Mummy’s Fast & Easy

Happy Sunday!
I finally managed to squeeze in another recipe between nappies and feeds and so glad I’m now sharing it with you because it’s a good one!
And it’s a simple one, one of the easiest cake recipes I’ve tried and the most delicious.
It’s chocolatey, nutty and very moist thanks to the ripe bananas. You simply mix the ingredients together and then bake it! And of course eat it!

Here’s what you need.

Ingredients:
  • 300g/1lb flour
  • 1tsp baking powder
  • 1tsp salt
  • 2 eggs
  • 200g/7oz dark sugar
  • 100g/3.5oz milk chocolate
  • 150g/5oz hazelnuts
  • 100g/3.5oz butter, melted
  • 3tbsp yogurt
  • 3 ripe bananas, mashed
  • icing sugar for serving

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, combine the flour, baking powder and salt. 
  3. In a separate bowl combine the sugar and butter and mix well.
  4. Add the butter mixture to the flour and gradually add the eggs, mashed bananas, yogurt and hazelnuts.
  5. Melt the chocolate(I did it in the microwave to save time). 
  6. Divide the cake batter in two separate bowls. Add the melted chocolate in one of the bowls and mix well.
  7. Grease a baking tin and add the bowls with the cake batter mixture one by one. 
  8. Bake in the oven for about 40 minutes or until ready.
  9. Dust some icing sugar when serving.
