Happy Meatless Monday!

The meat free recipe of the day is way too delicious but easy to make – bruschetta topped with yummy goodies.
I bet most of you love these and often prepare them at home. I myself am a big fan of them, they’re perfect snack, appetiser and just great as party food. This is a combination I haven’t tried before but it tastes amazing so I thought I should share it with you.

Here’s what you need.

Ingredients:
  • 1 wholemeal seeded baguette, cut in slices
  • 2-3 garlic cloves, peeled and cut in halves
  • 1 ripe avocado, sliced
  • 200g/70z black olives, chopped
  • 150g/5oz sun-dried tomatoes
  • olive oil
  • lemon juice
  • salt and pepper
  • fresh basil leaves, if wished

Preparation: 
  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, mix the olives, avocado and sun-dried tomatoes. Season to taste with olive oil, lemon juice and salt an pepper.
  3. Rub the baguette slices with the garlic. Place them on a baking tray and generously drizzle with olive oil on both sides.
  4. Bake in the oven for about 10 minutes or until ready.
  5. Top them up with the bruschetta mix and decorate with some basil leaves, if wished.

Tip: Why not try adding some pine nuts for some nutty flavour?
