Have you guys started planning Christmas yet? I’ve always liked to plan in advance, but now, especially with the kids, I start organising stuff quite early. I’m quite an organiser, let me tell you. πŸ˜„I have almost completed my Christmas gift list which is amazing (I usually waited a week before Christmas) so I can focus on other important stuff, or let’s admit it, the most important – Food 🍽 What’s Christmas without some indulgent food. It’s all about get together and share some amazing food, isn’t it.Β πŸ™‚Β I have planned so many recipes that I’m sure I’m not gonna be able to make all of them.

Brisket & Eggs Breakfast Sandwich

OK, back to the recipe now..I added some fresh salad, tomato, mayo and of course, cheese. πŸ™‚ This simple sandwich turned into perfection. I easily had a coupe of these, they’re actually smaller than they look. πŸ˜€ Also, I added lots of hot sauce. Seriously, it was one of the best brunches ever. πŸ™‚

I love the fact that this is so quick and simple to make, the only cooking is actually scrambling the eggs but it takes a few minutes too. So, the Brisket & Eggs Sandwich is perfect for a lazy morning/brunch and not only. I honestly can have it for lunch & dinner too. Why not?Β πŸ™‚

The combination of sweet Brioche bun, mild cheese & salty brisket works so well. Just add some crunchy salad and enjoy! I didn’t make any sides for these sandwiches but chips will be great, or even sweet potatoes.

Here’s what you need for the Brisket & Eggs Sandwich

Brisket & Eggs Breakfast Sandwich

Ingredients

  • 8 slices of beef brisket
  • 1 tomato, sliced
  • 5 eggs, scrambled
  • 8 slices of Mild cheddar
  • 4 Brioche buns
  • 4tbsp mayo
  • a handful of fresh mixed leaf salad

Instructions

  1. To build the sandwiches, add two slices of the brisket and then some of the eggs. Place two slices of the cheese on top. Melt in the oven for a couple of minutes. Top up the sandwich with some fresh mixed leaf salad. Add a spoon of mayo on the top brioche bun and close the sandwich. Repeat with the reset of the buns.
  2. Enjoy!

Happy Saturday all! Today’s recipe is Mocha Christmas Tree Muffins – and let the festive season begins! πŸ˜€

Mocha Christmas Tree Muffins

As you can see these Mocha Christmas Tree Muffins are loaded with chocolate, like lots of it so that’s enough of a good reason for me to make them this festive season. They’re one of the simplest muffins I’ve ever made. It only takes 15 minutes for them to cook. I think it actually takes more time to make them look like Christmas trees. I used some desiccated coconut hoping to make them look like snowy Christmas trees. πŸ™‚

It’s a great way t get your kids involved and leave them to decorate the muffins. They probably won’t look like Christmas trees at the end but that’s ok. πŸ˜€ This reminds me, I should make some Christmas cookies as my kids love decorating them.

No matter how healthy we’re trying to be, it’s this time of the year again and there’s always something sweet and naughty to try so that’s a tricky task. Seriously, what’s Christmas without some indulgent food (ok, probably too much of it). But hey, there’s January, it’s usually when people make their New Year’s resolutions so it’s a good time to get back in shape. πŸ™‚ Till then, let’s just try to find a healthy balance.

Mocha Christmas Tree Muffins

Ingredients

  • 100g flour
  • 100g sugar
  • 2eggs
  • 100ml sunflower oil
  • 300g hazelnut chocolate spread
  • 300g cream cheese
  • 2tbsp instant coffee
  • 1tsp baking powder
  • desiccated coconut for sprinkling

Instructions

  1. Preheat the oven to 190Β°C.
  2. In a bowl, mix the eggs and sugar. Add the flour, baking powder and oil. Mix well.
  3. Mix the instant coffee with 3tbsp of water and add it to the bowl.
  4. Empty the muffin mixture in a grease muffin tray and bake in the oven for about 15 minutes.
  5. Leave the muffins to cool down.
  6. Gently cut their tops and put on a side. Mix the chocolate and cream cheese together and using a piping bag swirl some chocolate, add the lid and add more chocolate.
  7. Decorate as you wish and sprinkle some desiccated coconut.
  8. Enjoy!

This Pumpkin Bread was definitely the best I’ve ever made and ever tried. My kids just loved it! But who wouldn’t with all this white chocolate dripping and on top of that caramelized pecans! I am honestly drooling now! πŸ™‚

Also, with all of that Halloween madness and pumpkin carving in particular it is a great way to use up your pumpkin pulp. I hate wasting any food so I always save it and make something tasty. I actually have a big bowl of pumpkin pulp in the fridge at the moment due to the carving yesterday. πŸ™‚ I am thinking of a thick pumpkin soup and a pumpkin chocolate cake I’ve been meaning to make for a long time πŸ’‘ . So fingers crossed and my plan works I’ll hopefully share the recipe with you next week. πŸ™‚

Now back to this moreish White Chocolate & Caramelized Pecans Pumpkin Bread. Apart from the white chocolate and pecan, I used pumpkin (obviously πŸ™‚ ), flour, eggs and a bit of sugar. The recipe is really simple! I would normally have my pumpkin bread with a bit of butter but this one doesn’t need any (hello, just look at the toppings) πŸ™‚ Needless to say, it was gone quickly. We even had some leftovers for breakfast the next morning.

Here’s how to make the White Chocolate & Caramelized Pecans Pumpkin Bread

White Chocolate & Caramelized Pecans Pumpkin Bread

White Chocolate & Caramelized Pecans Pumpkin Bread

Ingredients

  • 300g pumpkin, pureed
  • 400g flour
  • 100g butter, melted
  • 100g white chocolate, melted
  • 10-15 pecans
  • 100g brown sugar
  • 1tsp baking powder
  • 2eggs
  • 1tbsp cinnamon
  • 1tsp nutmeg
  • 1tsp cloves
  • extra sugar for caramelizing

Instructions

  1. Preheat the oven to 180Β°C.
  2. In a bowl mix the dry ingredients together.
  3. In a separate bowl mix all the wet ingredients.
  4. Combine all the ingredients and pour the mixture in a greased loaf baking tray.
  5. Bake in the oven for about 40 minutes or until ready.
  6. To caramelize the nuts - simply combine them with some sugar and cook on the hob for a few minutes until the sugar's caramelized.
  7. Drizzle the white chocolate on top (make sure it's been just melted) and add the caramelized pecans.
  8. Enjoy!

Just look at this gooey centre! I promise the Mozzarella cheese is not that much as it looks. There are lots of other veggies like red peppers, olives, sun-dried tomatoes. Also, I used corn flour (no particular reason, it’s just I find it tastier than the white one). The recipe is super simple to make and at the same time tastes delicious! Not to mention the benefits of kale.

Ingredients

  • 100g kale, pureed
  • 150g corn flour
  • 2 eggs
  • 1tsp baking powder
  • 1tsp salt
  • 100ml passata
  • 1tbsp dry thyme
  • 10 black olives, pitted
  • 7-8 sun-dried tomatoes
  • 1 red pepper, chopped
  • 150g Mozzarella cheese, grated
  • 2tbsp olive oil

Instructions

  1. Preheat the oven to 180Β°C.
  2. In a bowl mix all the wet ingredients and combine with the dry ingredients.
  3. Grease a muffin tray and pour the muffin mixture halfway. Add some of the grated Mozzarella and pour a bit more of the mixture.
  4. Bake in the oven for about 40 minutes or until ready.
  5. Enjoy!

Mushroom & Cauliflower Crust Pizza

Happy weekend guys! Today’s recipe is Mushroom & Cauliflower Crust Pizza – topped up with salami, melted cheese, peppers & cherry tomato, this gluten-free pizza is bursting with flavours!

This pizza is like no other! The crust is not as dry as the original pizza crust (no flour, remember). This mushroom & cauliflower crust is super moist and soft and almost falling apart so I recommend using a fork. Does that make it a tart? I’m not sure to be honest. I thought it’s more like a pizza. πŸ™‚ Whatever you choose to call it, this meal is delicious. It’s gluten-free too. I think I already mention that. :-)Bear in mind though that many of the salami & sausages contain gluten so check first if you’ve got intolerance.

It took me about 5 minutes to blitz the crust ingredients and place the crust to bake in the oven. In 20 minutes the crust is done, all you have to do is to arrange the topping and cook for another 10 minutes. Not only tasty and healthy but quite simple!

Mushroom & Cauliflower Crust Pizza

For the pizza crust I used eggs, Parmesan cheese, passata seasoning and of course cauliflower and mushrooms. I simply blitz everything together in my blender, baked the crust, topped it up and bake a few more minutes. From all of our family it seemed I was the biggest fan of this pizza so I almost finished it by myself. πŸ™‚

The toppings I used were salami, Emmental cheese (mild Cheddar works too), cherry tomatoes, peppers and some fresh rocket. You can always add more toppings too or skip the salami for a vegetarian version, whatever you fancy, really! πŸ™‚

  • 1 small cauliflower
  • 4-5 chestnut mushrooms
  • 150g Parmesan cheese, grated

  • For the toppings:
  • 7-8 salami slices
  • 1-2 yellow pepper, sliced
  • 5-6 cherry tomatoes, sliced
  • 150g Emmental cheese, grated
  • fresh rocket for serving

Instructions

  1. Preheat the oven to 200Β°C.
  2. Mix the pizza crust ingredients in a blender and bake in a greased baking tray for about 20 minutes.
  3. Remove from the oven and add the toppings.
  4. Place back and cook for another 10 minutes. Serve with some fresh rocket.
  5. Enjoy!

Happy Monday guys! Today’s recipe is Turkey Breakfast Burgers – succulent turkey patty , melted Emmental, ripe avocado, roasted red peppers and a fried egg! Mmmmm…It’s just a dream (or it was) πŸ™‚

Seriously, the colder the weather gets, the higher the calories in my recipes are. πŸ™‚ Just joking, not necessarily. But what I mean is, we all get a craving for a nice warm soup/stew, succulent burger/roast or anything comforting that will warm you up. πŸ™‚ Now, that doesn’t mean we eat such comfort food every day, but the truth is I do make them much more often in the Fall/Winter period than Spring/Summer (I believe most of you do too). πŸ™‚

I was actually thinking to add hash browns instead of the avocado and roasted pepper but then I wanted to serve it with sweet potato chips so I scratched that out. Also to put the scale a bit on the healthy side I thought It’d be nice to add some ripe avo and peppers. Do they count as your five-a-day? πŸ™‚ Probably not. πŸ™‚ However, they worked amazing with the fried egg and just completed that Breakfast Burger.

Ingredients

  • 450g turkey mince 1/2 onion, chopped
  • 1 egg
  • a bunch of fresh parsley, chopped
  • 1tsp cumin
  • 1tsp black pepper
  • 2tbsp cornmeal
  • 1tsp salt
  • 4 brioche buns
  • 4 Emmental slices
  • 1 ripe avocado, sliced
  • 2 red roasted peppers, sliced
  • 4 fried eggs
  • sunflower oil for frying
  • 4tbsp mayo

Instructions

  1. In a bowl, mix all the burger patties ingredients.
  2. Heat a pan with some oil and fry them for about 5 minutes on each side. I made mine well done though because of the kids.
  3. Half the buns, add a spoon of mayo, the patty and cover with the Emmental cheese.
  4. Melt it in the oven for 2-3 minutes.
  5. Add the roasted peppers, avocado and egg.
  6. Serve with some sweet potato chips.
  7. Enjoy!

The whole thing was very simple to make. I admit, this time I fried the burger patties, instead of grilling or baking them. The reason was that I was in a real hurry and of course, I was sure they’ll turn out very juicy and delicious (as they did). If you ask me though, If you’ve got the time, the best way is to grill them, and the tastiest! I’d definitely recommend that. But again, fried are more than delicious too. πŸ™‚

Happy Wednesday guys! Today’s recipe is Hasselback Butternut Squash Mexican Style – a lovely vegetarian recipe that is perfect for a busy weeknight dinner.

This is a simple recipe but yet so delicious. This succulent Squash is literally bursting with flavors – it’s topped with freshly made guacamole, black beans, sweet red peppers and sour cream. I served this gorgeous Squash with some warmed up tortilla wraps and guess what happened – amazing Squash wraps. I personally had it on its own, just with a generous amount of the toppings so it was a bit like a salad or I’d like to think so. πŸ™‚ No matter what, this is seriously delicious. And it’s on the healthy side too, so why not have a few extra servings. πŸ™‚

Ingredients

  • 1 small butternut squash, 'hasselback' cut
  • 1 red pepper, chopped
  • 150g black beans, cooked or from a tin
  • sour cream for serving
  • For the guacamole:
  • 1 ripe avocado
  • 1 lime, juice only
  • 1/2 small red onion, chopped
  • salt to taste
  • a bunch of fresh coriander, chopped

Instructions

  1. Preheat the oven to 200Β°C.
  2. Place the Squash on a baking tray and cook in the oven for about 30 minutes.
  3. Meanwhile, make the guacamole - mash the avocado and simply mix all the ingredients together.
  4. Serve the Butternut Squash topped up with the guacamole, sour cream, red peppers and black beans. Add some tortilla wraps for tasty Squash burritos.
  5. Enjoy!

So about this Succulent Cod Burger, seriously, how could I haven’t made it before. It’s one of those simple recipes that you just discovered but seriously fallen in love with. Actually, the whole family did. What’s in there – cod fillets, which I gently cooked with some cornflour and herbs, melted Emmental cheese, mushy peas and tiny bitΒ spicy mayo (for the adults only). I used brioche buns which were just perfect for this burger and added some more sweetness to it. To serve, I made some sweet potato fries, which we all love in our family. They are ridiculously simple to make – simply cut the sweet potato in chips, season and bake in the oven with some oil. You can even add Parmesan cheese or any other toppings you fancy. Seriously guys, the whole combination was just spot on.

The fact that nothing was left proves that everyone really enjoyed it. I myself could easily had one more of these bad guys, unfortunately (or fortunately πŸ™‚ ), there weren’t any left.

Ingredients

  • 4 small cod fillets
  • 100g cornflour
  • 1tbsp dry parsley
  • 1 egg, beaten
  • 4 brioche buns
  • 4tbsp spicy mayo
  • 8 Emmental slices
  • sunflower oil for frying
  • For the Mushy Peas:
  • 200g peas
  • 50g butter, melted
  • salt to taste

Instructions

  1. Heat a pan with some oil. Coat the cod fillets with egg and then with cornflour. Gently cook the fish for about 2-3 minutes on each side.
  2. To make the mushy peas - simply blitz all the ingredients together.
  3. Start building up the burgers - add a tbsp of spicy mayo on the bottom bun, add half of the cod fillet, 2 slices of the Emmental and melt it in the oven for 5 minutes. Finish off with 3-4 tbsp of the mushy peasy and the other half of the fish.
  4. Repeat with the rest of the burgers.
  5. Serve with some sweet potato chips.
  6. Enjoy!

Happy Taco Tuesday guys! Today’s recipe is Turkey Meatballs Tacos – succulent turkey meatballs on flour tortillas with fresh guac and some other goodies too!

I must admit, I was a bit sceptical about this recipe (meatballs on a taco) but I was so wrong. It turned out delicious, quite meaty to be honest. πŸ™‚ But how could it not – juicy meatballs with lots of spices and sweet pepper, fresh guac, black beans & sour cream. You can even add some cheese, fresh jalapenos, coriander and whatnot. Why not build your own taco? Just don’t forget the main ingredient here – the Turkey Meatballs.

I made the meatballs quite small on purpose, after all I was gonna put them on a taco so I didn’t want any big ones. I used fresh coriander, red pepper, onion, garlic, cumin, black pepper, nutmeg and I think that’s about it. Oh, and one more thing, these are actually oven-baked. So no frying and you get a healthier option of meatballs. πŸ™‚

The kids only had the meatballs though. They’re still not used to have the whole packageΒ with the sauces and beans, so they basically had a plain taco – meatballs only which was fine with me, as long as they had their dinner. πŸ™‚

Ingredients

  • 5-6 soft flour tacos
  • For the Meatballs:
  • 450g turkey mince
  • 1 garlic clove, crushed
  • 1/3 red pepper, chopped
  • 1/3 onion, chopped
  • 1 egg
  • 1tbsp breadcrumbs
  • 1tsp nutmeg
  • 1tsp cumin
  • 1tsp black pepper
  • 1tsp salt
  • black beans for serving
  • sour cream for serving
  • guacamole for serving
  • hot sauce, if wished

Instructions

  1. Preheat the oven to 200Β°C.
  2. In a bowl, mix all the meatballs ingredients and make small meatballs.
  3. Arrange them on a greased baking tray and cook in the oven for about 30 minutes.
  4. Serve the tacos with as many topping as you wish. You can add black beans, sour cream, guacamole or cheese.
  5. Enjoy!
