Mummy’s Fast & Easy

Happy Meatless Monday guys!

Today’s recipe is simple, quick and very appetising (well, if you don’t like onions, not sure about it).
But seriously, red onions are quite sweet and when roasted they taste even more delicious.
I’ve never tried them in this particular way before but now I think this is my favourite way to have them. 
All you have to do is to cut them, roast them and then add some feta cheese, walnuts and olive oil. Tasty!

Here’s what you need.

Ingredients:
  • 4 red onions
  • 300g/10oz Feta Cheese
  • a handful of walnuts
  • olive oil
  • salt

Preparation:
  1. Preheat the oven to 200°C/394°F.
  2. Make 4 cuts in each onion so that it looks like a flower.
  3. Drizzle some olive oil and place in the oven for about 20 minutes.
  4. Add the crumbled Feta cheese on top, walnuts and season with salt and pepper. If wished, add more olive oil.

Tip: Why not try using Goat’s Cheese instead of the Feta cheese for more intense flavour!
