Breakfast Cups with Scrambled Eggs

Here’s a great recipe, perfect for the weekend – Breakfast Cups with Spinach, Ham & Cheese, well and obviously eggs. 🙂 It’s a great breakfast but I actually made it for dinner. All you have to do is whisk up some eggs, add some spinach, ham and cheese and just wait for 15 minutes.
The result is cheesy egg cups with spinach and ham. It’s more like an omelet in a cup, isn’t it?

Here’s what you need.

  • 7-8 eggs, beaten
  • 150g/5oz spinach(I used frozen)
  • 100g/3.5oz ham, thinly chopped
  • 200g/7oz cheddar cheese, grated
  • 1tbsp butter
  • salt and pepper

  1. Preheat the oven to 200°C/392°F.
  2. Add the ham, cheese & melted butter to the eggs.
  3. Season with salt and pepper.
  4. Cover the frozen spinach with hot water and leave for 5 minutes. Drain and add to the egg mixture.
  5. In a greased muffin tray empty the mixture and bake in the oven for about 15 minutes or until ready.

Tip: Why not try adding some sliced mushrooms too!
