Meatless Monday: Black Bean, Roasted Peppers & Feta Cheese Quesadillas

Happy Meatless Monday!
Recipe of the day is delicious meat free quesadilla with black beans, roasted peppers and feta cheese, and lots of hot sauce, if you can handle it.
All you needs is a few tortilla wraps, black beans, peppers and cheese.
That is the perfect weekday dinner ready in just a few minutes – super simple but very tasty!

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 4 tortillas
  • 4 roasted red peppers, sliced
  • 200g/7oz feta cheese
  • 200g/7 oz black beans, cooked
  • lime
  • sour cream, if wished
  • olive oil

Preparation:
  1. Heat a flat pan with  a bit of olive oil and place the tortilla.
  2. Spread the beans, peppers and crumbled cheese on one half and close the other. Cook for 2-3 minutes and turn on the other side for the same time. 
  3. Repeat with the rest of the tortillas.
  4. When ready, slice and serve with some hot sauce, sour cream and lime.
Enjoy!

Tip: I made these as simple as possible, but why not try adding coriander and jalapenos!
