Mummy’s Fast & Easy

OK, finally managed to edit these photos and trying to create the post now (just one day late).

This is a leftover lamb & couscous salad packed with feta cheese, dried apricots and coriander – kind of Moroccan inspiration.
I used leftover lamb from our Sunday roast and I think couldn’t have chosen a better way to use it.
It matched perfectly with the sweet and sour flavors, coriander and lemon dressing.
It’s really filling so you can actually have it as a main which we did. And it’s a great way to use your leftover roast.

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz couscous, cooked
  • 150g/5oz cooked lamb, shredded
  • 200g/7oz feta cheese, cut into cubes
  • 5-6 dried apricots, sliced
  • a bunch of fresh coriander, chopped
For the dressing:
  • 2tbsp lemon juice
  • 2tbsp olive oil
  • salt

Preparation:
  1. Combine all the salad ingredients and mix well.
  2. Add the dressing ingredients and stir gently the salad. Ready to serve!

Tip: Why not try adding a bit of chilli flakes for extra heat!
