Today’s recipe of the day – Sweet potato & Serrano ham Cheesy Bake.
This recipe is particularly good if you’ve got Serrano ham leftovers as I do.
It would work well with bacon too.
The best thing about this recipe – it’s simple and delicious and takes no more than 30 minutes.

Here’s what you need.
Mummy’s Fast & Easy

  • 4-5 sweet potatoes
  • 7-8 thin slices of Serrano ham
  • 200g/7oz mild cheddar cheese, grated
  • salt
  1. Preheat the oven to 200°C/392°F.
  2. In a pot, cover the potatoes with water, add a bit of salt and bring them to the boil. Cook for about 15 minutes and remove from the hot. The potatoes shouldn’t be completely cooked.
  3. Slice the potatoes and arrange them in a greased baking tray. Place the ham slices in between.
  4. Season with salt and add the cheese on top.
  5. Cook in the oven for about 15 minutes or until ready.

Tip: Try adding some parsnips!
