Happy Meatless Monday!
The recipe of the day is simple but tasty and I think much needed during the Christmas period when some of us had a bit more turkey and Christmas pie.
In other words, it’s really light and healthy recipe but at the same time it’s filling and delicious.

Here’s what you need.
Mummy’s Fast & Easy

  • 300g/10oz brown lentils, cooked
  • 2eggs
  • a handful of fresh spinach
  • 200g/7oz mild cheddar, grated
  • 1/2 a cup olive oil
  • salt
  • 1tbsp dry thyme

Mummy’s Fast & Easy

  1. Preheat the oven to 200°C/392°F.
  2. In a bowl mix the lentils, olive oil and seasoning. Add the two eggs and half of the spinach.
  3. Scoop from the lentil mixture and place on a greased muffin tray.
  4. Arrange a couple of spinach leaves on top and add the cheese.
  5. Bake in the oven for about 20 minutes or until ready.

Tip: Why not try adding some grated carrots?
