Meatless Monday: Warm Beetroot & Goat’s Cheese Salad with Honey Dressing

Happy Meatless Monday guys!

Recipe of the day is sweet root veg salad generously covered with tasty honey dressing.
What is in the salad – roasted beets, roasted carrots, goats cheese and walnuts.
It is so nutritious you can actually have it on itself, or why not add it as a side to roast meats.
And one more thing, I know many of you are not fans of goat’s cheese but good news, you can easily substitute it with feta cheese. It still tastes amazing!

Here’s what you need for this super food honey salad.

Mummy’s Fast & Easy

Ingredients:
  • 2 beetroots
  • 2 carrots
  • 100g/3.5oz goat’s cheese
  • a handful of walnuts
For the dressing:
  • 4tbsp honey
  • 1tbsp lemon juice
  • salt

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. Cut the beets in cubes, place on a greased baking tray. Drizzle some extra olive oil and bake in the oven for about 15 minutes.
  3. Repeat the same with the carrots but for about 5 minutes.
  4. Combine the veggies. Add the walnuts and crumble the goat’s cheese.
  5. Mix the dressing ingredients and pour over the salad.

Tip: Why not try adding some parsnip or sweet potatoes?
