Mummy’s Fast & Easy

Here’s one of the tastiest banana bread/bundt cake I’ve ever tried. And what’s more it is sugarless and made of oats! Yes, there is no sugar, just a bit of honey.
It’s packed with goodies – mixed seeds, walnuts and goji berries! Yum yum! It’s the perfect healthy breakfast, snack or dessert and it is not only guilt free, it is actually good for you.
Here’s what you need.

Ingredients:
  • 150g/5oz porridge oats
  • 150g/5oz wholemeal flour
  • 1 cup milk
  • 150g/5oz mixed seeds & dried fruit
  • 100g/3.5oz walnuts, roughly chopped
  • a handful of goji berries
  • 2 eggs
  • 2 bananas, mashed
  • 3tbsp pure honey
  • 1/2 a cup vegetable oil
  • 1tsp baking powder
  • 1tsp nutmeg
  • 1tsp salt

Preparation:
  1. Preheat the oven to 190°C/375°F.
  2. In a bowl, mix the oats, flour, eggs, spices and honey. Add the milk and oil and mix till a smooth consistency.
  3. Start adding the seeds, nuts and berries. Gently fold in the bananas.
  4. In a greased bundt cake form empty the mixture.
  5. Bake in the oven for about 30 minutes or until ready.

Tip: You can bake in a muffin tray so you’ll get individually wrapped banana bread muffins.
