Meatless Monday: Mozzarella & Cheddar Cheese Brussels Sprouts

The recipe of the day is finally here(It was actually supposed to be up yesterday, but hey, it’s Christmas time and we’re all busy).
Anyway, I’ve always thought that brussels sprouts are quite underestimated and a bit boring.
So I decided to make them a bit different and tastier.
They were steamed and then baked with mozzarella and cheddar cheese and a bit of olive oil.
It may sound a bit odd, but brussels sprouts with cheese is delicious.
Make your Christmas side dish more interesting and try this recipe.

Here’s what you need.
Mummy’s Fast & Easy

  • 1kg/2lb brussels sprouts, steamed
  • 200g/7oz mozzarella, shredded
  • 200g/7oz cheddar cheese, shredded
  • 2tbsp olive oil
  • salt

  1. Preheat the oven to 200°C/392°F.
  2. In a bowl mix the brussels sprouts, cheese and olive oil.
  3. Season with salt and mix well.
  4. Transfer to a baking dish and bake in the oven for about 10 minutes or until ready.

Tip: Why not try adding some chopped bacon!
