Mixed Vegetables, Feta & Chicken Galette

Mummy’s Fast & Easy

This is probably the 5th different type of galette I’m making.
They’re so good that I can’t stop experimenting. This time, I kind of cleaned my fridge and wrapped tasty butter dough around the ingredients.
So I found some gherkins, corn, tomatoes, chicken & feta. It’s kind of a mix for chicken salad, just need to add a dressing. I’m sure it’ll be super tasty. 
But instead I made a delicious galette.

Here’s what you need.

Mummy’s Fast & Easy

  • 300g/10oz cooked chicken(I used leftover chicken), cut into small chunks
  • 1/2 cup tinned corn
  • 200g/7oz feta cheese
  • 5-6 gherkins, sliced
  • 2 tomatoes, diced
  • salt & pepper
For the dough: 
  • 300g/10oz flour
  • 1 cup yogurt
  • 150g/4 oz butter, melted

Mummy’s Fast & Easy

  1. Prepare the dough first – mix the ingredients in a bowl and make a smooth dough.
  2. Refrigerate for 30 minutes.
  3. Preheat the oven to 200°C/392°F.
  4. Combine the chicken, gherkins, corn , tomatoes and feta cheese. Season with salt and pepper.
  5. Roll out the dough, place the galette ingredients inside and cover with the edges.
  6. Bake in the oven for 30 minutes or until ready.

Tip: Why not try adding some peppers and olives too!
