Zucchini, Carrots & Feta Cheese Bake

The other day I made these roasted zucchinis and carrots and I thought I need to share this with you.
There’s nothing special about this, there’s barely any cooking and prepping but I think this is a great summer dish – light & tasty, quick and easy. It is really filling as well, thanks to the feta cheese I added (and I also added some balsamic vinegar).

Here’s what you need.

  • 3 courgettes, sliced into fingers
  • 3 carrots, sliced into fingers
  • 150g/5oz feta cheese, crumbled
  • 2-3 tbsp olive oil
  • salt
  • balsamic vinegar, if wished

  1. Preheat the oven to 200°C/392°F.
  2. Spread the vegetables on a baking tray, drizzle the olive oil, season with salt to taste and mix well.
  3. Bake in the oven for about 15minutes or until ready.
  4. Crumble the feta cheese on top and drizzle the balsamic vinegar, if wished.

Tip: Why not try adding some chopped walnuts on top!
