Mummy’s Fast & Easy

So, the other day I made these king prawn tails for the first time. It wasn’t what I expected, but it was really good anyway. 
The thing is I expected them to taste more like shrimps, but they had texture similar to seafood sticks. But on the other sidey, I love seafood stick(all kinds of seafood) so it was all good, more than good to be honest, and very tasty.
I combined them with some coconut milk, noodles, garlic, fresh coriander and a touch of ginger.
It was ready in 10 minutes and gone in 15!

Here’s what you need.

Ingredients:
  • 400g/1lb king prawn tails
  • 300g/10 oz rice noodles
  • 1 cup and a half coconut milk
  • 2 garlic cloves, crushed
  • 1tbsp butter
  • 1tsp ginger
  • salt
  • fresh coriander leaves

Preparation:
  1. Heat a pan with butter and gently sweat the garlic for 5 minutes. Add the ginger and then the prawn tails.
  2. Cook them for another 5 minutes and gently pour in the coconut milk. Stir in the noodles.
  3. Leave on the hob, stirring constantly until the noodles have soaked up the coconut milk(about 10 minutes). Season with salt.
  4. Serve with fresh coriander leaves.

Tip: Why not add some hot sauce for some extra heat!
