The recipe of the day is quick and easy meal and quite cheesy – lots of leek and tomatoes, feta cheese and all that goodness topped up with some eggs. Oh, yes and I forgot to mention, there’s a crunchy buttery layer on the bottom.
The original idea was to make a galette but unfortunately I did not have all of the products. So, yes, this is what happens when my dough fails. I hate throwing away food so I usually try to reinvent and improvise.
This recipe turned out to be quite delicious and budget friendly.

Here’s what you need.

  • 2 leeks, cut in slices
  • 2 large tomatoes, ripe and diced
  • 200g/7oz feta cheese
  • 4-5 eggs
  • salt and pepper
  • olive oil
  • dry thyme, if wished
For the bottom layer:
  • 150g/5oz flour
  • 100g/3.5oz butter
  • 2tbsp yogurt
  • 1tsp salt

  1. Preheat the oven to 200°C/392°F.
  2. To make the bottom layer – simply combine the ingredients and layer on a greased baking tray. Cook in the oven for about 20 minutes.
  3. In a heated pan with some olive oil, gently sweat the tomatoes and leeks for about 10 minutes. Add the seasoning and feta cheese and mix well. Leave for another 5 minutes.
  4. Add the vegetables and feta cheese on top of the baking tray and place in the oven for about 15 minutes. Take the tray out and gradually add the eggs. Put back for another 10 minutes or until the eggs are ready.
  5. Sprinkle some thyme and serve.

Tip: Why not try adding some chorizo for even more flavour?
