of all my excitement comes from the fact that I haven’t tried these before and in general was really excited to make pizza like muffins or the other way around, not really sure. ๐Ÿ™‚ I used cornflour and plain flour(half and half), some passata, chopped ripe tomatoes, lots of Mozzarella cheese, Parmesan and a bit of mild Cheddar, and one green pepper. Oh, of course and the pepperoni.

The taste guys was amazing, exactly like pizza, like a really good pizza(the best probably). My daughter instantly loved them! ๐Ÿ™‚ I really can’t wait to try some other versions, vegetarian probably and share them with you.

Pizza Muffins

The Pizza Muffins are great on the go, for picnic, snack at any time or as an appetizer. There’s a bit of a downside, they’re not really on the very healthy side but I say everything in moderation is ok. ๐Ÿ™‚ I’d like to think so. ๐Ÿ™‚

If you prefer a vegetarian version, simply skip the pepperoni. I assure these will taste as good as with the pepperoni, more like cheese & tomato pizza, which by the way is my favorite. I mean, what could go wrong with cheese & tomato pizza? Well, there’s probably something but that’s another topic. ๐Ÿ™‚

Here’s how to make these pretty Pizza Muffins

Pizza Muffins

Pizza Muffins

Ingredients

  • 120g cornflour
  • 120g plain flour
  • 2 eggs
  • 100ml sunflower oil
  • 100ml yogurt
  • 100ml passata
  • 1 small green pepper, chopped
  • 1 ripe tomato, chopped

  • 50g mild Cheddar, grated
  • about 20 pepperoni slices
  • 1tsp baking powder
  • 1tbsp thyme
  • 5-6 basil leaves
  • 1tsp salt

Instructions

  1. Preheat the oven to 180ยฐC.
  2. In a bowl, combine all the dry ingredients and gradually start adding the wet - eggs, yogurt, oil, passata. Mix the mixture well and stir in the chopped tomato and pepper and the basil leaves.
  3. Gently add the cheese. Pour the mixture into a greased muffin tray. Arrange the pepperoni slices - one on top and a few on the sides.
  4. Bake in the oven for about 30 minutes or until ready.

Pizza Muffins

Cherry Tomato & Cream Cheese Spinach Muffins

Happy Friyay guys! Today’s recipe is Cherry Tomato & Cream Cheese Spinach Muffins – perfect for lunch boxes and as a snack on the go!

Cream Cheese & Cherry Tomato Spinach Muffins

I’m all about lunch boxes recently. My daughter is quite fussy so I try to make her lunch boxes healthy, tasty and suited to her taste at the same time. The good thing is she loves fruit and veg so there’s no issue with that. But when it comes to sandwiches, soups and any other homemade food, she’s quite fussy. Number one rule is ‘no white’ which means no feta, no yogurt, no eggs, no cheese even. For example, the other day she asked me to make her a sandwich for school with ham and bread only. Can you believe it? I was pretty sure she wouldn’t like it but when I picked her up from school she’s finished all her lunch box and even said to me the sandwich was super tasty. Really? ๐Ÿ™‚ I guess her taste buds are still developing. ๐Ÿ™‚

Cheery Tomato & Cream Cheese Spinach Muffins

Also, she really likes savoury muffins, especially the spinach ones I make. So I thought I’d make some for her lunch box. I used cream cheese which I mixed with the spinach so she won’t tell there’s some. The ones I usually make are with feta cheese and she always picks it out. I added some sliced cherry tomatoes as I know she loves them. However she picked them out too. She really liked the muffins though and even wanted some more for the next day, apart from the cherry tomatoes which she asked me toย pick out. ๐Ÿ™‚ So, yes I’m all about school lunches now. ๐Ÿ™‚

Cream Cheese & Cherry Tomato Spinach Muffins

I personally love these Spinach Muffins, I can’t get enough of them. But how could you not like them – they’re pretty, they’re tiny (like ‘two big bites’ tiny) and they taste amazing. As I already mentioned, perfect for lunch boxes, picnics and simply as a snack on the go.

Cherry Tomato & Cream Cheese Spinach Muffins

These beauties are very simple to make – eggs, flour, spinach, cream cheese and a few cherry tomatoes. All you have to do is mix the ingredients together and bake. Simple as that.

Here’s how to make the Cherry Tomato & Cream Cheese Spinach Muffins

Happy Sunday folks! Today’s recipe is Raspberry Chocolate pie – moist and chocolatey, this pie is a perfect treat for you Sunday!

Raspberry Chocolate Pie

I hope you all are having a great weekend so far! I myself had a super fun Saturday at a local farm picking some veg. The kids absolutely loved the idea of picking their own veg and then getting to help me cook them later. Seriously, freshly picked beetroot makes amazing veg chips. I should probably share the recipe with you (it’s no rocket science really, but there are a few tips and tricks) ๐Ÿ™‚ Plus, I make them in the oven so they’re much healthier, tastier and cheaper too than the shop bought chips. ๐Ÿ™‚ Oh, and the kids love them!

Raspberry Chocolate Pie

I really don’t know how come we haven’t done this earlier. The farm itself was beautiful with great restaurant where they served really delicious food. My favourite place though was the farm shop. Now, I’ve been to quite a few of those and to be honest wasn’t that much impressed for various reasons. But this particular shop, oh I was in heaven! ๐Ÿ™‚ First of all, it was very spacious, with lots of different counters filled with gourmet items. I honestly can’t stop thinking about it and about the items I’m getting next time! ๐Ÿ™‚

Figs & Goat’s Cheese Galette

Happy Wednesdayย guys! Today’s recipe is Figs & Goat’s Cheese Galette – sweet and sour, the combination of ripe figs, goat’s cheese, buttery galette and a bit of honey is just perfect!

Figs & Goat's Cheese Galette

As you may know I love galettes and I’ve made quite a few different versions, most of them (if not all) savoury ones. So it was time to make a sweeter version of this amazing buttery beauties. I had these ripe figs and all I could think about was figs and goat’s cheese. I got myself some goat’s cheese and I decided I wanted a galette with figs. The rest of it you can see on the photos. ๐Ÿ™‚

Figs & Goat's Cheese Galette

The recipe is very simple. The only thing you need to do is the dough for the galette. You’ll only need flour, butter and yogurt, simple as that. I had the Figs & Goat’s Cheese Galette with some honey for a kick of sweetness. And this would especially help when the gigs are not so sweet (and they’re usually not, but are still delicious) :-).

By the way, I’ve also made a Fig Tart that is very similar to the galette. It was a great success so if you’d like, you can find the recipe here:

Leftover Rice Bites

Happy Sunday all! Recipe of the day is Leftover Rice Bites with Vegetables, Chicken & Cheese! Whatย anย amazing way to use up your leftover rice!

Leftover Rice Bites

As ย the title suggests these cute bites were made of some leftover rice and chicken. I only added some cheese and egg to hold them together. I cooked them in a muffin tray for about 20 minutes and they were all gone in 10. It’s funny how my kids refused to eat the rice left in the fridge but then they really enjoyed these bites. Bottom line is you need to be creative to feed your kids. ๐Ÿ™‚ Just joking! I don’t think I’m very creative. Anyway, this was a simple and delicious way to use up my leftover rice. You can make it from scratch too – all you need is some cooked rice with vegetables (I used carrots and peppers, thinly chopped), cheese and an egg.

Leftover Rice Bites

By the way, what’s your favourite Summer food/what is the recipe you love making during the hot and sunny days? I love making lots of fresh salads, but I’m trying to add something new every time, otherwise I’ll get bored, no matter how tasty the veggies are. Like, for example, last night I had a Caprese salad, but I use homemade zucchini pesto, which is also raw vegan and it tasted simply delicious. Comment below if you’re a salad person like me or prefer something else! ๐Ÿ™‚
