Stuffed Eggplants with Beef & Cheese

I can’t believe how fast the days go by!
It feels like Monday but it’s already Wednesday (night).  A toddler can definitely keep you very very busy. Not that I’m complaining.
Today’s recipe is a new one for me, meaning I made it for the first time the other day but it turned out really  yummy and all the eggplants you see in the pictures were gone just for dinner.
It is really easy and delicious recipe and I’m sure your family will love it so if you haven’t tried it yet, please do!

Here’s what you need.

Ingredients:
  • 3 eggplants, cut in halves and the inside removed
  • 1/2 onion, chopped
  • 2 garlic cloves, crushed
  • 1 carrot, chopped
  • 400g/1lb beef, minced
  • 1 cup tomato puree
  • 1tsp nutmeg
  • 1tsp cumin
  • 1tsp paprika
  • salt and peppers
  • grated cheese, if wished
  • fresh parsley, if wished

Preparation:
  1. Preheat the oven to 200°C/394°F.
  2. Place the eggplants on a baking tray covered with baking paper and put in the oven.
  3. Meanwhile prepare the filling – heat a pan with a bit of olive oil and sweat the onion, garlic, carrot and the insides of the eggplants(finely chopped).
  4. Leave for 5 minutes and add the beef. Season with cumin, nutmeg, paprika, salt and pepper and stir well. Add the tomato puree and leave for another 5 minutes.
  5. Remove the eggplants from the oven, stuff them with the beef filling and put back in the oven for another 10 minutes.
  6. Sprinkle some grated cheese and fresh parsley, if wished.

Tip: If these are too meaty for you, try mixing the beef with some rice!
