Mummy’s Fast & Easy

I am addicted to smoked salmon! 
I love adding it to veggies, bruschettas, crisps and whatnot.
Recently, though, I’ve been trying new stuff – like these delicious stuffed avocados.
These were absolute hit amongst family and friends and were gone in minutes!
The avocados are stuffed with eggs, roasted red peppers and smoked salmon.
I’ve added a bit of mayo, salt and lemon. Make sure the avocados are ripe though.

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz smoked salmon
  • 4 ripe avocados, cut in halves and stones removed
  • 2 roasted red peppers, finely sliced
  • 3 eggs, boiled and mashed
  • 1tbsp lemon juice
  • 1tbsp mayo
  • 3-4 sprigs fresh dill, chopped
  • salt and pepper

Mummy’s Fast & Easy

Preparation:
  1. In a bowl, mix the peppers, eggs, dill and mayo.
  2. Season with salt, lemon juice and pepper and mix well.
  3. Scoop from the mixture and fill in the avocados. Finish with a big piece of the smoked salmon on top.
  4. Add extra pepper if wished.
