Figs are in their peak now!
Perfect with honey and goat’s or feta cheese – so go ahead and pick up some fresh and ripe figs!

Today’s recipe is sweet fig tart with honey and goat’s cheese!
This tart is really simple to make – a few ingredients needed and it’s ready in just a few steps.
To me, it screams ‘summer, summer, summer’.
However, when it’s this time of the year, I always got the feeling the autumn is coming.
Not that I don’t like Autumn!
After all, it’s the season that gives most fruit and veggies!
And Halloween’s in the Autumn!:-)

Here’s what you need for the fig and goat’s cheese honey tart.

Mummy’s Fast & Easy
Ingredients:
  • 300g/10.5oz flour
  • 3 eggs
  • 100g/3.5oz butter
  • a pinch of salt
  • 10 ripe figs, cut into slices
  • 150g/5oz goat’s cheese
  • 1tbsp dry thyme
  • pure honey for drizzling

Mummy’s Fast & Easy

Preparation:

  1. Preheat the oven to 200°C/392°F
  2. In a bowl, combine the flour, eggs, butter and salt.
  3. Grease a baking tray and layer the dough.
  4. Spread the goat’s cheese evenly, on top of the dough.
  5. Arrange the fig slices and bake in the oven for about 30 minutes or until ready.
  6. Drizzle with pure honey and sprinkle some thyme.

Tip: If you’re not fan of goat’s cheese, try substituting with feta cheese!
