Today’s recipe is the perfect Christmas appetiser – mushrooms stuffed with smoked salmon, cream cheese and olive oil.
It is so quick to make, so easy, but looks and tastes really great!
And the smoked salmon is definitely a must in the festive menu so make sure to take a note of this recipe.

Here’s what you need.

  • 400g/1lb mushrooms (your choice)
  • 200g/7oz cream cheese 
  • 200g/7oz smoked salmon
  • olive oil for drizzling
  • salt and peppers
  • dill and peppercorns for decoration

  1. Preheat the oven to 200°C/392°F.
  2. Place the mushrooms on a greased baking tray.
  3. Drizzle with olive oil, season with salt and pepper and bake for about 5 minutes.
  4. Remove from the oven and leave on a side to cool down.
  5. Divide the salmon equally between the mushrooms.
  6. Fill a pastry bag with the cream cheese and make a small rosette on top of the salmon.
  7. Decorate with a peppercorn and some dill.

Tip: Instead of the mushrooms, try using some hard boiled eggs(yolks removed).
