The original idea was a bit different to be honest, but I think it actually got better this way. Much better. ๐Ÿ™‚ I topped this massive burgers/open sandwiches up with a poached egg and a splash of spicy sauce. There are chunky grilled halloumi pieces underneath the egg and a few on top, hence the double halloumi burger or should I say open sandwich? A bit confused about what to call it. ๐Ÿ™‚ I used toasted english muffins and loads of tapenade.

Let me tell you about the tapenade..I only recently discovered it but I feel I can’t get enough of it. It is so delicious that I generously add it to everything – salads, sandwiches, pasta. I really enjoy it as a dip too with some homemade pita chips. To make the tapenade I also added a few sun-dried tomatoes. They really make a big difference (in my opinion) and make it all taste even more delicious. Tapenade is great for tapas and nibbles which I’ve been obsessing recently, especially during the weekends. But seriously, what’s not to love about tapas? Lots of small and cute looking dishes to choose from. Thus, there’ll be a little something for everyone, plus you get to enjoy a few different dishes. That’s the food lover in me talking. ๐Ÿ™‚ My family love this kind of dinner too so everything is working fine! ๐Ÿ™‚ And most of the time there are no leftovers at all. ๐Ÿ™‚

Double Halloumi Burger with Tapenade

Ingredients

  • 2 English Muffins, cut in halves and toasted
  • 200g halloumi, cut in pieces and grilled
  • 2 eggs, poached
  • rocket salad for serving, if wished
  • For the tapenade:
  • 150g black olives, pitted
  • 1 garlic clove, crushed
  • 1-2 anchovy fillets
  • 3-4 sun-dried tomatoes
  • 1tbsp capers
  • 1tbsp lemon juice
  • 1tbsp olive oil
  • salt and pepper

Instructions

  1. To make the tapenade, simply blitz the ingredients in a food processor till a desired consistency - chunky or smooth.
  2. To build the burger, start with the muffin bottom, add a generous amount of the tapenade, a few pieces of the grilled halloumi cheese and finish it off with a poached egg. If wished, close the burger with the other half of the muffin. Repeat with the other english muffin.
  3. Serve with some rocket salad on a side and some spicy sauce.

I can’t believe May is already halfway gone which brings June in. Wait, isn’t it supposed to be warm and sunny then? ๐Ÿ™‚ It seems the weather here is a total mystery. For example, today, it’s been sunny, rainy and windy, like three different seasons in a day. It changes so quickly it’s insane. No, I’m not used to it and I’ll probably keep on complaining until some sun is shining. That’s enough for this post though so let’s get back to the recipes.

As my previous recipe, this one is perfect for a tasty brunch too. I actually did these last Sunday brunch and thew were divine. Make sure to serve them hot though, otherwise they get soggy and not so appetizing. I drenched mine in hot sauce, but how could I not (you know I’m addictive). Also, I think these lovely mushrooms will go just fine with a spicy Bloody Mary, definitely trying this next time. ๐Ÿ™‚

You can serve them as a starter, canapes or even as a main, probably with some salad on a side. They would make a delicious weeknight dinner too, quick and easy to make.

  • 4-5 large mushrooms
  • 10 cherry tomatoes, chopped
  • 150g Mozzarella cheese, grated
  • 100g bacon, chopped
  • 100g breadcrumbs
  • 2tsp dry parsley
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 200ยฐC.
  2. In a bowl, combine all the ingredients together and mix well.
  3. Stuff the mushrooms and season with the parsley, salt and pepper.
  4. Cook in the oven for about 20 minutes or until ready.
  5. Take out from the oven and serve straight away!

I used my homemade breadcrumbs, which I think I mentioned before how I prepare – simply blitz my leftover bread with some spices I fancy. This is a really simple way to use a stale bread and it works even better than the shop-bought breadcrumbs.

So if it’s not too late when you’re reading this post turn the oven on and start making this! It’s super simple but tastes amazing and it’s quite filling too. All you need is bacon and cheese, then some sweet corn and eggs. I used quail eggs. Not only I love how they taste but they look so pretty when added on food. They just make the food look a lot prettier, don’t you think? ๐Ÿ™‚ Not only that but they’re times healthier than the chicken ones. If you see these in the shop, don’t hesitate and grab a pack. You can add them on almost everything!

  • 1 big sweet potato, cut in halves
  • 150 g bacon, chopped

  • 100g sweet corn

Instructions

  1. Preheat the oven to 200ยฐC.
  2. Place the sweet potatoes on a baking tray, drizzle with olive oil and bake in the oven for about 20 minutes.
  3. Remove from the oven and add the rest of the ingredients. Season with salt and pepper and cok for another 15 minutes.
  4. Serve with some sour cream on a side.

I served these beauties with sour cream on a side but I also had some hot sauce on mine (couldn’t resist). I used a giant sweet potato, cut in halve but if you’d like you can use a few small ones and cut them in half.

I’m telling there’s nothing better than having yummy food on a lazy Sunday and watching a food show. It doesn’t happen very often, though but when it does it’s a real pleasure. I simply love food. ๐Ÿ™‚

To make thing even easier, why bake the potatoes in advance, say Saturday, store them in the fridge, and all you have to do on Sunday is top them up and bake for a few minutes.

This is only one of the combinations I like to use for topping og my sweet potatoes. There are so many other options that are delicious too. So be inventive and let’s get cooking. ๐Ÿ™‚

I’ve actually made the salad in advance and then thought it would be a good idea to have it in a wrap. The salad was quite similar to the one here –ย MM: Grilled Vegetables & Halloumi Bulgur Salad, almost the same actually. All I added was some chickpeas and grilled halloumi, oh and some sweet tomato sauce.

The result was really tasty and quite filling. These wraps are not only healthy but they will keep you full for longer. And that was a great way for me to clean up my fridge. ๐Ÿ™‚ Every timeย I do that the result is quite delicious. ๐Ÿ™‚

I absolutely hate wasting food so I make sure I use every bit of food left in my fridge. Well, sometimes this is not possible but most of the time I manage to use everything I have left. ๐Ÿ™‚

Grilled Vegetables & Bulgur Salad Wrap

They’re perfect for a healthy lunch or a snack on the go. Why not make a few ahead and sort your lunch during the week. I actually really recommend prepping your lunch in advance, of course if it’s possible. From what I know and have experienced quite often as I’m starving I grab not so healthy and tasty options which I usually regret afterwards. However, If there’s a healthy meal ready in the fridge, I’m more than happy to satisfy my hunger with it. Not only that, but making your meals in advance saves me a lot of time. By the time I collect the kids from nursery and we get home, we are all starving. But my first priority is to settle them for lunch and feed them. If there’s nothing prepped for me I usually grab whatever I find in the fridge, which as I mentioned might not be the best option. ๐Ÿ™‚

  • 4-5 flour tortilla wraps
  • 1 grilled zucchini, sliced
  • 1 grilled eggplant, sliced
  • 150g halloumi cheese, grilled and sliced
  • 100g chickpeas, cooked
  • 2tbsp tomato sauce
  • 1tbsp lemon juice
  • 2tbsp olive oil
  • salt to taste

Instructions

  1. In a bowl, mix the bulgur with grilled veggies and halloumi cheese.
  2. Add the chickpeas, tomato sauce and then season with salt, olive oil and lemon juice.
  3. Mix the salad well and fill in the tortillas with it and closed the wraps.
  4. Ideal for lunch or a snack on the go!

It’s been a whole week without posting! It seems every time I try to be more organised and post regularly something gets on a way. And it’s usually something to do with the kids. In this case, it was chickenpox. At lest now it’s over though. Both of my kids had it, two weeks apart and while my older daughter was really lucky and barely had any blisters, my poor baby had it really bad. But again, I’m so glad it’s over now. Easter is coming so are my new recipes so stay tuned…

And the weather’s been amazing recently! It makes me think of some yummy Spring-inspired recipes. So lots of cooking planned ahead!

Anyhow, the recipe is here now so back to it…

This is and incredibly easy recipe made in a muffin tray. All you need is minced pork, sun-dried tomatoes and eggs and feta cheese. If you’re looking for a filling breakfast ideas this is for you. It’s cheesy, meaty and conveniently shaped in small cups ready to bite. ๐Ÿ™‚

I had some pork mince leftovers and wanted to make some scotch eggs which I love but then I thought my kids are not keen on them so instead I made these pretty cups.

I’ve been using lots of sun-dried tomatoes lately and they go so well in my savoury recipes. Whenever I’d like to add more flavour to a meal I open my kitchen cupboard and ,especially recently, reach towards the sun-dried tomatoes. That’s why I always have a jar of these in my kitchen cupboard. ๐Ÿ™‚

Here’s how to make the Sun-dried Tomatoes Pork Cups.

Ingredients

  • 300g pork mince
  • 1 egg
  • 2tbsp breadcrumbs
  • 7-8 sun-dried tomatoes, sliced
  • 100g feta cheese, crumbled
  • 2eggs
  • 1tsp cumin
  • 1tsp pepper
  • salt to taste
  • fresh parsley, chopped

Instructions

  1. Preheat the oven to 200ยฐC.
  2. In a bowl, combine the pork, egg, breadcrumbs and seasoning. Add a handful of fresh parsley and mix well.
  3. Grease a muffin tray and shape the mixture in small balls. Arrange them on the tray and press with your fingers to make a hole(so you can fill them in with the eggs mixture).
  4. Place in the oven and bake for about 20 minutes.
  5. Meanwhile, prepare the egg mixture - in a bowl, simply mix the eggs, cheese and sun-dried tomatoes together.
  6. Fill the pork cups wit the mixture and place back in the oven for another 5-10 minutes or until ready.

I can’t tell you how delicious these cheesy buns turned! Yum, yum, yum…

The cheese literally exploded, imagine how much was in there. If you are cheese lover like me you’d love these, no doubt. There’s Parmesan cheese, Mozzarella & Feta. And the recipe is actually quite easy. I saw a similar recipe on the web and I really liked the idea, I haven’t used the same ingredients though, I kind of made my own muffins/buns. Really not sure how to call them – they’re baked in a muffin tray so that’s why I called them muffins but on the other side are like bread/buns. Anyhow, you get the point. And it is that they’re super delicious.

Ingredients

  • 400g flour
  • 1 sachet(7g) yeast
  • 1tsp salt
  • 300ml milk
  • 50g butter
  • 200g Mozzarella cheese, grated
  • 100g Parmesan cheese, grated
  • 100g Feta Cheese, grated
  • 1 egg yolk
  • extra butter for baking
  • chopped parsley for sprinkling

Instructions

  1. In a bowl, combine the flour, yeast, salt and milk. Work the dough, place in a bowl, cover with a tea towel and leave for about 30 minutes to rise. If necessary add more milk.
  2. Preheat the oven to 180ยฐC.
  3. Divide the dough into 7-8 equal parts.
  4. Roll each out in oval shape and sprinkle a mixture of the cheese on half of it. Start wrapping and halfway through make a few cuts with a knife. Finish wrapping the bun so you have something like a wrap.
  5. Now make a ring and place in a greased with butter muffin tray.
  6. Repeat with the rest of the muffins.
  7. Brush the muffins with the egg yolk and then sprinkle with the parsley.
  8. Bake in the oven for about 30 minutes or until ready.

The dough is made of flour, yeast and milk. I should say, I am not that good in making dough for bread but this was really simple and turned out delicious. All you need to do is to combine the ingredients, work the dough and then wait for it to rise.

This is another delicious recipe using muffin tray. It makes me think I actually need to change mine, it’s been a good few years of use. In fact, I need a whole lots of baking equipment. Can’t wait to pick up some new and exciting stuff soon.

I used dry parsley again. As I Mentioned in my previous post I’ve been using it very often. It’s all chopped up for you and ready to use. Plus, you’re not gonna need to worry how to store it for longer. On the other side though, fresh is best. ๐Ÿ™‚ But this is what works for me at the moment.

The Three Cheese Savoury Muffins would be ideal snack for picnic. They really got me thinking about spring, sun and picnics. My daughter absolutely loves having picnics, so as my whole family and I can’t wait for the weather to get warm and sunny so we can enjoy a nice day out.

They are perfect for sharing, as a side, as a snack, just one of these get together recipes. Make sure to have them when they’re nice and warm and the cheese is melted. Nothing better than a melted three cheese bun. Nom, nom, nom. ๐Ÿ™‚

Is it Spring yet? The weather today was amazing and we actually got lots of sunshine. Hopefully this doesn’t change in the next few days. We really need the sun to come out more often and the temperatures to rise. ๐Ÿ™‚ I’ve had enough of the cold and gloomy weather, colds and runny noses. Plus, it’s time to start making some fresh and tasty Spring recipes with lots of yummy veggies and fruit.

And I know, once Spring is here, many of us start planning the Summer – holidays, get in shape programs and whatnot. It’s just so exciting! The holiday part, I mean. Meanwhile, we’re gonna have to wait patiently and hope for more sunny days!

Cauliflower, Broccoli & Cheese Bites

And now back to the recipe again…I was about to make Cauliflower and Cheese with Broccoli but then I thought I might make something a bit different this time and mix thing up a little bit. This is what happened. These bites are actually even easier to make and take a few minutes. All you need is a blender and then the rest is left to the oven. Apart from the cauliflower and broccoli, I used single cream, eggs and a generous amount of cheese. There is no flour so these bites are tasty gluten-free option too and are not that high in calories. Well, they’re pretty healthy(probably with a bit less cheese though). ๐Ÿ™‚

They’re actually quite like a breakfast bites with all the cheese and eggs. ๐Ÿ™‚ Also, they’re perfect for snacking all day long. ๐Ÿ™‚ And the colour they turned is quite pretty, isn’t it. It’s so bright and fresh!

The kids enjoyed them too. They were really attracted to the muffin-sized bites and actually had a few of them. So that was a success! ๐Ÿ™‚

They usually eat broccoli but are not fans of cauliflower. Well, I don’t think they realised there’s cauliflower but that was not necessary at all, was it. ๐Ÿ™‚

It’s amazing how many things you can actually prepare in a muffin tray. It seems muffin trays are not what they used to be anymore. ๐Ÿ™‚ I’ve made different breakfast bites and I simply loved them. I have to admit it, cooking nowadays has become really inventive.

Easy Falafel Pita

Happy Sunday all! Today’s recipe is Easy Falafel Pita!

It’s super simple recipe, really easy to make and yet is so delicious and healthy.

Just perfect for a lazy Sunday lunch!

The main ingredient is chickpeas, of course and then you’re gonna need some pita bread, red onion, avocado. Simple as that. You can always add extra veggies if you prefer or sauces. I had the falafel pitas with sour cream and hot sauce but you can have them with whatever sauces you fancy.

I made the falafels with onion, garlic, olive oil and parsley. They quite remind of hummus. But this is because the ingredients for the hummus are the same, you only need to add tahini paste and your hummus is done.

The falafels are so delicious you can easily have them by themselves, probably with a bit of sauce. You can even add them in a salad. They really taste good with some fresh spinach. They’re perfect for appetizers and meze platters. I love ordering meze platters when out because you get all these yummy stuff like falafel, hummus, halloumi, etc. So why not make this at home to entertain your friends? I bet they would be delighted. ๐Ÿ™‚

I also baked these in the oven, so again no frying. ๐Ÿ™‚ And my kids loved them, which is probably the most important thing. ๐Ÿ™‚ Yay! Another recipe they really liked! Well, they didn’t have them with the pita but that doesn’t really matter because they really enjoyed the falafels. ๐Ÿ™‚ So now I’ve got about five recipes they really liked, one for each day of the week. ๐Ÿ™‚ Just kidding!

  3. Make small balls and arrange them on a greased baking tray.
  4. Cook in the oven for about 20 minutes or until ready.
  5. Serve on a pita bread with the red onion, avocado and fresh coriander leaves.
  6. Add sour cream and hot sauce, if wished.

Easy Falafel Pita

Apart from the pita bread, you can use wraps, kebab bread and even buns. Yes, why not make vegetarian burgers. Use the same ingredients but simply arrange them on a bun. Falafel burger sounds nice, doesn’t it! You might add some melted cheese too, otherwise it might be a bit dry.

The bottom line is the options with these tasty falafels are so many – burgers, salads, pita breads, etc. They make a very nutritious and healthy meal so I think I should make them more often. And now that my kids like them, that’s a serious reason to make these, let’sย say, weekly. ๐Ÿ™‚

Tip: Make sure to soak the chickpeas in water before cooking them. You can use tinned too but I read that it’s much better to use dry chickpeas so I stuckย to it. ๐Ÿ™‚

I even made the dough from scratch! Not that it’s too difficult, it just takes a bit more time but it’s totally worth it. Of course, if you’re time-restraint, you can always use shop bought dough.

So, more about the pizza now..I used Mozzarella and Parmesan cheese, cheery tomatoes, sweet red peppers, black olives and a bit of spinach. I love both meatballs and pizza and the idea of having both in one mealย sounded really good. For the base, I simply used flour, yeast and olive oil, really simple, but again a bit time-consuming. I topped dit up with tomato sauce and then arranged all the other ingredients. It was quite loaded pizza, succulentย and cheesy, one of my favourite thing to have on movie night. ๐Ÿ™‚

And the weekend is just one day away so I might have to make this pizza again. ๐Ÿ™‚ I don’t know about you but my weekends go by too quickly, really quickly. It seems the anticipation is so long and thenย you wake up and it’s Monday again. There’s never enough time to relax, cook, meet with friends, watch movies and have fun with the kids. Seriously, we need an extra weekend day.

Back to the food now…Feel free to add sauces you fancy. I usually add some garlic sauce and of course, lots of hot sauce. But to be honest, this pizza is quite juicy, so you might skip the sauce. But on the other side, meatballs with hot sauce are so tasty. ๐Ÿ™‚

Ingredients
  • 4-5 tbsp tomato sauce
  • 1 red pepper, sliced
  • 5-6 cherry tomatoes, cut in halves
  • 100g Mozzarella cheese, grated
  • 100g Parmesan cheese, grated
  • 10 black olives
  • a handful of fresh spinach
  • For the Meatballs:
  • 300g ground turkey
  • ½ onion, chopped
  • 1tbsp breadcrumbs
  • 1tbsp fresh parsley, chopped
  • 1 egg
  • salt and pepper
  • For the pizza dough:
  • 500g flour
  • 7g yeast
  • 2tbsp warm milk
  • 2tbsp olive oil
  • 1tbsp salt
Instructions
  1. Preheat the oven to 200ยฐC.
  2. To make the meatballs - mix all the ingredients in a bowl and shape small balls.
  3. To make the dough - mix the dough ingredients and add warm water as much as needed to make a smooth dough. Knead for about five minutes, cover with a tea towel and leave for about an hour to rise.
  4. When the dough is ready, roll it out and place in a greased baking tray.
  5. Spread the tomato sauce and sprinkle the cheese on top.
  6. Add the peppers, spinach leaves and tomatoes.
  7. Arrange the turkey meatballs on top. Sprinkle some more Parmesan cheese.
  8. Bake in the oven for about 40 minutes or until ready.

Turkey Meatball PizzaTip: If you use shop-bought dough, you might need to half cook the meatballs before baking the pizza, especially if you make giant ones like me. ๐Ÿ™‚ Simply place them in the oven and cook for about 15 minutes. Then you can arrange them on the pizza and bake again.

Beef Breakfast Wraps

They’re one of those breakfast recipes that you can have them all day long – scrambled eggs, sweet red peppers, ripe avocado and beef. All that topped with lots of cheese and wrapped up. Believe me, you’re going to love these wraps.

I used shop bought cooked beef, which saved a lot of time. You can use whatever you’d like. You might have any leftovers or simply choose a small amount of cooked meat from your local shop.

I also added a tiny drop of sour cream to make the thing even juicier. I do love sour cream, I know it’s not the healthiest thing ever but the key is in moderation, I guess. ๐Ÿ™‚

For some reason,ย I’ve been making lots of wraps/burritos recently. Not only they’re our family favourite but they take a few minutes only (which make them mummy’s favourites too), if you’ve got all the ingredients prepped and cooked in advance. And the combinations you can try are numerous. Breakfast, lunch or dinner, fish, meat or simply vegetarian, there are so many delicious way to make these to your taste. So that’s a good reason, actually. ๐Ÿ™‚

I probably should try using some sweet and sour fillings. That would be nice, wouldn’t it. ๐Ÿ™‚ Like sweet and sour chicken with some veggies or rice. Nom, nom, nom..

The bottom line is, get your apron on and start cooking! ๐Ÿ™‚

Oh, yes, I forgot to mention, there are some black olives too. I actually added the olives in the scramble eggs, I find the combination very yummy. ๐Ÿ™‚ But this is not necessary at all, so if for some reason you don’t fancy olives, just don’t add them. The eggs were cooked in advance so all I had to do was to make the wraps which took me 5 minutes. Seriously, I’m really good at wrapping these things. ๐Ÿ™‚

We actually couldn’t finish them all, which was quite surprising, just one of the wraps was left for lunch for the next day.

My kids actually unwrap everything and pick the bits and pieces they like. But as long as they have some food, this is fine by me. ๐Ÿ™‚

Needless to say, I had mine with lots of hot sauce. ๐Ÿ™‚ I simply can’t help it.

Ingredients
  • 4 flour tortillas
  • 300g beef, cooked and shredded
  • 200g Monterey Jack cheese, grated
  • 3 grilled red peppers, sliced thinly
  • 1 ripe avocado, sliced
  • 5 scrambled eggs(cooked in advance)
  • 4tbsp sour cream
  • fresh coriander leaves
Instructions
  1. Heat up the wrap for 2-3 minutes in the oven or microwave.
  2. Basically, make sure to divide the ingredients equally between the wraps.
  3. Add the scrambled eggs and beef, then peppers and cheese.
  4. Finish off with some sour cream and fresh coriander leaves and close the wraps.
  5. Serve with some hot sauce! Or lots of it! ๐Ÿ™‚
