Meatless Monday: Vegetarian Frittata with Mushrooms, Spinach & Black Olives

Happy Meatless Monday guys!

It’s been a while since I shared a recipe with you but I’ve been really really busy lately with… lots of stuff.
So finally the recipe of the day is here, and today this is delicious frittata with spinach, mushrooms and black olives.
Ready in just a few minutes, this frittata is packed with nutrients. And I forgot to mention there’s lots of feta cheese in there too.

Here’s what you need.
Mummy’s Fast & Easy

  • 7-8 eggs
  • 1 onion, chopped
  • 200g/7oz feta cheese
  • 150g/5oz fresh spinach
  • 100g/3.5oz chestnut mushrooms
  • 100g/3.5oz black olives, pitted
  • 2tbsp olive oil
  • salt and pepper
Mummy’s Fast & Easy

  1. Heat a pan with the olive oil and sweat the onions for 5 minutes.
  2. Add the mushrooms and spinach and cook for another 5 minutes.
  3. In a bowl, whisk the eggs, crumble the cheese in and add the olives. Season the mixture with salt and peppers and add to the pan.
  4. Cook for about 10 more minutes or until ready.

Tip: If wished, add some grated cheese on top.
