Meatless Monday: Stuffed Avocados with Cottage Cheese & Nuts

Happy Meatless Monday!

Today’s recipe is stuffed avocado with cottage cheese & walnuts. This is so simple but it’s tasty and healthy snack alternative, side dish or even main. I only seasoned with salt and pepper and added some crushed garlic for more flavour.

Here’s what you need.

Ingredients:
  • 2 ripe avocados, cut in halves and stones removed
  • 300g/10oz cottage cheese
  • 100g/3.5oz walnuts, chopped
  • 1 garlic clove, crushed
  • 1tbsp light mayo
  • salt and pepper

Preparation:
  1. In a bowl, mix the cottage cheese, mayo, walnuts and garlic, season with salt and pepper.
  2. Fill the avocados with the cottage cheese mixture.
  3. Sprinkle some extra black pepper on top.

Tip: Why not try adding some fresh herbs – parsley or basil?
