Happy Meatless Monday guys!

Beat the January blues with this lovely and nutritious salad with chickpeas, avocado, feta cheese and tomatoes.
I was trying to get rid of the rest of the chickpeas I used for my brown chickpea hummus  and this is what happened. Just added ripe avocado, tomatoes and feta cheese.
I think this is a good example of not throwing any leftovers away but on the contrary, making tasty meals from them. And I believe I’m quite good in that. Probably because I hate throwing food away!
So here’s what you need for this leftover salad.
Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz chickpeas, cooked or from a can
  • 2 ripe tomatoes, diced
  • 1 ripe avocado, thinly sliced
  • 200g/7oz feta cheese, cut into cubes
For the dressing:
  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt and pepper

Preparation:
  1. In a bowl, combine all the salad ingredients.
  2. In a separate bowl mix the dressing ingredients together and pour over the salad.
  3. Mix gently and serve.

Tip: Why not add some Kalamata olives?
