Meatless Monday: Kale, Chickpeas & Feta Cheese Salad

OK, I know that Monday is already gone but I could not not share my Meatless Monday recipe with you guys!
As usual, it’s very simple, clean, tasty and healthy, you only need about 5 minutes to prep it and a good appetite!

Here’s what you need.

  • 300g/10oz kale
  • 200g/7oz chickpeas, cooked
  • 150g/5oz feta cheese
  • 3tbsp linseed
For the dressing:
  • 3tbsp olive oil
  • 1/2 lemon, juice only
  • salt

  1. First, and most importantly, you need to massage the kale with the olive oil.
  2. Add the chickpeas, crumble the cheese and add the rest of the dressing ingredients.
  3. Sprinkle the linseed on top.

Tip: Why not try this salad with some grilled tofu instead of the feta cheese!
