Happy Meatless Monday!

Well,technically it is Tuesday, but I just finished editing my MM post(sorry for the confusion).

The recipe of the day is super easy and tasty – Stuffed Zucchini Rolls with Cream Cheese Filling.
These rolls taste so fresh and light, you can make them for starter, main or side dish. The only downside – they go too quickly!

Here’s what you need.

  • 3 courgettes/zucchini, cut lengthwise and lightly cooked(I cooked mine in the oven for about 10 minutes)
  • 300g/10oz cream cheese
  • 100g/3.5oz walnuts, chopped
  • 2 garlic cloves, crushed
  • a handful of fresh dill, chopped
  • salt and pepper

  1. In a bowl, combine the cream cheese, walnuts, dill and garlic.
  2. Scoop out from the cream cheese filling and start rolling the zucchini.
  3. Use toothpicks, if wished, to make them stay rolled(I didn’t have any but thankfully mine stayed rolled).
  4. Serve with some almonds or walnuts on top.

Tip: Why not try these with some cottage cheese!
