I hope all of you had a great start of the week and despite the cold and rainy weather are positive and happy!
Relax, Spring is coming soon. Not that it’s not gonna rain then but at least the weather will be nicer.

Here’s my Meatless Monday suggestion which I actually made on Sunday.
It’s a typical summer dish so it’s a great way to bring the summer in your house.
It is a healthy bake of courgettes, peas and celery. All mixed with feta cheese and covered with a layer of eggs and yogurt.

Here’s what you need.
Mummy’s Fast & Easy

  • 3 zucchini, diced
  • 1 cup frozen peas
  • 3 celery stalks, chopped
  • 200g/7oz feta cheese
  • 2 garlic cloves, crushed
  • 1 cup yogurt
  • 2 eggs
  • a handful of fresh parsley, chopped
  • 1tbsp olive oil
  • salt

  1. Preheat the oven to 200°C/392°F.
  2. Sweat the garlic, zucchinis and celery for about 5 minutes.
  3. Add the peas and parsley and season with salt. Cook for another 5 minutes.
  4. Grease a baking tray and transfer the zucchini mixture in. Mix in the feta cheese.
  5. Bake in the oven for about 20 minutes.
  6. Remove and add the yogurt and eggs mixed in advance.
  7. Bake for another 10 minutes or until ready.

Tip: Why not try adding some grated Parmesan?
