Cranberry Chicken Salad

So I went to a farmer’s market the other day, again, and this time they had these fresh, just picked cranberries.
Of course, I bought quite a lot!:)
Every time I visit a farmer’s market I can barely get back home as my hands are occupied with more than one bag each.
But this is probably my favourite place to shop, as everything is 100% organic, looks amazing and tastes even better.
Oh, and the variety! So many products to choose from!
Yes, I love shopping, but groceries shopping is my favourite!:)
OK, enough said! If there’s a farmer’s market around you, go and browse the products!

And finally today’s recipe – cranberry, grilled chicken & walnut salad. It’s fresh, crunchy and delicious!

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:

  • 2 grilled chicken breasts, sliced
  • 200g/7oz fresh cranberries
  • 150g/5oz walnuts, roughly chopped
  • 1 small Iceberg lettuce, roughly chopped
  • 1 Romaine lettuce, roughly chopped
For the dressing:
  • 3tbsp olive oil
  • 1tbsp lemon juice
  • 1tbsp pure honey
  • salt

Preparation:

  1. In a bowl, mix the Iceberg and Romaine lettuce. Add the cranberries and walnuts and mix well.
  2. To prepare the dressing, in a separate bowl, whisk the dressing ingredients and pour over the salad.
  3. Arrange the grilled chicken slices and decorate with some fresh herbs (whatever you have available at home, I used fresh mint leaves) and serve!
Enjoy!
Tip: Try adding some goat’s cheese in the salad! Yumm!
