Chilli Penne Pasta with Mushroom Butter

Today’s recipe is such a simple pasta recipe but so tasty.

To be honest, I think pasta tastes delicious even on its own, with some olive oil.
You can never get it wrong.
The recipe I made is chilli penne pasta with mushroom butter.
I saw the chilli pasta last week while doing my groceries and thought I might give it a go.
It’s really a bit spicy and would taste lovely with chorizo but I had mushrooms I needed to use:), so I made some mushroom butter and of course added lots of cheese.:) 
It was soo good it’s almost gone now. And I only used one main ingredient – mushrooms!
But everything with butter and cheese tastes good, right?:)
Here’s what you need.

  • 500g/1lb chilli penne
  • 250g/9oz white mushrooms, chopped
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 50g/2oz butter
  • a splash of olive oil
  • salt
  • cheese for serving
  1. To cook the pasta – follow the instructions on the back of the pack.
  2. Heat a pan with the butter and gently sweat the onions and garlic. Add the mushrooms and leave for about 10 minutes. Season with salt.
  3. Leave to cool down and work the mixture with a blender to a thick consistency.
  4. Add the mushroom butter to the pasta, splash some olive oil, season with salt and mix well.
  5. Serve with some shredded Parmesan or other cheese on top.

Tip: Try adding some sliced chorizo!
