It’s the ‘tomatoes’ season again. You can find different sorts of this amazing food almost everywhere.
At this time of the year they’re juicy and ripe and taste divine in salads.
Today’s recipe is an all – season tomato salad as the filling is similar to one of the salads I like to prepare in the winter.
The tomatoes are stuffed with hard boiled eggs, feta cheese a bit of light mayo and black pepper. Simple but tasty!
And do feel free to improvise!
You can stuff them with any topping you like!

Here’s what you need.

  • 4-5 ripe tomatoes, the insides scooped
  • 5 hard boilde eggs
  • 200g/7oz feta cheese
  • 100g/3.5oz light mayo
  • a bunch of fresh parsley, chopped
  • 1tbsp lemon juice
  • salt and pepper

  1. In a bowl, combine the ingredients for the tomatoes’s filling.
  2. Mash the mixture to a thick consistency.
  3. Stuff the tomatoes and cover with their lids.
  4. Serve chilled!
Tip: Try stuffing them with some risotto leftovers!
